2 tablespoons butter
2 tablespoons olive oil
1 large onion, diced
1 1/2 tablespoons Hungarian paprika
6 large potatoes, diced 3/4 inch (waxy type)
1 small green pepper, diced
1 large tomatoes, peeled and diced
salt and pepper, to taste
water

Steps:

  • In a large saucepan, melt butter and olive oil.
  • Sauté the onions for 5 minutes.
  • Put all of the rest of the ingredients into the pot, just barely covering the potatoes with water.
  • Bring to a boil, then reduce to a simmer.
  • Avoid stirring as much as you can to keep the potatoes from breaking apart.
  • Cook for 30 minutes or until tender.

1 ½kg floury potatoes (such as Maris Piper, King Edward or Desirée), peeled and cut into halves or quarters, depending on size
100ml olive oil
2 tsp smoked paprika

Steps:

  • Heat oven to 200C/180C fan/gas 6. Add the potatoes to a pan of cold salted water, bring to a boil, then simmer for 5 mins until partly tender. Drain and steam dry for a few mins in a colander.
  • Return the potatoes to the saucepan, and add the oil, paprika and plenty of salt and pepper. Cover with a lid, then shake the pan around to roughen the edges of the potatoes and thoroughly coat them in the paprika and oil. Tip the potatoes into a large roasting tin, making sure they are evenly spaced apart. Scrape in all the fluffy potato mess - these make the best crispy bits!
  • Roast the potatoes for 1 hr 15 mins, turning halfway, until extremely fluffy and crisp.

3 eggs, beaten
½ cup water
2 ½ cups all-purpose flour
2 teaspoons salt
¼ cup butter
1 ½ pounds bone-in chicken pieces, with skin
1 medium onion, chopped
1 ½ cups water
1 tablespoon paprika
½ teaspoon salt
1 teaspoon ground black pepper
2 tablespoons all-purpose flour
1 cup sour cream

Steps:

  • Fill a large pot with water and bring to a boil over high heat. In a large bowl, mix together the eggs, 2 teaspoons of salt, and 1/2 cup of water. Gradually stir in 2 1/2 cups of flour to make a stiff batter. Using two spoons, scoop out some batter with one spoon and use the second to scrap off the spoonful of batter into the boiling water. Repeat until several dumplings are cooking. Cook dumplings for 10 minutes or until they float to the top; then lift from the water and drain in a colander or sieve. Rinse with warm water.
  • In a large skillet over medium-high heat, melt butter and add chicken; cook until lightly browned, turning once. Add onion to skillet and cook 5 to 8 minutes more. Pour in 1 1/2 cups of water, and season with paprika, salt, and pepper; cook 10 minutes more, or until chicken is cooked through and juices run clear. Remove chicken from skillet and keep warm.
  • Stir 2 tablespoons of flour into sour cream; then slowly stir into the onion mixture remaining in the skillet. Bring the mixture to a boil, stirring constantly, and cook until thickened.
  • To serve, add dumplings to the sour cream/onion mixture, then spoon onto dinner plates adding a piece of chicken.

2 pounds small red potatoes, (halved and rinsed)
1/4 cup olive oil
1 onion, (chopped)
2 garlic cloves, (minced)
2 teaspoons smoked paprika
1 cup chicken broth
salt and pepper

Steps:

  • Heat 1 tablespoon of oil in a large nonstick skillet over medium heat. Add onion and cook for 5 minutes. Add garlic and 1 teaspoon paprika and cook for 30 seconds, stirring.
  • Add potatoes, chicken broth, and 1/2 teaspoon salt. Bring to boil.
  • Reduce heat to medium-low, cover, and cook for 12 to 15 minutes. You want the potatoes to just be tender. Remove cover, increase heat to medium and continue to cook until liquid evaporates, 5 to 8 minutes.
  • Stir together the remaining oil and paprika and add to the pan. Continue to cook, stirring occasionally, until nice and brown. This will take about 5 minutes. Season with salt and pepper.

