CAULIFLOWER PATTIES
This is one of my Mother's recipes and it is delicious. If cauliflower is your favorite vegetable then you'll like this. I'm pretty sure of it because cauliflower is not one of my favorite veggies and I like this one a lot.

Steps:
- Cook cauliflower in water until soft.
- Mash cauliflower.
- Let it cool enough to handle.
- Add egg and breadcrumbs or flour and mix well.
- Shape into patties.
- Heat oil in frying pan.
- Put two or three cauliflower patties in at a time.
- Fry three or four minutes on each side or until brown.

- Preheat oven to 425˚F (220˚F).
- In a bowl or ziploc bag, add the cauliflower florets and olive oil and stir until fully combined.
- Add the garlic powder, salt, breadcrumbs, and Parmesan. Stir until fully coated.
- Spread the cauliflower on a greased, foil-lined baking sheet.
- Bake for 20 minutes. Stir the cauliflower and bake for an additional 10.
- Enjoy!

- Add sour cream or chives to taste.

- 2. Mix all ingredients together including the butter from the pan.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a cooling rack with nonstick cooking spray; place on a baking sheet and set aside.
- Combine Parmesan cheese, thyme, oregano, basil, garlic powder, salt, and pepper in a small bowl.
- Place cauliflower onto the prepared cooling rack. Drizzle with olive oil and sprinkle with Parmesan cheese mixture.
- Bake in the preheated oven until tender and easily pierced with a knife, about 15 minutes. Remove from the oven.
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Broil in the preheated oven until cauliflower is golden brown, 2 to 3 minutes. Remove from the oven, garnish with parsley, and serve immediately.

- Boil together the cauliflower florets and cubed potatoes until tender. Then drain well (let sit for about 10 minutes in a colander). Then move to al large bowl and mash well, (doesn't have to be finely mashed, small chunks are fine).
- In a medium sized frying pan add the oil and heat over medium heat, once the oil is hot add by tablespoons (I used about 2 heaping spoonfuls of mixture for every fritter, lightly flatten with the bottom of the spoon) and cook on medium heat until browned on both sides.
