GARLIC PARMESAN CHICKEN AND BROCCOLI

Just 10 minutes of prep and one tray necessary for this Sheet Pan Dinner: Garlic Parmesan Chicken and Broccoli!

1 cup seasoned "Italian Style" breadcrumbs
1 cup grated Parmesan cheese
1 teaspoon garlic powder
½ cup (1 stick) butter, melted
4 boneless, skinless chicken breasts (about 2.5 lbs. - 3 lbs. total)
24 ounces (or about 5 cups) fresh broccoli florets
1 tablespoon olive oil
Salt and pepper (to taste)

Steps:

  • Preheat oven to 400 degrees F. Line a large, rimmed baking sheet with foil and spray with cooking spray.
  • In a shallow bowl, stir together breadcrumbs, Parmesan, and garlic powder.
  • Melt butter in a separate bowl.
  • One at a time, dip a chicken breast in the butter and then dredge the chicken breast in the breadcrumb mixture. Place the chicken on the prepared baking sheet. Repeat with remaining chicken.
  • Bake for 25 minutes, or until chicken is almost cooked through and crust is golden brown.
  • While the chicken is in the oven, toss broccoli florets with olive oil and season with salt and pepper. Set aside.
  • Remove chicken from oven.
  • Add the broccoli to the sheet pan in a single layer around the chicken. Return the pan to the oven and bake for about 10-15 more minutes, or just until the broccoli is tender and the chicken reaches an internal temperature of 165 degrees F.

2 cup uncooked converted rice
1 cup chopped onion (1 large)
2 tablespoon butter
2.5 teaspoon dried Italian seasoning, crushed
2 tablespoon vegetable oil
2 pound skinless, boneless chicken breast halves, cut into bite-sized strips
3 cloves garlic, minced
1 24 ounce package frozen cut broccoli (6 cups)
2 10.75 ounce cans condensed cream of mushroom soup or cream of chicken soup
1 cup water
1 cup chopped tomato (1 large)
0.667 cup grated Parmesan cheese
Salt
Ground black pepper

Steps:

  • Preheat oven to 350°F. Cook rice according to package directions; remove from heat. Stir in half of the onion, the butter, and 1 teaspoon of the Italian seasoning. Divide the rice mixture among three 2-quart baking dishes or casseroles; set aside.
  • In a very large skillet heat oil over medium heat. Add the remaining half of the onion, the remaining 1 1/2 teaspoons Italian seasoning, the chicken, and garlic; cook and stir for 4 to 6 minutes or until chicken is no longer pink. Remove from heat. Stir in frozen broccoli, soup, the water, tomato, and Parmesan cheese. Season to taste with salt and pepper.
  • Spoon chicken mixture over rice in dishes. Cover baking dishes with foil. Freeze for up to 3 months.
  • To serve, thaw one baking dish in the refrigerator for 1 to 2 days (mixture may still be icy). Preheat oven to 350°F. Bake, covered, for 30 minutes. Uncover and bake for 30 minutes more or until heated through.

1/2 cup sliced green onion
1 1/4 lbs boneless skinless chicken breast halves, cut into strips
1 tablespoon cooking oil
1 teaspoon dried Italian seasoning
2 cloves garlic, minced
salt and pepper
4 teaspoons cornstarch
2 3/4 cups milk
4 ounces cream cheese, cut up into pieces
1 1/2 cups frozen chopped broccoli, cooked and drained
1/2 cup fresh grated parmesan cheese
2/3 cup diced ham

Steps:

  • Prepare rice according to package directions; remove from heat and stir in half of the green onions; set aside and keep warm.
  • In a large fry-pan, heat the oil; saute chicken strips, Italian seasoning, garlic, salt, and pepper until chicken is cooked and no longer pink.
  • Remove chicken from pan and reserve drippings.
  • Saute remaining onion in drippings until tender; add more oil if necessary.
  • Stir in cornstarch; add milk.
  • Cook and stir over medium heat until thickened and bubbly.
  • Reduce heat; add cream cheese; stir until smooth.
  • Remove sauce from heat; return chicken strips to pan; add broccoli, Parmesan cheese, and ham.
  • Stir and cook until heated through and cheese is melted.
  • On individual serving plates, spoon rice mixture onto plate and then top with chicken-broccoli mixture.

1 cup low-sugar, low-fat pasta sauce
1/4 cup freshly grated Parmesan

4 cups broccoli florets (8 ounces)
1 tablespoon, plus 1 teaspoon olive oil

Steps:

  • Set a medium-size nonstick skillet over medium-high heat. Spray with olive oil, and brown the chicken 2 minutes on each side. Season each cooked side with salt and pepper.
