Layer sweet papaya and berries with tangy yogurt and crunchy granola for a delicious treat.

3 containers (5.3 ounces each) plain nonfat Greek yogurt
5 tablespoons honey
1 1/2 teaspoons grated lemon zest, plus 1 tablespoon juice
1 piece fresh ginger (about 2 inches)
1 papaya (1 pound), peeled, halved lengthwise, seeds discarded, cut into 1/2-inch cubes
1 package (6 ounces) fresh blackberries
1 package (6 ounces) fresh raspberries
1/4 cup chopped fresh mint, plus sprigs for garnish
1/2 cup granola

Steps:

  • In a small bowl combine yogurt, 3 tablespoons honey, and zest; set aside.
  • Using the large holes of a box grater, grate the ginger (no need to peel) into a small bowl. Squeeze ginger through a fine-meshed sieve or strainer placed over a medium bowl to get a total of 1 tablespoon ginger juice. Discard pulp.To the bowl with the juice, add remaining 2 tablespoons honey and lemon juice; whisk to combine. Add papaya, blackberries, and raspberries and toss gently to coat.
  • To serve: Spoon half the fruit and juices among six 8-ounce tall glasses. Sprinkle chopped mint over the fruit. Top with half the yogurt mixture and half the granola. Layer with the remaining fruit, yogurt, and granola. Garnish with mint sprigs.

5 ounces blueberries
5 ounces blackberries
5 ounces strawberries, chopped
3 tablespoons honey
1 teaspoon vanilla extract
2 cups plain Greek yogurt
3 tablespoons honey
1 vanilla bean, split and "caviar" scraped out

Steps:

  • For the fruit: Combine the blueberries, blackberries, strawberries, honey and vanilla extract in a bowl and stir. Let sit for at least 10 minutes.
  • For the yogurt: Mix up the yogurt, honey and vanilla in a bowl.
  • Layer some of the syrupy fruit on the bottom of 4 small mason jars, then top with a layer of yogurt. Repeat the layers. Serve immediately or chill until ready to serve.

2 cups old-fashioned oats
1/2 cup pecan halves
1/2 cup sliced almonds
1/4 cup sunflower kernels
1/2 cup packed brown sugar
1/2 teaspoon salt
1/4 cup butter, cubed
1/4 cup honey
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/2 cup dried cherries
1/2 cup dried blueberries
PARFAITS:
2 cups fresh blueberries
2 cups fresh raspberries
2 cups chopped fresh strawberries
4 cups honey Greek yogurt

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first 6 ingredients. In a small saucepan, mix butter, honey and cinnamon. Cook over medium heat until blended, 3-4 minutes. Remove from heat; stir in vanilla. Pour over oat mixture; stir to coat., Spread evenly into a greased 15x10x1-in. baking pan. Bake until crisp and dark golden brown, 35-40 minutes, stirring every 10 minutes. Cool completely on a wire rack. Stir in dried fruit., In a small bowl, combine berries. Layer 1/4 cup of the berries, yogurt and granola into 8 parfait glasses. Repeat layers. Top with remaining berries.

2 cups plain Greek-style yogurt (2 percent)
1/4 cup finely chopped fresh mint, plus sprigs for garnish
1/2 cup Granola (page 73)

Steps:

  • Using the large holes of a box grater, grate ginger (unpeeled) into a fine sieve set over a bowl; press with a flexible spatula to extract about 1 tablespoon juice (discard solids). Add 2 tablespoons honey and the lemon juice; whisk to combine. Add papaya, blackberries, and raspberries, and toss gently to coat.
  • Mix yogurt, remaining 3 tablespoons honey, and the zest. Spoon half the fruit mixture into six glasses, dividing evenly. Sprinkle with chopped mint. Top with half the yogurt mixture and half the granola, again dividing evenly. Layer with the remaining fruit, yogurt, and granola. Garnish with mint sprigs, and serve.

Sweet, juicy papaya does more than just stimulate the taste buds. This tropical fruit, sometimes referred to as paw paw, sweetens the nutritional pot with big doses of essential vitamins.

  • Ripe papayas contain a nearly three-day supply of vitamin C and significant amounts of vitamins A and E, all powerful antioxidants. Papayas may also help improve skin and strengthen nails and hair. Ripe papaya is best known as a potent digestive aid, due to its high fiber content. Unripe, green papaya contains high levels of the digestive enzyme papain, which behaves much like those enzymes produced by the stomach's gastric juices. The fruit also contains a high amount of folate, which aids in cell production and helps prevent anemia.
  • Choose slightly soft papayas with reddish-orange skin. Yellowish fruit will take several days to ripen. Depending on the variety, a papaya's flesh will appear yellow, orange, or a shade of salmon or red when ripe.
  • To speed ripening, place the papaya in a paper bag with a banana, which releases the compound ethylene and hastens the process. Ripe papayas will keep for up to a week in the refrigerator.
  • To serve, cut a papaya like a melon and remove the seeds, then squeeze lemon or lime juice on top. The acidity of the citrus will enhance the papaya's sweetness. The seeds, which have a slightly peppery taste, are edible as well. Sprinkle a few on a salad or use as a garnish. Unripe green papayas are delicious in Thai-and Vietnamese-style salads.
  • The enzyme papain, found in green papaya, reduces the itch and irritation caused by mosquito bites. Simply rub a bite with a piece of the thinly sliced fruit.
