SAVORY PARMESAN FRENCH TOAST
Delicious and easy French toast that is taken up a notch with the Parmesan cheese.

Steps:
- Whisk eggs, Parmesan cheese, milk, and black pepper in a shallow bowl until light and fluffy, about 1 minute.
- Melt butter in a large skillet over medium heat.
- Dip both sides of each slice of bread in the egg mixture and place in the skillet. Cook until golden brown, 2 to 3 minutes per side. Transfer to a warmed plate and dot with butter to serve.

PARMESAN FRENCH TOAST
While obviously a contender for weekend brunch, this savoury take on French toast is, for me, a perfect early supper when I feel like something comforting and quick. It's also exactly what I need when I've come back in late, having uncharacteristically and disturbingly gone without dinner. For US cup measures, use the toggle at the top of the ingredients list.

- Whisk the egg, Parmesan, paprika, mustard, Worcestershire sauce and milk together in a shallow dish that the slices of bread will fit in with not a great deal of space around them, making sure everything is completely combined. Sit the bread in this sunny mixture for about 2 minutes each side, pressing down on it every now and again. You want the slices to be soaked through and softened, but not falling to pieces. Spoon any remaining egg mixture over. When the bread is ready, warm the butter and oil in a frying pan in which the slices will sit fairly snugly. Once the butter is beginning to bubble frothily, fry the bread over a medium-high heat, turning it down if the butter gets too hot, for about 2 minutes each side - keep a good eye on it - until it is cooked through with patches of rich golden brown on the surface. Remove from the pan, and eat just as it is, or sprinkle with chopped parsley and thinly sliced spring onion, if wished.
PARMESAN & CHIVE FRENCH TOAST

- In a fying pan (big enough for 2 slices to cook in) on low-medium heat add 2 tbsp of butter. In a small bowl whisk the egg, milk, salt, pepper, 1 tbsp of Grana Padano (or parmesan cheese) and 1 tbsp of finely sliced fresh chives. Drench each sourdough slices in the French toast mixture (approx. 10 seconds each side). Once the butter starts to bubble, add the drenched slices of sourdough into the fying pan. Cook this side of the French toast for about 1 minute until you see the toast start to brown. Flip French toast slowly to avoid splashing the hot butter. Add the remaining Grana Padano and minched chives on top of each French toast, cook for another 1 minute until brown. Transfer the French toast to your plate and eat while still warm! Note: if you are serving it with marinara for dipping, place your sauce in a microwave-proof dish and heat for 30 seconds after step 5.
