CHEF JOHN'S CHICKEN PAPRIKASH

After many, many requests, I'm excited to be sharing what is my second favorite Hungarian dish of all time. I really love making anything Hungarian, since the recipes tend to be simple and easy to make, as well as comforting and delicious, and the names are never not fun to say. Top with extra sour cream and freshly sliced chives on top.

8 (5 ounce) bone-in, skin-on chicken thighs
salt to taste
2 tablespoons olive oil
2 medium yellow onions, diced
3 cloves garlic, minced
2 tablespoons tomato paste
4 teaspoons all-purpose flour
1 teaspoon kosher salt, or to taste
½ teaspoon freshly ground black pepper
1 teaspoon smoked paprika
¼ cup sweet Hungarian paprika
1 pinch cayenne pepper
2 cups chicken broth
⅔ cup sour cream, room temperature
¼ cup heavy whipping cream

Steps:

  • Season chicken generously on both sides with salt. Heat olive oil in a heavy, deep-sided pan (that comes with a lid) over high heat and brown the chicken well, skin-side down, about 5 minutes; flip and continue to sear until other side is browned, 3 to 4 minutes more. Turn off heat. Transfer the browned chicken to a plate and reserve until needed; spoon out excess chicken fat if desired.
  • Add onions and a pinch of salt to the same pan and saute over medium until golden, about 5 minutes. Add garlic, tomato paste, and flour and cook, stirring, another 3 to 4 minutes to form a tomato roux. Stir in 1 teaspoon kosher salt, freshly ground black pepper, smoked paprika, and sweet paprika and cook for 1 minute. Add chicken broth and bring to a simmer over high heat.
  • Reduce heat to medium-low and transfer chicken and accumulated juices back into the pan. Baste the tops with the sauce, cover the pan with the lid, and simmer, basting occasionally with the sauce, until the chicken is no longer pink in the centers and is fork-tender, 45 to 60 minutes. Remove the chicken and transfer to a plate.
  • Skim some fat off the top of the sauce if desired. Whisk heavy cream and sour cream into the sauce and bring to a simmer, stirring occasionally. Transfer the chicken and any juices back into the sauce. Simmer, uncovered, basting often, until chicken is heated through and very tender, about 10 minutes. Taste and adjust seasoning if needed.

A dish that is shared by Austria and Hungary, dating back to the Austro - Hungarian Monarchy. In order to achieve the taste and color desired, it is important to use Hungarian Paprika in this dish. Serve on a bed of Nockerl,"Recipe #8563" and enjoy with a green, leafy salad and a glass of Hungarian Tokayer wine.

1 1/2 lbs chicken meat, cut into small cubes
2 tablespoons flour
2 ounces butter
1 cup creme fraiche
1 large onion
2 teaspoons Hungarian paprika
2 cups chicken broth
1 pinch salt
chopped parsley

Steps:

  • Finely chop the onion.
  • Heat the butter in a heavy pan or dutch oven with a lid until it foams, add the chopped onion and saute until soft but not browned.
  • Add the chicken meat and together with the onion brown lightly, stirring frequently.
  • Season with salt and paprika and stir until the paprika is well incorporated and fragrant, careful not to burn it, it will get very bitter.
  • Add the flour and stir, add the creme fraiche stirring to combine.
  • Now add the chicken stock, turn the heat to medium low, cover and simmer until the meat is cooked and the liquid is reduced to a ceamy sauce.
  • Plate over "Nockerl", sprinkle with chopped parsley and serve.

In this classic Hungarian dish, sweet paprika is used to season the chicken and again to flavor the creamy sauce.

4 boneless skinless chicken breasts
2 tablespoons sweet paprika
salt and pepper
2 tablespoons butter
1 onion, finely chopped
4 plum tomatoes, diced
1/2 cup sour cream

Steps:

  • Cut chicken into strips sized of your choosing.
  • Toss chicken in a medium bowl with half the paprika, 1.5 teaspoons salt and a pinch of pepper.
  • Heat 1 tablespoon butter in a large skillet over med. high heat.
  • Add chicken, cook, tossing occasionally, until opaque throughout, 4-5 minutes.
  • Transfer to plate.
  • Heat remaining tablespoon butter and in the same skillet.
  • Add onion, cook until browned and softened.
  • Add remaining tablespoon paprika and stir, cooking, about 30 seconds.
  • Add tomatoes and 3/4 cup water; cook until saucy.
  • Return chicken to skillet.
  • Stir in sour cream and cook until just heated through, without boiling.
  • Season with salt and pepper, serve.

2 broiler/fryer chickens (about 3-1/2 to 4 pounds each), cut into 8 pieces each
2 teaspoons kosher salt
1 teaspoon pepper
2 tablespoons peanut oil or canola oil
2 medium onions, halved and sliced
2 large garlic cloves, chopped
3 tablespoons all-purpose flour
1 tablespoon sweet Hungarian paprika
2 cups hot chicken broth or water
1 cup sour cream
Optional: Minced fresh parsley and additional sweet Hungarian paprika
Hot cooked noodles or mashed potatoes, optional

Steps:

  • Season chicken with kosher salt and pepper. In a Dutch oven, heat peanut oil over medium-high heat. Brown chicken in batches. Remove with a slotted spoon; drain and keep warm., Reduce heat to medium-low. Add onions; cook, stirring to loosen browned bits from pan, until onions begin to soften, 6-8 minutes. Add garlic; cook 1 minute longer., Stir in flour and paprika; reduce heat to low. Cook until paprika is fragrant, 3-5 minutes. Add broth; cook, stirring constantly, until smooth, 6-8 minutes. Return chicken to pan; simmer, covered, until a thermometer inserted into deepest part of thigh reads 170°, about 30 minutes. Transfer chicken to a serving platter., Skim fat. Stir in sour cream; heat just until warmed through, 3-5 minutes (do not allow to boil). If desired, sprinkle with parsley and additional paprika. Serve with hot cooked noodles or mashed potatoes.
