PAPRIKA FRIES WITH DILL MAYO



Paprika Fries with Dill Mayo image

Number Of Ingredients 12

3 tablespoons kosher salt, plus more to taste
2 pounds russet potatoes, cut into wedges
3 tablespoons neutral oil
1 tablespoon sweet paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Freshly ground black pepper
1/2 cup mayonnaise
1/2 cup Greek yogurt
4 teaspoons grainy mustard
3 tablespoon chopped fresh dill
Kosher salt and freshly ground black pepper

Steps:

  • For the fries: Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper.
  • Stir the salt into a large bowl of cold water until dissolved, then add 1 cup ice cubes. Submerge the potato wedges and soak for 20 minutes. Drain the potatoes and pat them dry.
  • Toss the potatoes in the oil on the baking sheet. Bake, tossing halfway through, until browned, about 1 hour.
  • Combine the paprika, garlic powder and onion powder in a small bowl. When the potatoes are done baking, toss with the spice mixture and season as desired with salt and pepper.
  • For the dill mayo: Meanwhile, combine the mayonnaise, yogurt, mustard and dill in a medium bowl. Season with salt and pepper. Serve with the fries.

2 tablespoons olive oil
1 tablespoon grill seasoning
4 medium russet potatoes, scrubbed and cut into eighths
2 sheets aluminum foil
cooking spray

Steps:

  • Preheat the oven to 500 degrees F (260 degrees C).
  • Mix olive oil and grill seasoning together in a large bowl. Add potato wedges and toss to coat.
  • Line 2 baking sheets with aluminum foil. Crumple up foil slightly and grease with cooking spray. Arrange potato wedges on the foil so that they are not touching and have enough room to cook.
  • Bake in the preheated oven, turning once, until brown and crispy, about 25 minutes.

Steps:

  • Scrub the potatoes and cut them in half then into wedges. Preheat oven 450 degrees. Line a large sheet pan with foil. Spray cooking spray on foil
  • Place the potatoes in a bowl and add the oil, paprika, salt & pepper.
  • Arrange them in a single layer on the prepared pan. Roast for 10 to 15 minutes until browned then turn and roast again until the other side is browned. Serve immediately

1 onion finely diced
2 Idaho potatoes, baked and diced
4 cloves garlic, mashed to a paste
1 tablespoon smoky paprika
1/4 cup freshly chopped parsley leaves
Fresh cilantro sprigs, for garnish, optional

Steps:

  • Heat the oil in a cast iron pan, on the grill or stove, over medium heat. Add the onion and cook until caramelized. Add the potatoes, and garlic and cook until warmed through. Stir in the paprika and parsley and transfer to a serving bowl. Garnish with cilantro sprigs, if desired, and serve.

  • Preheat oven to 450 degrees. Cut potatoes into 1-inch-wide wedges. Transfer to a rimmed baking sheet; toss potatoes with oil and paprika; season with salt and pepper.

1 cup mayonnaise
2 cloves garlic, smashed to a paste
1 teaspoon finely grated orange zest
1/2 teaspoon finely grated fresh lemon zest, Meyer lemons, preferred
1 1/2 teaspoons finely chopped fresh thyme leaves
1/4 teaspoon smoked paprika
1 tablespoon honey
Kosher salt and freshly ground black pepper
6 russet potatoes, scrubbed
1/4 cup canola oil

Steps:

  • In a small bowl, whisk together the mayonnaise, garlic, zests, thyme, paprika, honey and season with salt and pepper, to taste. Cover and refrigerate for at least 30 minutes before serving.
  • Put the potatoes in a pot of cold water, add 2 tablespoons of salt and cook over medium heat until the potatoes are tender, but still firm, about 10 minutes. Drain, let cool and cut each potato lengthwise into 8 slices.
  • Heat the grill to medium. Brush the potatoes with the oil and season with salt and pepper, to taste. Grill until golden brown and cooked through, about 2 to 3 minutes per side. Transfer to a serving platter or bowl and serve with the mayonnaise.

Oven-Crispy French Fries With Paprika-Parmesan Salt image

2 large baking potatoes (about 1 1/2 pounds), scrubbed well
1/4 cup extra-virgin olive oil
1 tablespoon Emeril's Original Essence seasoning or Creole seasoning
Kosher salt
1/4 cup finely grated Parmigiano-Reggiano cheese
1 tablespoon sweet paprika
1/2 teaspoon garlic powder
1/4 teaspoon onion powder

Steps:

  • Preheat the oven to 425 degrees F.
  • Pat the potatoes dry and cut them lengthwise into 1/2-inch-thick slices. Turn each slice flat and slice again lengthwise into even 1/2-inch-thick fries. Place the potatoes in a mixing bowl and add the olive oil, seasoning and 1/4 teaspoon salt. Toss well to combine, then transfer the fries to a large baking sheet and arrange them in one even layer so that they are not touching. Roast, scraping the potatoes from the baking sheet with a metal spatula and turning them over halfway through, until golden brown and crispy, about 30 minutes.
  • While the potatoes are cooking, combine the cheese, paprika, garlic powder, onion powder and 1/2 teaspoon salt in a small bowl and stir to blend. When the potatoes are crisp and brown, sprinkle with the paprika-parmesan salt. Serve hot.

One 28-ounce bag frozen potato tots
1/2 teaspoon smoked paprika
4 teaspoons Montreal seasoning
3 tablespoons salted butter
4 Kansas City strip steaks
2 tablespoons lemon pepper seasoning
1 cup sour cream
1/4 cup mayonnaise
3 tablespoons prepared horseradish, or to taste
1 tablespoon peppercorns, crushed or ground
1 teaspoon Worcestershire sauce
1/4 teaspoon Montreal seasoning, or to taste
Garnish: chopped fresh parsley

Steps:

  • Season the tots with the paprika and half the Montreal seasoning. Bake according to the package instructions.
  • Meanwhile, melt the butter in a large cast-iron skillet over medium-high heat. Sprinkle the steaks on both sides with the lemon pepper seasoning and the remaining 2 teaspoons Montreal seasoning. Add the steaks to the skillet and cook for about 3 minutes per side for medium-rare. Remove to a cutting board to rest.
  • For the peppercorn horseradish sauce: Add the sour cream, mayonnaise, horseradish, peppercorns, Worcestershire and Montreal seasoning to a bowl, then stir until well combined.
  • Mound the tots on a platter and place the steaks alongside. Pour the sauce into a bowl to serve. Garnish with fresh parsley.
