Steps:

  • Preheat a baking sheet on the lower rack in a 450 oven. Blanch 1 head chopped broccoli in boiling water with salt and sliced garlic for 1 minute; drain. Toss with a splash of olive oil, a handful each of breadcrumbs and parmesan, salt and pepper. Place on the hot baking sheet and top with more cheese and breadcrumbs; roast until golden, 15 minutes.

This is an excellent hot appetizer, and a particular favorite of mine to serve with any kind of meatballs. These always go fast once they come out of the oven, and are a good way to sneak in some tasty vegetables.

Number Of Ingredients 7

2 (10 ounce) packages frozen chopped broccoli
2 cups herb stuffing mix
1 cup grated parmesan cheese
6 eggs, beaten
3/4 cup butter, softened
salt and pepper
1 cup parmesan cheese, for rolling in

Steps:

  • Cook frozen broccoli according to package directions; drain well.
  • Combine all ingredients, mixing well.
  • Pour mixture into a sheet pan and spread evenly; Refrigerate.
  • When firm, roll mixture into small (1 inch) balls.
  • Roll balls in Parmesan cheese.
  • Freeze.
  • To serve: Put frozen broccoli balls in a preheated 350 degree F. oven and bake for 35-40 minutes, or until golden brown.

900g trimmed broccoli , divided into florets
25g butter
50g parmesan (or vegetarian alternative), grated, plus extra to serve

Steps:

  • Drop the broccoli florets into a pan of boiling salted water. Bring back to the boil, cook for 3-5 mins until tender, then drain.
  • Melt the butter in a large frying pan and, once sizzling, add the broccoli. Season with salt and pepper and sprinkle in as much of the parmesan as you want to use. Gently stir the florets in the cheese and butter. Scatter on a little more grated parmesan to serve.

  • To make the balls: Use a muffin tin greased with the olive oil. While preparing the ingredients: Preheat the oven to 200°C (3920°F).
  • Wash the broccoli, remove the stalk and cut into small thin pieces. Then chop as finely as possible, as this gives the little balls a smooth consistency.
  • Finely grate the Parmesan and crush the cloves of garlic. Mix the finely chopped broccoli with the almonds, the grated Parmesan and the crushed cloves of garlic thoroughly in a bowl. Whisk the organic egg and mix with the ingredients.
  • Garnish the mixture with 1 tbsp. of Kotányi herbes de Provence mix, a pinch of Kotányi Himalayan Salt and pepper. Mix again thoroughly to get the right flavor.

  • Place the almonds in a food processor. Process until they're coarsely ground (see image in post--it's important to not under- or over-process!). Transfer ground almonds to a medium bowl.
  • Now place the broccoli florets in the food processor and pulse until chopped. Add the chopped broccoli, cheese, and garlic to the almonds and season with salt and pepper to taste. Stir in the egg.
  • Spray a mini-muffin tin with olive oil or cooking spray. Form the broccoli mixture into 12 balls, squeezing them a little to make sure they hold their shape, and place each one in its own cup in the muffin tin. Bake until meatballs are golden on the outside and heated through, about 20 minutes. Remove tin from oven and run a butter knife along the edges of each muffin cup to loosen meatballs before gently popping them out.
