GARLIC AND PARMESAN CHICKEN WINGS
The trick to keeping these oven-baked chicken wings crispy, is parboiling the wings in a flavorful liquid, which helps season the chicken and produce a surface texture in the oven that your guests will swear came straight out of a deep fryer.

- Preheat an oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil and coat foil with cooking spray.
- Combine water, vinegar, 1/4 cup salt, bay leaf, thyme, oregano, and rosemary in a large stockpot and bring to a boil. Add chicken wings, return to a boil, and cook for 15 minutes. Remove chicken wings with a slotted spoon to a cooling rack and allow to dry for 15 minutes.
- Mash garlic and a pinch of salt together in a mortar and pestle until smooth.
- Combine mashed garlic, olive oil, black pepper, and red pepper flakes in a large bowl. Add chicken wings and bread crumbs; toss to coat. Sprinkle with 1/2 cup Parmigiano-Reggiano cheese. Transfer to the prepared baking sheet and sprinkle with remaining 1/2 cup Parmigiano-Reggiano cheese.
- Bake in the preheated oven until browned, 20 to 25 minutes.

These wings start out in an Instant Pot®, and are completed in the oven. This allows the chicken to cook and the skin to get crispy. The Instant Pot® step is optional, but it will take longer otherwise.

- Place chicken in a large mixing bowl and toss with garlic salt, onion granules, pepper, and paprika.
- Pour water in the bottom of a multi-functional pressure cooker (such as an Instant Pot®). Place a trivet in the bottom of the pot and add chicken wings. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 6 minutes. Allow 10 to 15 minutes for pressure to build.
- Meanwhile, preheat the oven to 525 degrees F (270 degrees C). Line a baking sheet with parchment paper.
- Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Transfer wings to a large bowl.
- Mix together melted butter, olive oil, and garlic in a bowl; pour over cooked wings. Toss to combine. Place wings, skin side down, on the prepared baking sheet.
- Bake in the preheated oven for 8 minutes. Turn on the oven's broiler and broil for an additional 2 to 3 minutes. Remove wings from oven. Toss hot wings with Parmesan cheese and parsley.

- Put the wings on a rimmed baking sheet with a metal cooling rack on top. Make sure your cooling rack is oven safe before you try this. Cook for 15 minutes.
- Make the sauce. Blend the butter, cheese, and seasonings in a small blender until combined. Add the egg and process until combined. The sauce is about the thickness of ketchup.
- After 15 minutes remove the wings and flip them over. At this point, they are almost fully cooked. Turn on the broiler. Put the wings under the broiler for 5 min. Keep an eye on them so they don't burn. Remove them and flip again. Keep flipping and broiling until they are the desired crispness. They should definitely be 165 degrees by now but I always recommend checking with a meat thermometer.
