Steps:
- Bring a large pot of generously salted water to a boil.
- Add the pappardelle and cook according to package directions until al dente (usually 6-7 minutes).
- Meanwhile, melt the butter in a small skillet over medium-low heat. Let it cook for a minute or two until the butter is just lightly golden colored (don't let it go too long, or the butter will burn!). Immediately add the sage to skillet and let it sizzle for a second, then turn off the heat. Squeeze the lemon juice into the skillet and swirl to combine. Set the pan aside off of the heat.
- When the pasta is done cooking, reserve 1/2 cup of the cooking liquid, then drain the pasta in a colander.
- Put the drained pasta back in the pot and place it on the stove over medium-low heat. Pour roughly 1/4 cup of the reserved cooking liquid over the pasta, and then pour the brown butter sage sauce over the top. Stir gently to combine, and let it cook, stirring constantly, for about 1 minute, until the sauce nicely coats all noodles.
- Divide the pasta up into two serving bowls and top each one with freshly grated Parmesan cheese, cracked black pepper, and Maldon sea salt. Serve right away.

- Make the pasta dough: In a stand mixer fitted with the dough hook attachment, combine all of the dough ingredients. Mix on medium speed until a dough begins to form, then transfer to a clean work surface. Knead the dough until it fully comes together, then wrap in plastic wrap and rest in the refrigerator for 1 hour.
- Meanwhile, make the roasted tomato sauce: Preheat the oven to 400 F. Spread 2 tablespoons of the olive oil onto a baking sheet. Lay the sliced onions on the sheet, then top with the garlic, oregano, salt and pepper. Lay the tomatoes over the seasoned onions, face-side down. Pour the remaining olive oil over the top of the mixture and season with salt and pepper.
- Transfer to the oven and cook until the vegetables are tender and lightly golden, 20 minutes. Remove from the oven and let cool. When cool enough to handle, remove the skins from the tomatoes and discard, then transfer the contents of the tray to the bowl of a food processor. Pulse the mixture until a chunky sauce comes together, then season with salt and pepper. Transfer to a large skillet and set aside.
- On a lightly floured work surface, roll the pasta dough into a rectangle, so it is thin and narrow enough to fit through the widest setting on your pasta roller. Sprinkle the dough with more all-purpose flour and begin to roll out. Gradually make the roller thinner until the pasta sheets are ⅛ inch thick. Using a knife, cut the dough into 10-by-1-inch strips of pasta.
- Assemble the pasta: Bring a large pot of water to a boil, then season with salt. Cook the pasta until al dente, 3 to 4 minutes. Drain the pasta, reserving ¼ cup of the cooking liquid.
- Bring the large skillet of tomato sauce to a light simmer, then add the drained pasta and reserved cooking liquid. Toss until incorporated, then season with salt and pepper. Divide between plates, garnish with basil leaves and freshly grated Parmesan, and serve.

- Place the flour on a clean, dry work surface. Make a hole (this is also called a well) in the center of the flour pile that is about 8 inches wide (bigger is definitely better here). Crack all of the eggs and the yolk into the hole and add the olive oil, salt and 1 to 2 tablespoons water.
- Using a fork, beat the eggs together with the olive oil, water (or more if needed) and salt. Using the fork, begin to incorporate the flour into the egg mixture, be careful not to break the sides of the well or the egg mixture will run all over your board and you will have a big mess! Also, don't worry about the lumps. When enough flour has incorporated into the egg mixture that it will not run all over the place when the sides of the well are broken, begin to use your hands to really get everything well combined. If the mixture is tight and dry, wet your hands and begin kneading with wet hands. When the mixture has really come together to a homogeneous mixture, THEN you can start kneading.
- When kneading it is VERY important to put your body weight into it, get on top of the dough to really stretch it and not to tear the dough. Using the heels of your palms, roll the dough to create a very smooooooth, supple dough. When done, the dough should look VERY smooth and feel almost velvety. Kneading will usually take from 8 to 10 minutes for an experienced kneader and 10 to 15 for an inexperienced kneader. Put your body weight into it, you need to knead! This is where the perfect, toothsome texture of your pasta is formed. Get in there and have fun!
- When the pasta has been kneaded to the perfect consistency, wrap it in plastic and let rest for at least 1 hour. If using immediately, do not refrigerate.
- To roll the pasta: Cut off 1/3 of the pasta dough, reserve the rest and keep it covered.
- Squash the pasta with the heels of your hands to facilitate it going through the pasta roller. Dust with flour. Put the pasta through the roller set on number one. Roll the dough through 2 times, dusting it with flour if it feels sticky or tacky.
- Fold the pasta into thirds and put it through the machine on number one again.
- Change the setting on the pasta roller to number two and run the pasta through. Continue to roll the pasta through the machine, changing the setting each time to a larger number (this will make the opening on the pasta machine smaller). When you get to the desired thin-ness (I recommend number six), cut the pasta into 10-inch lengths. Flour the dough generously and stack them in a pile. Cover the stack with plastic or a clean tea towel and proceed rolling the rest of the pasta.
- When the pasta is all rolled, take 3 sheets of pasta and fold both ends of the pasta over each other until they meet in the middle.
- Using a sharp knife, cut the pasta rolls into 1-inch widths. Unroll the pasta "ribbons" and dust with semolina and reserve on sheet trays.
- When ready to use, bring a large pot of salted water to a boil. Add the pasta and cook until al dente, 2 to 3 minutes. Drain.

