Parmesan crusted chicken is easy enough to make for a busy weeknight but also special enough for company.

½ cup all purpose flour
2 eggs
⅔ cup seasoned Italian bread crumbs (I use Progresso)
⅓ cup freshly grated Parmigiano-Reggiano cheese
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
1 tablespoon finely chopped fresh herbs, such as thyme, parsley, chives or rosemary
3-4 boneless skinless chicken breasts (about 1½ pounds), pounded ¼"-thick (see note)
Salt and freshly ground black pepper
¼ cup olive oil
Lemon wedges, for serving

Steps:

  • Set up three large shallow bowls in an assembly line. Put the flour in the first bowl; beat the eggs in the second bowl; and mix the bread crumbs, Parmesan cheese, salt, pepper, and chopped fresh herbs in the third bowl.
  • Season chicken breasts with salt and pepper. Dredge the first chicken breast in the flour and shake off the excess until just a light coating remains. Next, dip the chicken in the egg mixture and turn to coat evenly, letting any excess egg drip off. Finally, dredge the chicken in the bread crumb mixture, turning a few times to coat well. Set breaded chicken on a plate and repeat until all of the chicken breasts are breaded.
  • Heat the oil in a large sauté pan over medium heat. When the oil is hot, add the chicken breasts to the pan and cook for 2 to 3 minutes until the first side is golden brown. Flip and continue cooking until done, 2 to 3 minutes longer. Serve immediately with lemon wedges.
  • Note: If chicken breasts are large (8 or more ounces), it's best to cut them in half once they are pounded out. Alternatively, you can cut them in half horizontally before pounding.

Steps:

  • Preheat your oven to 400 degrees. Prepare all your ingredients.
  • In a shallow bowl, combine the breadcrumbs, basil, oregano, garlic powder, Parmesan cheese, salt and pepper. Mix together well.
  • In another shallow bowl, pour in the egg whites. Set up your breading station so that you can easily coat all the chicken breast in the Parmesan breading.

Steps:

  • First, paper towel dry the chicken and then prepare two bowls. One is for the egg, salt, pepper, garlic powder, and Italian seasoning. Next, you should whisk the egg mixture slightly.
  • The second bowl is for the parmesan, bread crumbs and flour.
  • Now it's time to dredge each chicken breast piece in egg/seasoning mixture. After that place in parmesan mixture and press. Turn to coat the other side of the chicken with parmesan mixture and press again.
  • Repeat with remaining chicken pieces and place each coated parmesan chicken onto a plate or a cutting board.
  • MELT butter and ADD olive oil on medium high heat in a skillet (stainless steel, cast iron skillet or non-stick).

  • CHECK FOR DONENESS to make sure the chicken is fully cooked and not pink. If not, lower the heat and cook for a couple more minutes.

¾ cup grated parmesan cheese (divided ¼ and ½)
4 large chicken breasts (boneless/skinless)
1 cup Italian seasoned dry bread crumbs
garlic salt (to taste)

Steps:

  • Slice each chicken breast half lengthwise so you have a total of 8 long and thin chicken cutlets.
  • In one bowl whisk together mayonnaise and ½ cup parmesan cheese. In a second larger bowl mix together breadcrumbs and remaining ¼ cup parmesan cheese.
  • Slather each cutlet in the mayonnaise mixture, then press into breadcrumb mixture, making sure to coat chicken on all sides.

We love chicken parmesan and are always searching for a new or different version of preparing. I watched America's Test Kitchen and thought WOW - have to try this and soon! Note: The chicken breasts will be easier to slice into cutlets if you freeze them for 15 minutes until firm but not fully frozen. To slice in half, place one hand on top of the breast to secure it, hold a chef's knife parallel to the cutting board, and slice through the middle of the breast horizontally. Note that 1/2 ounce of Parmesan is grated on the smallest holes of a box grater (or Microplane rasp grater); the remaining 6 ounces are shredded on the largest holes of the box grater (see photos below). We like the flavor that authentic Parmigiano-Reggiano lends to this recipe. Less-expensive DiGiorno Parmesan cheese can also be used, but the resulting cheese crust will be slightly saltier and chewier. Serve this chicken with a simple salad. Although the portion size (1 cutlet per person) might seem small, these cutlets are rather rich due to the cheese content. To make 8 cutlets, double the ingredients and cook the chicken in 4 batches, transferring the cooked cutlets to a warm oven and wiping out the skillet after each batch.

Carefully flip cutlets and continue to cook until cheese is pale golden brown on second side and meat is no longer pink in center, about 3 minutes. Transfer chicken to wire rack set in rimmed baking sheet and keep warm in oven. Wipe out skillet with paper towel and return to medium heat. I love Parmesan crusted chicken. It's great with any side dish. I've seen many recipes for this but I tweeked this one with many others I have seen. Everytime I may do something different to this recipe. But one thing is for sure, I have to triple this recipe for my husband.

2 boneless skinless chicken breasts
1/2 c flour
3/4 c plain panko bread crumbs
1/2 c freshly grated parmesan cheese
1/2 tsp dried italian seasoning
1/2 tsp garlic powder
1/4 tsp paprika
salt and pepper
1 egg
2 Tbsp butter
2 Tbsp olive oil

Steps:

  • 1. Preheat the oven to 200 degrees. Place chicken breasts between 2 pieces of plastic wrap or parchment paper & pound thin, about 1/4". These make huge servings, you could easily cut the breast in half & make 2 servings out of one. But honestly I triple this recipe because my husband loves eating this chicken!
  • 2. Set up your assembly line. Place the flour on one plate, lightly beat the egg with 1 tsp of water on another plate. Combine the Panko, Parmesan & seasonings on the third plate. You could substitute regular bread crumbs but I think the Panko gives it a much crispier & lighter texture. Dredge the thinned chicken breasts (one at a time) through the flour, then the egg, then coat in the Panko & Parmesan mixture.
  • 3. Heat 1 tbsp of olive oil & 1 tbsp of butter in a skillet over medium/ low heat. I used a 10" skillet & cooked 1 at a time, but I was only making 2 chicken breasts. If you are making more, use a larger skillet & add more olive oil & butter accordingly. Fry the chicken breasts, until the 1st side is golden & the chicken is partially cooked. Gently flip & cook the other side until the chicken is fully cooked. This is such a quick cook, it cooks in about 3-5 minutes on each side.
  • 4. Remove & place chicken on a sheet pan (I like to line the sheet pan with parchment paper first). Keep warm in the oven, heated to 200 degrees, while you cook the other chicken breasts & get the rest of your meal together. I usually wipe out the bread crumbs & excess oil from the pan with a paper towel in between cooking so the bits don't burn.
  • 5. You can easily multiply this recipe to feed your little army or someone's tummy!

Carefully wipe out the skillet, add 2 more tablespoons of the oil, and repeat with the remaining cutlets. Divide the cutlets and lettuce leaves among individual plates. Drizzle the lettuce with the remaining oil and sprinkle with the remaining Parmesan. Serve the lemon wedges on the side.