2 big chicken thighs (or chicken breasts, at least 350 gr of meat)
4 big potatoes ((yellow ones))
1 or 2 carrots
1 big onion
2 cloves of garlic
2 tbsp sweet paprika
1 tbsp hot paprika
2 tsp chilli flakes ((optional))
1 tsp basil or parsley
3 tbsp salt ((add one or two tbsp and if it not too salty,add more))
1 tbsp pepper ((the amount of pepper is up to you))
lard or oil (for frying)
1 full tbsp flour or cornstarch
750 ml water ((this is approx. see the recipe notes))
chicken seasoning mix ((optional))

Steps:

  • Chop onion and garlic nicely and fry them on some lard or oil until translucent.
  • Cut carrots into small pieces and add them to the same pot.
  • Cut the chicken into small or medium sized pieces and add them once the onions and carrots are soft enough.
  • Add some salt and pepper to the chicken, and if you like, you can add some chicken seasoning mix.
  • Cut potatoes into small pieces and add them into the pot together with water. Water should cover all ingredients.
  • Cook paprikash at low to medium heat for up to 2 hours or at least 90 minutes. You will probably need to add more water during cooking, until the potatoes are cooked well.
  • You can immediately add all the spices, including salt, pepper, hot and sweet paprika, basil or parsley.
  • In a cup of cold water, add a full tablespoon of flour or cornstarch. Mix it well and then add it to the pot. Stir paprikash occasionally and if it is not red enough add more paprika.
  • Paprikash is ready when the potatoes are cooked enough and the liquid is thick.

5 Tbsp olive oil
2 lb beef stew meat
1 c chopped onion
5 Tbsp sweet hungarian paprika
2 qt beef broth (homemade) or good quality
2 lb yellow or yukon gold potatoes, peeled & cubed
6 large eggs slightly beaten
1 3/4 c all purpose flour
2 tsp kosher salt + more
1 tsp black pepper
parsley (optional) for garnish

Steps:

  • 1. In a large Dutch-oven or heavy pot over medium-high heat, add 2 tablespoons of olive oil. When it is hot, add the cubed beef and a season with salt and pepper. Stir the meat a couple of times, and cook for about 5-6 minutes. Transfer the beef, along with it's juices, to a bowl and set aside.
  • 2. In the same Dutch-oven over medium-high heat, add the remaining 3 tablespoons of olive oil. When it is hot, add the onion. Cook for about 5- 10 minutes, stirring often, until they become soft and carmelized.
  • 3. Still on medium-high heat, add 5 tablespoons of paprika to the browned onions and stir for about 30 seconds. Add 2 quarts of beef broth, the reserved cooked beef and juices, 1 teaspoon salt, and black pepper. Bring to a boil.
  • 4. Reduce heat to simmer. Simmer on low-medium for about 2 hours, or until the beef is very tender.
  • 5. When the beef is tender, raise the temperature to medium and add the cubed potatoes. Cook for about 15 minutes, or until the potatoes are cooked through and tender, but not falling apart.
  • 6. Meanwhile, in a medium bowl, using a large spoon, mix the lightly beaten eggs with the flour and 1 teaspoon salt. It will form a sticky paste. This is normal. When the potatoes are cooked through, begin to add the dumplings one at a time. Using a small spoon, gently "plop" a bite-sized portion into the hot soup. You may want to use another spoon (or your finger) to help you. It will sink at first, and then float to the top. Repeat until all of the egg/flour mixture is in the soup. The soup will look crowded, and you will need to "push" some of the dumplings out of the way to make room for more.
  • 7. Once they are all in the soup, let them cook for another 5-10 minutes. At this point, taste the soup. Much of the flavor is dependent on the amount of salt. Add more if necessary. Remove from the heat and stir in the parsley if desired. Enjoy with a piece of crusty bread.

  • Wash the potatoes and cut them in half. Cover with cold water and bring to a boil. Add a couple of tablespoons of salt just like when cooking pasta. The potatoes will absorb what they need so don’t worry about adding too much. Simmer for about 15 minutes or until the potatoes are cooked through but still hold their shape perfectly. Drain well in a colander and allow to dry off in their own steam for a few minutes.
  • While the potatoes are cooking start your onions. Heat up a large skillet over medium low heat, add a drizzle of olive oil and the sliced onions with a pinch of sea salt. Cook until the onions soften and start to caramelize around the edges stirring often. You can add a little drop of water to create moisture as needed and help them cook faster. Once the onions are done to your liking you can add the cooked potatoes.
  • Drizzle the potatoes with the olive oil and sprinkle with the paprika. Use a spatula to combine everything making sure the potatoes get coated evenly with the oil and paprika. Taste and adjust seasoning with salt and pepper and stir in the fresh parsley or herbs of your choice.
  • Optional: you can add more oil at this point if desired and continue to pan cook the potatoes a little longer to get some caramelization around the edges. Finish with chili flakes for heat and extra herbs.
