A recipe for simple, perfect fish en papillote with vegetables. This healthy method for baking fish in parchment results in tender, flaky fish every time!

4 6-ounce cod fillets (or another firm-bodied fish, such as salmon,flounder, trout, or halibut)
1/4 cup Land O Lakes® Butter with Canola Oil
2 garlic cloves (minced)
2 tablespoons chopped fresh parsley (plus additional for serving)
1 small or 1/2 large shallot
½ teaspoon kosher salt (plus additional for seasoning)
¼ teaspoon ground black pepper
1 small lemon
4 cups lightly packed tender salad greens (like spinach, arugula, radicchio, or even mixed greens)
12 cherry tomatoes (halved)

Steps:

  • Place a rack in the center of your oven and preheat the oven to 425 degrees F.
  • In a small bowl, add the Land O Lakes® Butter with Canola Oil, garlic, parsley, shallot, 1/2 teaspoon salt, and pepper. Zest the lemon right into the bowl (reserve the whole lemon). With a fork, mash the butter with canola oil to smoothly combine all of the ingredients. Cut the whole lemon into thin slices (you will need 8 slices total for the recipe).
  • Assemble the Packets: Tear off 4 squares of parchment that are at least 12 inches on each side. Lay the sheet flat on a work surface. Place 1 cup of salad greens in the center of a sheet, leaving space at the top and bottom. On top of the greens, place 1 fish fillet so that it runs vertically top to bottom. Lightly sprinkle the fish with salt. With the back of a small spoon, spread one-quarter of the butter mixture on top of the fish. Lay 2 slices of lemon on top of the butter mixture and scatter 6 tomato halves around the fish.
  • Fold the Parchment Packets: Lift the right and left sides of the paper up and towards the center, directly above the fish. Touch the two sides together and tightly roll them, folding as you go, until you reach the fish. Now, roll and crimp the top and bottom ends, rolling them towards the counter, away from the center of the fish. When you reach the end, tuck the end underneath the fish. Place the packet on a rimmed baking sheet, using the weight of the fish to hold the ends in place (you don't want the packet to come unsealed as it bakes). Repeat with remaining three packets. Reserve any remaining lemon slices for serving.
  • Place in the oven and bake for 12 to 15 minutes, until the fish is fully cooked through and flakes easily with a fork. Serve warm with reserved lemon slices and additional fresh parsley as desired.

1/2 red onion, julienned
1 zucchini, julienned
1 large carrot, julienned
1 clove garlic, minced
1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground black pepper
4 (4-ounce) sole fillets, hake, flounder or other white fish
1 lemon, thinly sliced, seeds removed
8 sprigs fresh thyme
4 pats butter
1/4 cup white wine

Steps:

  • Preheat oven to 375 degrees F.
  • In a bowl, mix together the onion, zucchini, carrot and garlic. Adds the oil, season with salt and pepper, to taste, and toss to combine. Put each fish fillet in a large square of parchment paper and season with salt and pepper, to taste. Arrange the vegetables on top, dividing evenly. Top the vegetables with 2 lemon slices, 2 sprigs thyme, a pat of butter and 1 tablespoon white wine, layering in order. Fold the parchment paper around the edges tightly in 1/4-inch folds to create a half moon shape. Make sure you press as you crimp and fold to seal the packets well, otherwise the steam will escape. Arrange the packets on a baking sheet. Bake until the fish is cooked through, about 12 minutes, depending on the thickness of the fish. To serve, cut open the packets and serve directly in the parchment on a plate or remove the fish to the plate using a spatula, being sure you don't leave the juices behind.

The 'no smell' fish recipe that is the ONLY one I make for my family (I hate fish, they LOVE it!). Take foil packets to table for service, and keep them around for the discarding of bones and skin. Then when dinner's done, haul those babies to the outside trash.

