1 cup black beans, rinsed drained and mashed
1 cup cooked brown rice
1 garlic clove, pressed
2 tablespoons leeks, whites only, finely chopped
2 tablespoons sweet potatoes, cooked and mashed
1 teaspoon chili powder
1/2 teaspoon oregano
1/2 teaspoon basil
1/4 teaspoon cumin
1 teaspoon salt
1 tablespoon olive oil
4 hamburger buns, toasted

Steps:

  • Mix all ingredients except oil and buns in a large bowl. Coat clean hands with olive oil to mix. Divide mixture into fourths and shape into patties.
  • Heat grill pan over medium flame and coat lightly with oil. Add patties and cook 5 minutes per side or until golden and crispy. Serve on buns and dress with your favorite condiments.

2 lbs ground beef
1/2 cup honey
1/4 teaspoon ground cinnamon
1/4 teaspoon paprika
1/4 teaspoon curry powder
1/8 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1/4 cup soy sauce
1 (23 ounce) can sliced pineapple, drained
8 hamburger buns, split and toasted
lettuce leaf

Steps:

  • In a bowl, combine the first 7 ingredients; mix well.
  • Shape into 8 patties.
  • Grill the burgers, uncovered, over medium-hot heat for 3 minutes on each side.
  • Brush with soy sauce.
  • Contiinue grilling for 4-6 minutes or until juices run clear, basting several times.
  • During the last 4 minutes, grill the pineapple slices until browned, turning once.
  • Serve burgers and pineapple on buns with lettuce and condiments of your choice.

1 tablespoon olive oil
1 medium onion, finely chopped
2 garlic cloves, crushed
750 g four-bean mix, drained, lightly mashed
1 teaspoon cumin
1/4 teaspoon salt
2 cups whole wheat bread crumbs
3 eggs, lightly beaten
1/4 cup plain whole meal flour
2 tablespoons olive oil, extra
Turkish bread, toasted, to serve

Steps:

  • Heat oil in frypan and sauté onion and garlic until soft. Place in a large bowl. Add beans, cumin, salt, breadcrumbs and eggs. Mix well.
  • Using a ¼ cup measure, form mixture into burgers and toss gently in flour.
  • Heat extra oil in frying pan or on BBQ and cook burgers until golden on both sides.
  • Serve on toasted Turkish bread with plenty of salad ingredients.

15 ounces pinto beans, rinsed and drained
1 teaspoon ground cumin
1 teaspoon chipotle chile in adobo, minced
1/2 cup salsa
1 slice pickled jalapeno pepper, cut and minced
2 tablespoons olive oil
5 tablespoons plain dried breadcrumbs
4 hamburger buns, warmed
4 lettuce leaves
cilantro, onion & sour cream (optional)

Steps:

  • In medium bowl, with potato masher, mash pinto beans until smooth. Stir in cumin, chipotle, pickled jalapeno, 2 tbsp salsa, and 2 tbsp breadcrumbs until combined.
  • Place remaining 3 tbsp breadcrumbs on sheet of waxed paper. With floured hands, shape bean micture into four 3-inch round burgers; coat with breadcrumbs.
  • In nonstick, 12-inch skillet, heat oil over med-high heat. Add burgers and cook until slighlt browned on both sizes, about 8 minutes, turning burgers halfway through cooking.
  • Spoon remaining 1/2 cup salsa on bottom halves of buns. Top with lettuce and burgers. Serve burger with cilantro, onion, and sour cream if desired.
