JAMIE OLIVER'S PAPPARDELLE WITH BEEF RAGU
This wonderful recipe from Jamie Oliver is hearty and uncomplicated with a surprising pop of flavor thanks to the addition of rosemary and orange zest. Mr. Oliver prepares his in a pressure cooker, but if you don't have one, it can be cooked in a covered Dutch oven on the stove over low heat, or in a 275 degree oven, for about 3 hours. Stir occasionally.

Steps:
- Season beef with salt and pepper to taste. Place an uncovered pressure cooker or oven-proof Dutch oven over medium-high heat, and add olive oil. When oil is hot, add beef. Stir until beef is well browned on all sides, about 5 minutes. Add rosemary and sage sprigs, onion, garlic, carrot and celery. Reduce heat to medium-low and sauté until vegetables are softened, about 5 minutes.
- Add Chianti and continue to simmer until liquid has reduced by half, about 15 minutes. Add tomatoes and their juices, and if using pressure cooker, 1/2 cup water. Secure lid and pressure gauge of pressure cooker, and follow manufacturer's instructions to bring contents of pot to a simmer. Reduce heat to low, and simmer for 45 minutes. If using Dutch oven, simmer, covered, in a 275-degree oven, or on the stove over low heat, for 3 to 3 1/2 hours.
- Place a large pot of lightly salted water over high heat to bring to a boil. Remove pressure cooker from heat, or Dutch oven from oven. After pressure has dropped in pressure cooker, follow manufacturer's instructions to remove lid. Using two forks, finely shred meat and vegetables. Discard herb stems. Loosely cover pan and return it to low heat to keep warm.
- Add pappardelle to boiling water. As it cooks, scoop out 1/2 cup water and reserve. Cook pasta to taste, then drain well. Return pasta to pot, and add butter and 1/4 cup Parmigiano-Reggiano; mix gently until butter has melted. Add a little reserved cooking water to loosen.
- To serve, lift pasta into each of six shallow bowls. Spoon beef ragù over top. Sprinkle each bowl with a pinch of orange zest and rosemary, and a spoonful of cheese.

PAPPARDELLE WITH LAMB RAGù
From Food and Wine Nov 06. The "easy way" they recommend is the one here, using 'store-bought pappardelle, ground lamb and chicken stock, then top the dish with fresh ricotta and mint.

- Preheat oven to 350ºF. Place the tomatoes on a rimmed baking sheet and place in the oven to cook down and concentrate (about 30 – 40 minutes). Tomatoes’ juices should be thickened. The yield will be approximately 1 ½ cups/12 oz., or a total reduction by a little more than half.
- While the tomatoes are roasting, prepare the eggplant. Place the eggplant on a lightly oiled baking tray. Drizzle with half of the vegetable oil. Toss with salt and pepper to taste. Place in the oven and roast for about 20 minutes, flipping the pieces part of the way through to ensure even browning.
- Bring a large pot of salted water to a boil. Cook the pappardelle according to package directions. Drain and reserve.
- While the tomatoes and eggplant are roasting, start the ragu. Heat a large soup pot over high heat. Add the remaining oil and the lamb. Break up the lamb with a spatula or wooden spoon. Sprinkle with salt and pepper to taste.

- Put the sugar, crushed red pepper and 2 tablespoons of salt in a large, resealable plastic bag and shake to combine. Add the lamb shanks. Seal the bag and shake to evenly coat the shanks. Refrigerate for 4 hours or overnight.
- Preheat the oven to 325°. Rinse the lamb shanks and pat dry. In a medium, enameled cast-iron casserole, heat 1 tablespoon of the olive oil. Add the lamb shanks and cook over moderately high heat, turning occasionally, until browned all over, about 10 minutes. Add the onion, carrot, celery, broth, wine, vinegar and Sriracha and bring to a boil. Cover the casserole and braise the shanks in the oven for about 2 hours and 15 minutes, until the meat is very tender.
- Remove the lamb from the pot and let cool slightly. Pull the meat from the bones and coarsely shred it. Strain the liquid into a heatproof bowl and spoon off the fat from the surface. Return the liquid to the casserole and boil until reduced to 1 cup, about 15 minutes.
- In a very large skillet, heat 2 tablespoons of the oil. Add the eggplant, season with salt and cook over high heat, stirring occasionally, until tender and browned, about 8 minutes. Add the lamb, reduced cooking liquid and sour cream. Stir in the herbs. Cover and keep warm.

- Add 1 tablespoon of the olive oil to a heavy-bottomed pot with a lid over medium-high heat (I use a 4-qt Dutch oven). Use paper towel to pat the lamb as dry as possible, then season generously with 1 teaspoon each kosher salt & ground black pepper. Add the seasoned lamb to the Dutch oven and cook until deeply browned on all sides, about 2-3 minutes per side. Work in batches as needed to avoid overcrowding the pot, which prevents browning. Transfer the lamb to a plate and set aside. At this point, preheat the oven to 325 degrees F.
- Add the remaining 1 tablespoon olive oil to the pot & reduce the heat to medium. Once the oil is hot & shimmers, add in the onion, carrots, and celery, seasoning with 1 teaspoon kosher salt. Cook, stirring occasionally, until the veggies are softened & deeply browned, 15-20 minutes. Stir in the garlic and cook until fragrant, 1-2 minutes. Stir in the tomato paste, stirring to coat the veggies, and cook for 1-2 minutes more, caramelizing the tomato paste.
- Slowly pour the red wine into the Dutch oven, using a wooden spoon to scrape up the browned bits that have formed at the bottom of the pot – that’s where all the flavor is! Let the red wine reduce by about half (this goes by quickly!), then pour in the beef stock, crushed tomatoes, and the herbs. I like to use kitchen twine to tie them into a little bundle for easy removal. Return the lamb to the Dutch oven.
- Cover the Dutch oven and place it in the oven to braise for 2 – 2 ½ hours. When it’s ready, the lamb should shred very easily – it’ll be tender enough that you should be able to shred it right in the ragu by using the back of a wooden spoon. Remove the Dutch oven from the oven. Remove & discard the spent bay leaves & herbs. Shred the lamb & stir to combine. At this point, you can cool & store for later use (see Recipe Notes for storage & freezing instructions), or proceed with prepping lamb ragu pappardelle or gnocchi (below).

- Preheat the oven to 300°F. Season the lamb shanks generously with salt and black pepper (I use about 1 teaspoon salt and ½ teaspoon black pepper). Set aside.
- In a large Dutch oven, heat the oil until shimmering. Add the onions and garlic and cook, stirring often, until the onions just begin to soften, 1 to 2 minutes. Add the lamb shanks, wine, tomatoes, carrot, oregano, rosemary, and chili garlic paste, and give it all a good stir. Bring the mixture to a simmer, then cover and place in the oven.
- Braise in the oven for 3 to 4 hours, turning the shanks every hour. If the liquid starts to cook dry, add water, 1 cup at a time, enough to keep the liquid about halfway up the lamb. By the end of the cooking time, the meat should be falling off the shanks.
- Remove the pot from the oven and use tongs to remove the shanks from the pot. Use forks to pull the meat off the bone and shred it finely, then return the shredded meat to the pot and stir. Place over medium-low heat and add the kale. Let simmer until the kale is tender, 15 to 20 minutes.