2 rainbow trout fillets
1 tablespoon olive oil
2 teaspoons garlic salt
1 teaspoon ground black pepper
1 fresh jalapeno pepper, sliced
1 lemon, sliced

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Rinse fish, and pat dry.
  • Rub fillets with olive oil, and season with garlic salt and black pepper. Place each fillet on a large sheet of aluminum foil. Top with jalapeno slices, and squeeze the juice from the ends of the lemons over the fish. Arrange lemon slices on top of fillets. Carefully seal all edges of the foil to form enclosed packets. Place packets on baking sheet.
  • Bake in preheated oven for 15 to 20 minutes, depending on the size of fish. Fish is done when it flakes easily with a fork.

This classic and extra simple method for steaming fish en papillote (or inside parchment paper packets) yields juicy, tender results for everything from halibut to tilapia. If desired, use two or three of the suggested additions below (olives, tomatoes, etc.) to flavor the fish as it cooks.

4 (6.0-ounce) boneless, skin-on or skinless halibut, cod, salmon or tilapia
1/2 teaspoon fine sea salt
1/2 teaspoon ground black pepper
2 teaspoons extra-virgin olive oil
1 small lemon, lime or orange, thinly sliced
1 1/2 tablespoon chopped fresh thyme, oregano, rosemary or flat-leaf parsley
1/2 cup any of the following: pitted and halved Kalamata olives, finely chopped tomatoes, thinly sliced green onions, grated zucchini or carrots (optional)

Steps:

  • Preheat oven to 400°F.
  • Place each fish fillet in the center of a 13-inch square of parchment paper. Season fish with salt and pepper and drizzle with oil.
  • Arrange citrus slices down the length of each fillet, sprinkle with herbs and scatter additional ingredients, if using, over the top.
  • Lift the parchment paper on 2 opposite sides to meet in the middle above fish. Tightly fold down paper until it reaches fish, crimping to seal.
  • Roll up and crimp the ends to seal. (Be sure the paper is sealed snugly so that steam won't escape during cooking. Secure folds with toothpicks, if you like.)
  • Place the packets on a rimmed baking sheet and roast until fish is just cooked through, 10 to 12 minutes for thin fillets like tilapia, and 14 to 16 minutes for thicker fillets like halibut and cod.
  • Transfer packets to plates, carefully unwrap and serve.

This recipe looks fantastic, smells wonderful, and the flavors, in my opinion, are just perfect. I made it for a special dinner and I was so pleased with how it came out (and how good it made me look)! I used Salmon, but any firm or flaky fish will work fine, and I used 6-oz. filets (with the skin) instead of the steaks. For my guest, the fish was perfect, still a bit moist inside (which is, I understand, the right way to serve it). I tend to like my fish drier and flakier inside, so I put mine back in the oven for a couple of minutes. I also used salted butter, so I cut down a bit on the added salt. I saved time by making the vegetable and cilantro mixture and preparing the chiles the night before, so all I had to do for dinner was assemble and wrap it in the parchment. Cleaning up was a breeze. This is a major keeper. I most definitely plan to make this again. If you do try it, I hope you enjoy it as much as we did. The recipe was eaily scaleable to 2 servings, and would be the same to scale to more if needed. I found the recipe on the Web, and it is from a book called Jim McNair's Favorites.

oil or nonstick cooking spray, for greasing the parchment paper.
2 ears corn (can also use 1 cup thawed, lightly cooked frozen OR 1 cup canned corn kernels)
2 small carrots, peeled & slivered
2 green onions with tops, peeled & slivered
1/2 large red pepper, slivered
1 -2 fresh serrano chilies or 1 -2 other hot chili pepper, stems,membranes and seeds discarded,slivered
1/2 cup fresh cilantro, coarsely chopped
3 lbs fish steaks (firm- or flaky-fleshed)
6 tablespoons tequila
6 tablespoons freshly squeezed lime juice
3 tablespoons unsalted butter
salt
ground dried ancho chile powder (or pasila, or other mild to medium chile)
6 slices thin limes
fresh cilantro (to garnish)

Steps:

