For the chips
4 yellow squash, cut into rounds
1/4 c. olive oil
Kosher salt
Freshly ground black pepper
Pinch red pepper flakes
1 c. panko
1 c. shredded Parmesan
2 tbsp. Freshly chopped parsley
1/2 tsp. garlic powder
For the dipping sauce
1 c. sour cream
1 tbsp. lemon juice
1 tbsp. freshly chopped parsley
Kosher salt
Freshly ground black pepper

Steps:

  • Preheat oven to 400° and line a baking sheet with parchment paper. In a large bowl toss together squash and olive oil. Season generously with salt, pepper, and red pepper flakes.
  • In a shallow bowl mix together panko, parmesan, and parsley. One at a time dip squash into panko mixture, pressing to coat then place on prepared baking sheet.
  • Bake until golden and crispy, 30 minutes, flipping halfway through. Meanwhile make dipping sauce: In a small bowl, stir together sour cream, lemon juice, and parsley. Season with salt and pepper. Serve chips with dipping sauce.

2 yellow squash ( , cut into 1/4 inch slices)
1 tablespoon light virgin olive oil
1/3 cup parmesan cheese ( , finely grated )
3 tablespoons bread crumbs
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon fine sea salt
1/4 teaspoon ground black pepper

Steps:

  • Preheat oven to 350°F.
  • Toss the cut squash with the oil in a medium mixing bowl. Take each round out, tapping off excess oil, and place them in a single layer on a large baking sheet being mindful to leave a little space between each.
  • In a small mixing bowl, combine the parmesan cheese, bread crumbs, garlic powder, onion powder, salt and pepper.
  • Spoon bread crumb mixture evenly over each squash round, pressing down lightly on each one.
  • Bake for 15 minutes, or until squash is soft, but not mushy. Remove and serve.

2 medium-sized yellow summer squash
Garlic salt & freshly ground black pepper
1/2 cup freshly grated Parmesan cheese

Steps:

  • Place an oven rack in the center position of the oven. Preheat the oven to 425°F. Line a baking sheet with foil (lightly misted with nonstick cooking spray) OR parchment paper.
  • Wash and dry the squash, and then cut each one into 1/4-inch thick slices. Arrange the squash rounds on the prepared pan, with little to no space between them. Lightly sprinkle the squash with garlic salt and freshly ground black pepper. Use a small spoon to spread a thin layer of Parmesan cheese on each slice of squash.
  • Bake for 15 to 20 minutes, or until the Parmesan melts and turns a light golden brown. (Watch these closely the first time you make them and pull them out of the oven early if the Parmesan is golden before 15 minutes. Alternatively, you may broil them for a minute or two at the end of the cooking time to speed up the browning.) Serve immediately.

2 medium yellow summer squash
1 small onion
1 tablespoon butter
½ tablespoon canola oil
salt and ground black pepper to taste
4 tablespoons shredded Parmesan cheese, divided, or to taste

Steps:

  • Slice squash and onion to 3/16-inch thickness using a mandolin.
  • Melt butter and canola oil over medium heat in a large skillet. Add squash and onion to the hot pan and season with salt and pepper. Saute until vegetables begin to soften, about 10 minutes. Sprinkle with 3 tablespoons Parmesan cheese, reduce heat to low, and continue cooking for 5 minutes.
  • Remove skillet from heat and sprinkle with additional tablespoon Parmesan cheese prior to serving.

Steps:

  • Heat oven to 400 F. Slice squash lengthwise and place on a rimmed baking sheet. Mix olive oil and Parmesan in a small bowl. Using a small spoon spread a dollop of the mixture onto the flat surface of the squash. Roast for 25-30 minutes until cheese is slightly brown.

- 2 medium yellow summer squash
- 1/4 cup all purpose flour
- a splash of heavy cream (or milk or half and half)
- a dollop of sour cream
- 2 eggs
- finely grated parmesan cheese ( i also mixed in romano cheese.)
- foiled lined baking sheet sprayed with cooking oil

Steps:

  • Keep in mind, if you make more, just use more flour, eggs cream and sour cream. his s not an "exact" measurement type of recipe, so use what you need and add more if you need to.
  • After you clean and dry your squash, cut lengthwise into small strips...like french fries. I added in some Zucchini as well. Add the eggs, heavy cream and the dollop of sour cream to a small bowl. Whisk it all together and put aside for quick second. In a small bowl coat each piece of summer squash in flour. Just toss the pieces around until they are coated.
  • Dip into egg mixture, and then coat it with the cheese mixture and place neatly on foil lined baking sheet sprayed with cooking spray. Broil for 7 minutes on one side. Flip each one and place back under the broiler for an additional 7 minutes.
