PARMESAN CHEDDAR BASIL BITES



Parmesan Cheddar Basil Bites image

Parmesan Cheddar Basil Bites are a delicious appetizer perfect for any event or party! They are crisp outside but soft and tender inside.

2 ½ cups shredded Cheddar Cheese
½ cup butter, softened
5 tablespoons half-and-half
1 teaspoon kosher salt
1 ½ cups all-purpose flour
1 ½ cups grated Parmesan cheese
3 tablespoons finely chopped fresh basil

Steps:

  • Preheat oven to 350°
  • Beat Cheddar cheese, butter, half-and-half, and salt at medium speed with a mixer until blended. Gradually add flour, Parmesan cheese, and basil - beating just until combined.
  • Turn dough onto a well floured surface. Divide into 3 equal portions, and roll to flatten each to 1/8 inch thickness. Cut with star shaped cutter. Place 1 inch apart on parchment paper-lined baking sheets.
  • Bake 11 to 14 minutes or until golden; cool on baking sheets on wire racks for 30 minutes.

Yield 32 crackers.

Number Of Ingredients 5

1 cup all-purpose flour
2/3 cup grated parmesan cheese
1/4 teaspoon ground red pepper
1/2 cup butter, cut up
2 tablespoons milk

Steps:

  • Preheat oven to 350 degrees.
  • Comnbine first 3 ingredients in a medium bowl; cut in butter with a pastry blender or two forks until crumbly. Mixture will look very dry, Gently press mixture together with hands, pressing until blended and smooth, about 2-3 minutes.
  • Shape dough into 2 four inch long logs. Wrap in plastic wrap and chill 1 hour. Cut each log into 1/4" thick slices and place on lightly greased baking sheet. Brush with milk.
  • Bake at 350 degrees for 12-15 minutes or until lightly browned.
  • Can also shape dough into 10 x 8 " rectangle on a lightly floured surface and cut into 32 squares using a pastry cutter wheel or knife. Place squares on lightly greased baking sheet, brush with milk and bake as above.
