When I was little, I would often ask my mom to make "favorite meat." She knew I was requesting this homey pork recipe. It's been in my family for more than 30 years and it's still a favorite! -Alexandra Barnett, Forest, Virginia

Steps:
- For the filling, heat 2 tablespoons of oil in a large pan and fry the pork in small batches for 4-5 minutes until just browned, then remove with a slotted spoon and set aside. Add the onions to the pan and fry for 5-6 minutes until soft and golden. Return the pork to the pan and sprinkle in the flour. Cook for 1 minute, stirring well.
- Add the celery, apricots, lemon and orange zest, apples, garlic, herbs and spices. Pour in the wine and stock and bring to simmering point, then cover and gently cook for 11⁄4 hours or until the pork is tender. Remove from the heat.
- Meanwhile, preheat the oven to 200C/Gas 6/fan oven 180C. Peel and cut the parsnips into 2.5cm/1in dice. Put the remaining oil in a roasting tin and put in the oven for 5 minutes until hot. Tip the parsnip chunks into the roasting tin and coat in the hot oil. Roast in the oven for 30 minutes until cooked through and golden brown. Drain and set aside. When the pork is tender, stir in the parsnips. Spoon into a 2 litre/31⁄2 pint ovenproof dish and leave to cool completely.
- For the cobbler crust, sift the flour and season. Add the suet, butter and parsley and lightly mix in with a fork. Make a well in the centre, then add the lemon zest and juice and gently bring together to make a soft and pliable dough. If it is too dry, add a little cold water, but don't knead the dough or it will become tough. Reduce the temperature to 180C/Gas 4/fan oven 160C.
- Roll out the dough on a lightly floured surface to about 5mm/1⁄4in thick. Cut the dough into rounds using a 7.5cm/3in pastry cutter. Re-roll the trimmings and cut out more rounds until all the dough is used up. Arrange the circles of dough so that they slightly overlap on top.
- Brush the dough with beaten egg and bake in the oven for 45 minutes until the crust is golden.

BASIC PAPRIKA PORK CHOPS
Steps:
- Pat the pork chops thoroughly dry with paper towels.
- In a small bowl combine the paprika, salt, and pepper.
- Sprinkle both sides of all the pork chops evenly with the spice mixture. Set aside the chops while you prepare the pan.
- Heat a large frying pan over medium-high heat. Once the surface of the pan is hot, add the oil and heat until the oil shimmers. Add the pork chops-they should make a bright sizzling sound immediately upon touching the pan; if they don't, take them out and let the pan and oil get a bit hotter. Reduce the heat to medium and cook the chops, undisturbed, until they're well browned and they release from the pan of their own accord, about 4 minutes. Turn and repeat on the other side.
- Remove the chops from pan and let sit, covered loosely with foil, for about 10 minutes. Serve hot.

- Heat 3 tbsp olive oil in a large shallow casserole (about 30cm). Season the pork, then coat in the seasoned flour and add to the hot oil. Brown well all over, then remove to a plate with a slotted spoon (you may have to fry in batches). Add the leeks and pancetta to the pan, with a little more oil if necessary, and fry gently for 10 minutes until soft.
- Add the sage and return the pork to the pan. Add the cider and stock, covering the pork, season again and bring to the boil. Reduce to a simmer and cook, covered, for 1 hour. Remove the lid and simmer for another hour until the pork is tender enough to pull apart with 2 forks. Break up the pork a bit, stir in the chopped parsley, then leave to cool a little while you make the topping.
- Heat the oven to 200°C/180°C fan/gas 6. For the topping, put the flour, mustard powder, baking powder and salt into a large mixing bowl and stir to combine. Add the butter then, using your fingertips, rub in the butter until you get a coarse, sandy mixture. Stir in the buttermilk and bring everything together into a soft, sticky dough.
- Shape the dough into a disc slightly smaller than the casserole, using a little extra flour if it’s too sticky, then score a cross in the top using a sharp knife. Scatter half the grated cheese over the pork and place the cobbler disc on top.
