Baked Brie image

I always come home with an empty plate when I take this special baked brie recipe to holiday parties. It looks fancy but is actually quite easy to make. -Carolyn DeKryger, Fremont, Michigan

Yield 8 servings.

Number Of Ingredients 7

1/4 cup butter, softened
3 ounces cream cheese, softened
3/4 cup all-purpose flour
1 round (8 ounces) Brie cheese
1 large egg
1 teaspoon water
Assorted crackers and fresh fruit

Steps:

  • In a large bowl, beat the butter, cream cheese and flour on low speed until mixture forms a ball. Divide in half and wrap each portion in plastic wrap; refrigerate for 30 minutes., On a lightly floured surface, roll out each portion into a 7-in. circle about 1/8 in. thick. Place one circle on an ungreased baking sheet. Place Brie on pastry and top with remaining pastry circle; pinch edges to seal. Flute bottom edge if desired., In a small bowl, whisk egg and water; brush over top and sides of pastry. Bake at 400° for 15-20 minutes or until golden brown. Immediately remove from the baking sheets. Let stand for 30 minutes before serving. Serve with crackers and fruit.

Try making this cornmeal pate brisee as the base for our Rhubarb Galette.

Yield Makes enough for two 9-inch single-crust pies or one 9-inch double-crust pie

Number Of Ingredients 6

2 cups all-purpose flour
1/2 cup cornmeal
1 teaspoon salt
1 teaspoon sugar
1 cup (2 sticks) unsalted butter, cold, cut into small pieces
1/4 to 1/2 cup ice water

Steps:

  • Place the flour, cornmeal, salt, and sugar in the bowl of a food processor, and pulse several times to combine. Add the butter, and process, until the mixture resembles coarse meal, about 10 seconds. With the machine running, pour the ice water through the feed tube in a slow, steady stream, until the dough just holds together (do not process for more than 30 seconds).
  • Turn out dough onto a clean work surface. Divide in half, and place each half on a piece of plastic wrap. Flatten each to form a disk. Wrap, and refrigerate at least 1 hour or up to 1 day before using.

1 large egg, lightly beaten
1 tbsp water
1/2 cup italian seasoned breadcrumbs
1/4 cup freshly grated parmesan cheese
1 (15 oz) mini Brie with herbs
1/4 cup vegetable oil
Garnish: Fresh rosemary sprigs.

Steps:

  • Combine egg and water in a shallow dish and set aside. Combine bread crumbs and cheese in a shallow dish and set aside. Dip Brie in egg mixture, turning to coat all sides. Place in breadcrumb mixture, turning to coat all sides. Repite procedure. Chill at least 1 hour. Cook Brie in hot oil in a heavy skillet over medium heat 2 minutes on each side or until golden brown. Garnish if desired. Serve with sliced bread (french) or crackers.

CREAMED CORN WITH PARMESAN

Sweet corn is enveloped in a creamy Parmesan sauce.

Number Of Ingredients 6

2 tablespoons vegetable oil
6 cups fresh corn kernels (about 8 ears)
Coarse salt and freshly ground pepper, to taste
3/4 cup heavy cream
1/4 cup homemade or low-sodium store-bought chicken stock
1 cup finely grated Parmesan cheese (about 3 ounces), plus more for sprinkling (optional)

Steps:

  • Heat oil in a large saute pan over medium-high heat until it starts to shimmer (but not smoke), about 2 minutes. Add corn, and cook, stirring occasionally, until soft and slightly browned, 7 to 8 minutes. Season with salt and pepper.
  • Add cream and stock, and cook, stirring constantly, until thickened slightly, 2 to 3 minutes.
  • Remove pan from heat, and stir in Parmesan. Transfer to a serving dish, and sprinkle with more Parmesan if desired.

  • Spread one side of each bread slice with softened butter. Sprinkle Parmesan over the buttered bread and gently press down.
  • On the two unbuttered sides, evenly place slices of Brie so that it mostly covers the bread. Sprinkle with basil and tarragon. On each slice, layer with alternating slices of apricot and avocado. Top with havarti. Place the other two slices of bread on top, buttered side facing up.
  • Place in skillet and cook until golden brown. Carefully flip and continue cooking until the other side is also golden brown and the cheese melts. Cut into halves and serve immediately. Enjoy!
