2 medium head of broccoli (see note)
4 Tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
3 garlic cloves (minced)
1/4 cup grated Parmesan cheese
1/4 cup breadcrumbs (plain or Italian style)

Steps:

  • Preheat oven to 400 degrees F.
  • Line a large baking sheet with parchment paper.
  • Trim broccoli heads and cut into florets. Cut large florets in half.
  • Place broccoli in a large mixing bowl. Add olive oil, salt, pepper and minced garlic. Toss to coat.
  • Add Parmesan cheese and breadcrumbs and toss to coat.
  • Spread broccoli on prepared sheet. If there is any leftover breadcrumb mixture in the bottom of the bowl, sprinkle it over broccoli.
  • Roast in preheated oven for 20 to 25 minutes or until the broccoli is soft and the breadcrumb mixture is golden brown.
  • Serve.

2 small broccoli crowns (about 8 ounces each)
3 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon crushed red pepper flakes
4 garlic cloves, thinly sliced
2 tablespoons grated Parmesan cheese
1 teaspoon grated lemon zest

Steps:

  • Preheat oven to 425°. Cut broccoli crowns into quarters from top to bottom. Drizzle with oil; sprinkle with salt, pepper and pepper flakes. Place in a parchment-lined 15x10x1-in. pan., Roast until crisp-tender, 10-12 minutes. Sprinkle with garlic; roast 5 minutes longer. Sprinkle with cheese; roast until cheese is melted and stalks of broccoli are tender, 2-4 minutes more. Sprinkle with lemon zest.

2 broccoli crowns, chopped into small pieces
1/4 cup olive oil
1 teaspoon salt
1/2 teaspoon pepper
1 10-oz. container hummus
1/3 cup parmesan cheese
1 teaspoon paprika

Steps:

  • Start by preheating the oven to 425°F. Spread the broccoli florets out on a baking sheet and toss in oil, salt, and pepper. Bake for 20 minutes.
  • Remove the broccoli from the oven and push it together, so that it's crowded into one block. Reduce the oven temperature to 375°F.
  • Spread the hummus over the broccoli - be generous, as it will make it easier to spread. Cover with a healthy amount of grated parmesan cheese, and sprinkle the top with paprika.
  • Bake for 20 minutes at 375°F, and serve warm.

Shake up family dinners with this sheet pan salmon and broccoli recipe. Flaky salmon with earthy broccoli and creamy potatoes served with rich miso butter for an easy dinner.

4 tbsp (½ stick), at room temperature unsalted butter
2 tbsp red, white or yellow miso
1½ lbs or crowns, with stems whole broccoli heads
2 tbsp olive oil
½ tsp salt
¼ tsp black pepper
4 (6 oz,1 to 1½ inches), thick center cut salmon fillets
2 tbsp to garnish chopped parsley
2 thinly sliced, to garnish Scallions
to serve, optional baked or roasted potatoes

Steps:

  • Preheat the oven: Center a rack in the oven and preheat the oven to 450ºF.
  • Make the miso butter: In a small bowl, stir the miso and butter until smooth.
  • Prepare the broccoli: With a paring knife, cut a sliver off the tough end of the broccoli stalk. Separate the stalk from the head-where the stalk starts to branch. Peel the stalk with a vegetable peeler and slice it into 3- to 4-inch sticks. Cut the crown lengthwise into 3 to 4 pieces.
  • Roast the broccoli: Mound the broccoli in the center of the baking sheet. Sprinkle with the oil, salt, and pepper and use your hands to massage the oil over the broccoli.Spread the oiled broccoli on the baking sheet in one layer. Roast in the oven for 15 minutes, stirring and flipping the veggies halfway through. Remove the broccoli from the oven and turn the temperature down to 425ºF.
  • Roast the salmon: Make space on the baking sheet for the salmon, and place the salmon on the sheet with the skin side down. Sprinkle lightly with salt and pepper. Use a butter knife to spread the miso butter over the fillets.Roast the salmon and broccoli together for 10 minutes longer, or until a thermometer inserted into the thickest part of the salmon registers 135ºF. Remove from the oven.
  • Finish under the broiler. Move an oven rack close (3- to 4-inches) to the broiler and turn on the broiler. If necessary, spread the now-softened miso butter evenly over the fillets, and broil for 1 to 2 minutes, or until the fillets are charred at the edges.Remove and let the salmon rest for 5 minutes. Sprinkle with parsley and chopped scallions and serve with baked potatoes, if you like.

1 1/4 lbs broccoli crowns (, stems cut and reserved for another use, florets chopped into bite size pieces)
2 1/2 Tbsp olive oil
1 clove garlic (, minced)
Salt and freshly ground black pepper
4 (6 oz) skinless salmon fillets
1 1/2 Tbsp mayonnaise
1 1/2 tsp lemon juice ((zest lemon first))

1/4 cup slightly packed finely grated parmesan
1/4 cup bread crumbs
1 Tbsp chopped fresh parsley
1 1/2 tsp lemon zest
1/4 tsp dried thyme
1 1/2 Tbsp olive oil

Steps:

  • Preheat oven to 400 degrees. Line a rimmed baking sheet with aluminum foil. Spray foil with non-stick cooking spray.
  • Place broccoli in a mound in center of baking sheet. Pour olive oil over broccoli along with garlic and toss to evenly coat.
  • Season with salt and pepper to taste and spread near edges of baking sheet, leaving enough space in center to fit salmon fillets.
  • Season bottom of salmon with salt and pepper and place salmon in center of baking sheet, leaving about 3/4-inch between fillets so they can evenly cook.
  • In a mixing bowl whisk together mayonnaise, lemon juice and garlic and brush about 1/2 Tbsp over each fillet. Season top with salt and pepper.
  • In a mixing bowl whisk together parmesan, bread crumbs, parsley, lemon zest and thyme, then drizzle 1 1/2 Tbsp olive oil into bowl and stir with a fork until evenly moistened. Spread parmesan mixture evenly over tops of salmon fillets.
  • Bake in preheated oven until salmon fillets have cooked through, about 12 - 15 minutes (for a more golden crust you can broil during the last 1 - 2 minutes of baking if needed).

1/4 cup plus 1 tablespoon grated Parmesan or Pecorino-Romano
Nonstick cooking spray, for the pan
Flakey sea salt

Steps:

  • Preheat oven to 400 degrees F.
  • Peel the hard, woody exteriors of the broccoli stems. Cut each stem in half lengthwise, and then again into quarters.
  • Toss the broccoli stem fries with olive oil in a bowl, then coat in Parm. Line a baking sheet with parchment paper and spray lightly with cooking spray. Place the fries on the parchment. Bake until golden brown, 15 to 20 minutes. Sprinkle with flakey salt and serve immediately.
