Chicken tenders encrusted with Parmesan and panko breadcrumbs bake in one pan while mushrooms and Brussels sprouts roast in another for an easy, quick, and tasty weeknight meal.

1/3 cup panko or plain dried breadcrumbs
1/3 cup grated Parmesan (2/3 ounce)
1 1/2 pounds chicken tenders
2 tablespoons extra-virgin olive oil
1 teaspoon dried thyme
Coarse salt and ground pepper
3/4 pound cremini or button mushrooms, trimmed and halved (quartered if large)
3/4 pound brussels sprouts, trimmed and halved lengthwise (quartered if large)

Steps:

  • Preheat oven to 450 degrees, with racks in upper and lower thirds. In a small bowl, mix together panko and Parmesan. In a 9-by-13-inch baking dish, toss chicken with 1 teaspoon oil and thyme; season with salt and pepper. Arrange chicken in a single layer and sprinkle with panko mixture. Drizzle with 1 tablespoon oil and bake on upper rack until topping is golden brown and chicken is cooked through, 15 to 20 minutes.
  • Meanwhile, on a rimmed baking sheet, toss mushrooms and brussels sprouts with 2 teaspoons oil; season with salt and pepper. Roast on lower rack until golden brown and tender when pierced with a knife, 20 minutes. Serve vegetables with chicken.

I know not many people are fans of Brussels sprouts, but I love them! This tasty casserole combines the flavors of chicken, garlic, Brussels sprouts and Swiss cheese. If you are not a fan of Brussels sprouts, sub in broccoli!

1 tablespoon olive oil
4 skinless, boneless chicken breast halves
½ cup water
20 Brussels sprouts, halved
1 (4 ounce) package sliced fresh mushrooms
2 cups shredded Swiss cheese
1 pint half-and-half
¾ cup milk
3 cloves garlic, chopped
freshly ground black pepper to taste
garlic salt to taste
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch baking dish.
  • Heat the olive oil in a skillet over medium heat, and cook the chicken 5 minutes on each side, until juices run clear. Remove from heat, and slice into strips.
  • Bring the water to a boil in a saucepan. Place sprouts in the pan, cover, and cook 10 minutes, until tender.
  • Arrange sprouts in the prepared baking dish. Place mushrooms over the sprouts, and sprinkle with 1 cup Swiss cheese. Layer chicken over cheese. In a bowl, mix the half-and-half, milk, garlic, and remaining Swiss cheese. Pour over the chicken. Season with pepper and garlic salt.
  • Cover, and bake 35 minutes in the preheated oven. Reduce heat to 350 degrees F (175 degrees C). Uncover casserole, and continue baking 20 minutes, until bubbly and lightly browned. Sprinkle with Parmesan cheese to serve.

4 (5-ounce) chicken breast cutlets
1 teaspoon kosher salt, divided
1 teaspoon black pepper, divided
4 tablespoons unsalted butter, divided
8 ounces fresh cremini mushrooms, sliced
8 ounces fresh Brussels sprouts, quartered
1 cup unsalted chicken stock
2 tablespoons fresh lemon juice (from 1 lemon)
1 tablespoon capers, drained and rinsed
2 tablespoons chopped fresh oregano

Steps:

  • Cook orzo according to package directions.
  • Meanwhile, season chicken with ½ teaspoon each salt and pepper. Heat 1 tablespoon butter in a large nonstick skillet over medium-high. Add chicken, and cook until golden and cooked through, about 4 minutes per side. Reserving drippings in skillet, transfer chicken to a plate and loosely cover with foil.
  • Return skillet to medium-high, add remaining 3 tablespoons butter, and stir until melted. Add mushrooms and Brussels sprouts, and then cook, without stirring, until tender, about 5 minutes.
  • Add stock, lemon juice, capers, and remaining ½ teaspoon each salt and pepper, and then bring to a simmer. Cook 1 minute.
  • Slice chicken and serve over orzo and vegetables. Spoon sauce over the top and garnish with oregano.

1 lb brussels sprouts, halved, with stems removed.
1 white onion, skin removed, halved, and diced finely.
8oz sliced cleaned cremini mushrooms
3 cloves garlic
1 tsp adobo seasoning
1 tsp fresh cracked pepper
1/4 cup chicken or beef stock

Steps:

  • In a large, heavy pan, melt butter until light and foamy.
  • Add diced onion to pan and let soften and become fragrant, about 5 minutes.
  • Add garlic and stir, let soften, about 1 minute.
  • Stir in brussels, fresh cracked pepper, and mushrooms.
  • Cook on medium high, stirring often, until brussels and mushrooms have browned and caramelized, about 10 minutes. Do not let burn.
  • Pour in chicken stock and adobo seasonings, mix well.
  • Turn heat to high and cook off stock, stirring to prevent burning, until stock has cooked off.

8 ounces sliced mushrooms
1/4 cup butter
2 garlic cloves (minced)

1/2 cup chicken broth
1 cup heavy cream or half and half
1/2 cup grated parmesan cheese
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1/2 teaspoon salt
1 cup spinach (chopped)

Steps:

  • In a large skillet add olive oil and cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center. Remove chicken and set aside on a plate. Add the sliced mushrooms and cook for a few minutes until tender. Remove and set aside.
  • To make the sauce add the butter and melt. Add garlic and cook until tender. Whisk in the flour until it thickens. Whisk in chicken broth, heavy cream, parmesan cheese, garlic powder, pepper and salt. Add the spinach and let simmer until it starts to thicken and spinach wilts. Add the chicken and ,mushrooms back to the sauce and serve over pasta is desired.

3 tablespoons olive oil
1/4 pound brussels sprouts, divided into individual leaves
Kosher salt and freshly ground black pepper
8 ounces mixed mushrooms such as shiitake, button, cremini, and maitake
1 medium shallot, finely minced (about 1/4 cup)
2 medium cloves garlic, minced
1 teaspoon picked fresh thyme leaves
4 tablespoons butter
2 teaspoons freshly squeezed juice from 1 lemon
1/2 cup homemade or store-bought low sodium vegetable or chicken stock
1 pound dried orecchiette
2 ounces freshly grated Parmesan cheese

Steps:

  • 1: Bring a medium pot of salted water to a boil. Heat 1 tablespoon olive oil in a large skillet over high heat until smoking. Add brussels sprouts, toss to coat in oil, season with salt and pepper, cook without moving until well charred on one side. Toss and continue to cook until leaves are bright green and charred in spots, about 2 minutes total. Transfer to a bowl and set aside. 2: Heat remaining 2 tablespoons oil in the same skillet over high heat until lightly smoking. Add mushrooms and cook, tossing occasionally, until moisture has been evaporated and the mushrooms are well browned, about 4 minutes. Add shallots, garlic, and thyme and cook, stirring, until shallots are softened and fragrant, about 1 minute. Add butter, lemon juice, and stock. Simmer until sauce is reduced and emulsified, about 1 minute. Season to taste with salt and pepper (this may not be necessary if stock is store-bought). Set aside off heat. 3: Add orecchiette to pot and cook, stirring occasionally, until nearly al dente (about 1 minute less than the package instructions). Drain, reserving 1/2 cup cooking water. Add orecchiette, half of Parmesan, reserved pasta cooking water, and a generous amount of black pepper to mushrooms. Cook, stirring, over high heat until pasta is fully al dente and liquid has thickened into a sauce that coats the pasta, about 1 minute. If sauce looks greasy or broken, add 2 tablespoons of stock or water and stir vigorously to bring it back together. Stir in brussels sprouts leaves and serve, topping with more cheese at the table.