- Heat a large frying pan over a medium heat and add a good few lugs of olive oil. When the oil's hot, add the garlic and chilli and fry until lightly coloured.
- Drop in most of the basil - stand back as it will crackle and spit in the oil - and then, after a few seconds, add the tomatoes. Bring to the boil and simmer for about 5 minutes. You'll end up with a chunky sauce - if you like it smoother, pass the sauce through a coarse sieve. Taste the sauce and season with salt and pepper. Keep warm.
- Bring a large pan of salted water to the boil. On a lightly floured work surface, cut the lasagne sheets into strips with a knife or a pastry wheel. When the water is at a rolling boil, add the pasta and cook for a few minutes until just al dente.
- Drain the pasta strips in a colander, reserving a little of the cooking water.
- Stir the pasta into the warm sauce. If it's a bit thick, add a few spoonfuls of the cooking water to loosen it up. Sprinkle with freshly grated Parmesan cheese and the reserved basil leaves and serve immediately.

- Cut the butter into large pieces and add it to a light colored pan over medium low flame.
- As soon as the butter starts to foam up add the sage leaves, (make sure they are dry) and cook together for 3 to 5 minutes.
- The butter will foam up and start turning brown (noisette). Do not touch it, and do not stir.
- The moment the foam subsides remove from heat. The sage should be crispy by now. Hit it with a squeeze of lemon juice if you prefer and serve it over cooked ravioli or gnocchi.
- When cooking the pasta make sure to reserve a little bit of the pasta water.
- Add the cooked ravioli to the butter sage sauce and gently toss to coat. Add a little bit of the reserved pasta water If needed to loosen up the sauce.
- Serve with freshly cracked black pepper on top.

- Prepare and Bake the Acorn Squash 1 Preheat oven to 350 degrees F. 2 Cut the squash in half lengthwise and remove the seeds. Place face-up on an oven safe baking dish such as a pie plate. 3 Melt 1/3 of the butter in a microwave (use the defrost setting). Tightly roll 2 medium to large sage leaves lengthwise and finely julienne. Add the julienne cut sage, brown sugar, Herbes de Provence, nutmeg for the squash, ground white pepper, and cayenne pepper to the melted butter. Baste the squash with the butter mixture and bake at 350 degrees until fork tender but NOT mushy, about 35 to 40 minutes. Do not rely solely on recommended cook times. The size and ripeness of the squash and individual oven calibration can significantly change coking times. See TIPS. 4 Allow the squash to cool completely and then carefully remove the fruit from the skin with a large serving spoon. Carefully dice the squash with a large chef's knife into 3/4 inch cubes. Set aside or refrigerate if preparing the squash in advance. Prepare the Pasta Sauce 1 Add 2/3 of the butter and olive oil to a large sauté or frying pan. Smash the garlic with a chef's knife to remove the skin (leave whole) and add to the butter-oil mixture. Sauté over medium heat until the garlic is golden brown (about 5 minutes). Add the vermouth. Cook until the volume is reduced by about 50%. Remove from heat. Julienne the remaining sage leaves as before and add to the butter mixture. Set aside. Prepare the Scallops 1 Dry the scallops thoroughly with paper towels. This prevents splatter, and a mess, when sautéing. 2 Place the cracker meal in a large plastic bag, add the scallops and shake vigorously. Remove the scallops to a plate and shake-off excess cracker meal. Set aside. This may have to be done in batches. Cook the Pasta 1 Bring 4 quarts of salted water to a boil in a large pot. When the water is vigorously boiling, drop the past and cook for 4 minutes if using the recommended pasta, otherwise follow the manufacturer's cooking recommendation. Drain the pasta and set aside. See TIPS. Sauté the Scallops 1 Add a couple of tablespoons of olive oil to a large frying or sauté pan over medium high heat. When the oil is hot (shimmering), quickly add the scallops without over-crowding. Sauté until lightly brown to golden brown and then turn until lightly brown on the other side (about 1.5 minutes per side). DO NOT over cook scallops. They should be rare and still translucent in the center. See recipe photo. Remember the scallops will continue to cook when removed from the pan. Remove the scallops to a room temperature plate and set aside. Finish and Assemble the Dish 1 Chop the parsley. 2 Re-heat the sauce over medium heat and add the squash. When hot add the drained pasta. Stir to warm and coat the pasta. Stir in the parsley and plate the pasta. Arrange the scallops over the pasta. Finish with a drizzle of extra virgin olive oil and grated parmesan if desired. Serve Servings: 4 Degree of Difficulty: Moderately difficult Oven Temperature: 350°F TIPS: Preparing and baking the squash ahead of time makes this dish much easier. Up to a day in advance is fine. The cooking time for the squash can be significantly reduced by microwaveing the raw squash on high for a few minutes before basting and baking. We strongly recommend using Cipriani Pappardelle. This pasta is extremely thin and very delicious. It's a bit hard to find. We found the best price is at The Fresh Market. See their website for locations. It can also be ordered from Fresh Market via the internet at http://www.freshmarket.com/online-market/detail.aspx?ID=160 ; or from Amazon.com, but the price is substantially higher. Cipriani Pappardelle comes in 250 gram boxes, 8.82 ounces. A suitable alternative pasta may be very thin egg noodles found in pasta section of most grocery stores. We recommend only diver scallops. The best we've ever found come from Costco. They are available weekends from their seafood kiosk or anytime frozen in 2 pound bags. They are day-boat scallops without any preservatives.

