CREAMY GARLIC PARMESAN ORZO
This Creamy Garlic Parmesan Orzo can be on your table in 15 minutes! While it's perfect as a side dish, I prefer this as a meal on its own because it's cheesy, creamy and really hits the spot.

Steps:
- In a large skillet add the olive oil, butter and cook for about 30 seconds until the butter melts. Stir in the onion and garlic and let it cook for about 2 minutes until the onion softens and the garlic becomes aromatic.
- Add the orzo to the skillet and let it cook for about 2 minutes just in the oil so that it starts to toast lightly, this will give it a nutty flavor.
- Season with salt and pepper then stir in the chicken broth and half and half. Bring to a boil, then turn the heat down to a medium-low, cover with a lid and let it cook for 5 minutes.
- Remove the lid and stir in the Parmesan cheese and fresh parsley.
- Serve immediately.

- Heat butter in a medium saucepan over medium heat. Add orzo and cook 3 minutes, stirring constantly.
- Stir in broth and water; bring to a boil. Reduce heat and simmer until liquid is absorbed, and orzo is done, about 15 minutes.
- Remove from heat; stir in cheese, basil, salt and pepper. Sprinkle with pine nuts. Serve immediately.

- Heat 1 ½ teaspoons of the olive oil in a large non-stick or cast iron skillet over medium-high heat. When the skillet is hot add in the chicken and season with salt and pepper. Sauté until the chicken is thoroughly cooked then remove it from the skillet onto a plate.
- Add the remaining ½ teaspoon of olive oil to the skillet then add in the onion and mushrooms and season with salt and pepper. Sauté for 2-3 minutes or until the onion and mushrooms start to soften.
- Add in the orzo and garlic and sauté for about a minute. Add in the white wine and use the bottom of a wooden spoon to scrape up any brown bits. Pour in the chicken broth, stir everything together and bring it to a boil.
- Once boiling, cover with a lid and reduce the heat to medium-low. Simmer for approximately 9 minutes or until the orzo is al dente. Remove the lid and if there is any excess liquid remaining continue to cook uncovered for another minute.