  • Preheat an oven to 475 degrees F.
  • Cut cooking parchment paper into 6 rectangles measuring 10 by 20 inches each.
  • Using a pastry brush, lightly brush one side of each sheet with the butter or oil, or coat with non-stick spray.
  • Then fold each rectangle in half to form a square with the greased sides facing each other.
  • Set aside.
  • If using fresh corn, cut the kernels from the cobs and measure out 1 cup.
  • Add the corn (or 1 cup cooked frozen or canned corn) to a large bowl along with the carrots, onions, sweet peppers, fresh chiles and cilantro.
  • Open the greased parchment paper and sprinkle half the vegetable mixture, dividing evenly, over one half of each of the parchment rectangles.
  • Leave at least a 2 inch border between the vegetable and the edges of the paper.
  • Rinse the fish under cold running water and dry with paper towels.
  • Place a piece of fish on top of the vegetables on each of the 6 pieces of parchment.
  • In a small bowl, mix together the tequila and the lime juice.
  • Spoon 2 tablespoons of the tequila mixture over each piece of fish.
  • Drizzle each piece of fish with about 1 1/2 tsp.
  • of the melted butter and season with salt and the ground ancho or other chile powder.
  • Place a slice of lime on each pice of fish, and scatter the remaining vegetables evenly over each of the 6 pieces.
  • Refold the parchment paper in half over the fish and vegetable mixture and seal the packets securely by making a series of tight, overlapping folds (about 1 inch folded over) along the edges of each side to form a square.
  • Place the packets on a baking sheet and bake until the packets puff up, about 10 minuts.
  • Transfer the packets to warm plates, garnish with cilatro leaves, and serve immediately, allowing each to open his or her own packet.
  • It is a good idea to have the entire remainder of the meal ready so the packets can go directly from the oven to the table and the meal can begin.
  • Be awre that with this cooking method you are unable to test the fisih to see if it is donw.
  • You have to rely on judging the cooking time based on minutes per inch of thickness.
  • Note that soft-fleshed fish does not work well with this recipe because it cooks too soon.

800 g firm fish fillets
2 green chilies, chopped
1 tablespoon sesame oil
4 tablespoons chopped coriander
2 tablespoons chopped basil
1 teaspoon cumin seed
12 large rice paper, rounds
oil (for frying)
black sesame seed (optional)

Steps:

  • Wash fish, pat dry on absorbent paper and cut into 12 pieces.
  • Place chillies, sesame oil, coriander, basil and cumin seeds in a spice grinder or mortar and pestle, and grind until they form a rough paste.
  • Spread paste over fish.
  • Brush rice papers with warm water and set aside for 4 minutes or until they are soft.
  • Place a piece of fish on each round, fold in sides and roll to enclose.
  • Heat a little oil in a frypan over medium heat.
  • Cook fish parcels for 2-3 minutes on each side, or until rice paper is golden and crispy, and fish is tender.
  • Drain on absorbent paper.
  • Sprinkle fish with sesame seeds, and serve with steamed asian greens drizzled with oyster sauce and steamed jasmine rice.

1/2 lb. firm-fleshed white fish (such as tilapia or Alaskan pollock), thinly sliced
4 scallions, julienned
2 T. ginger, julienned
2 dozen cilantro leaves, trimmed
For sauce:
2 T. soy sauce
1 T. ginger-infused rice wine
pinch sugar
pinch salt
1 t. cornstarch

Steps:

  • Prepare all ingredients for assembly, starting with ginger. Put julienned ginger in a bowl with rice wine. Preheat oven to 350° F. Cut 6-inch squares of parchment (12). Divide fish slices equally among the squares, slightly towards a lower quadrant of the parchment square. Divide scallion strips evenly, lay on top of fish. Remove ginger from rice wine, divide and place on top of fish. Add sauce ingredients to rice wine, stir. Drizzle sauce over fish, taking care not to over-sauce. Place two cilantro leaves on top of each square. To close squares, fold near corner (the one closest to the fish) to cover fish, but not completely to the opposite corner. Now fold over the two side corners. The packet should look like an opened envelope. Take the top corner, fold down. There should be a flap that extends over the package. Tuck this flap into the fold made by the three other corners. You should have an enclosed rectangular package. Repeat for all twelve packages. Place in an ovenproof rectangular pyrex pan or on a cookie sheet. Put in heated oven and bake for about 5 minutes. Let guests unwrap the packages.