- Remove casings from sausages, break meat up into chunks, and set aside.
- Heat oil in a large skillet over medium-high heat. Add onion, and cook until just translucent, about 3 minutes. Stir in the reserved sausage meat, and cook until lightly browned, about 5 minutes. Drain off excess fat
- Add wine, and stir to combine. Raise heat, and bring to a boil. Boil until liquid has reduced slightly, about 3 minutes.
- Add tomatoes and salt. Return to a boil, then lower heat and simmer, uncovered, until sauce has thickened slightly, about 20 minutes. Stir in basil, oregano, and pepper; add additional salt and pepper.
- While sauce is simmering, cook the pappardelle in a large, deep pot of rapidly boiling salted water until al dente (check package for exact cooking time). Drain.
- Return drained pappardelle to the pot, and place over medium-high heat. Using a wooden spoon, stir in 1/2 cup of sausage sauce, and toss together for 1 minute. Remove from heat, and pour into a large serving platter or bowl. Spoon remaining sauce over the top. Sprinkle with 2 tablespoons of Pecorino Romano cheese. Top with additional cheese, if desired, and serve.

- Add 1 tablespoon salt to a large pot of water and bring to a boil. Add pasta and cook according to package directions (or if you're using fresh pasta, for approximately thee minutes).
- Meanwhile, in a large sauté pan, heat the cream over medium heat until it comes to a simmer. Add the truffle butter, 1 teaspoon salt, and ½ teaspoon pepper. Turn the heat down to low and swirl the butter into the cram until it melts. Keep warm over very low heat.
- Once the pasta has cooked, reserve ½ cup of the pasta water and drain the pasta. Add the drained pasta to the sauté pan and toss it with the truffle-cream mixture.
- As the pasta absorbs the sauce, add as much of the reserved cooking water as necessary to keep the pasta very creamy.

- Fill medium saucepan 2/3 with water and add Teaspoon salt;
- Bring to boil;
- Add pasta and boil until al dente;
- Remove pasta from pan with pasta claw or thongs - do not pour out water;
- Strain pasta in colander and cover loosely with foil to keep warm;
- Bring water back to boiling and add lobster tails;
- Boil lobster tails for 8-12 minutes or until shells are bright red/orange and meat is tender;
- Remove from water and carefully remove meat from shell and ensure they are deveined - cut into large chunks;
- Pour water through strainer or cheesecloth to remove particles and set aside 2 cups of it;
- Add pasta back to saucepan and add butter, salt, garlic, cheese and 1/2 cup of the pasta/lobster water;
- Stir continuously on med-low heat;
- Add additional water as need to keep a creamy sauce;
- Add lobster and continue to stir;
- Taste and add additional salt or garlic (or cheese) as desired;
- Serve immediately.
- If pasta has to sit for a few minutes, just add some additional water and stir again.
