These are the pink or red peanut patties you find at gas stations, only much, much better!

2 ½ cups white sugar
⅔ cup light corn syrup
1 cup evaporated milk
1 tablespoon butter
3 cups raw peanuts
1 tablespoon vanilla extract
1 dash red food coloring

Steps:

  • In a saucepan over medium-low heat, combine the sugar, corn syrup, evaporated milk, and peanuts. Bring to a slow boil, and stir to blend once heated. Let boil until the mixture reaches a temperature of between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. This may take up to 1 hour.
  • Stir in the butter, vanilla and food coloring once the mixture has reached the proper temperature. Spoon out onto waxed paper or parchment paper to form patties. Cool until set.

2 1/2 cups sugar
1 cup milk
2/3 cup white corn syrup
2 1/2 cups raw peanuts

Steps:

  • Mix all of the ingredients in a heavy boiler (I use my 4 quart pressure cooker). Bring to a boil.
  • Turn burner to simmer and cook for 1 hour.
  • Remove from heat and add 1 teaspoon vanilla.
  • Beat until creamy as it cools.
  • Beating is a must for it to turn out right. Spoon out into buttered muffin pan.

When I was a child, in the '50s, this was one of my favorite candies. If I had a dime, I'd stop and buy one on the way to school. They were so big, I could share one with a couple of friends. They were about 3 inches in diameter and 1/3- to 1/2-inch thick. About the time, it became hard to find them at the corner store, my mom...

3 c granulated sugar
2/3 c white karo syrup
1 c half and half
2 tsp butter
2 c raw red peanuts with the skins on
1 pinch salt
2-3 drops of red food coloring

Steps:

  • 1. Combine the first five ingredients in a heavy saucepan or cast-iron skillet. Bring to a boil.
  • 2. Reduce heat to a simmer and bring to a soft-ball stage (A soft ball forms when you drop a little into a bowl of cold water). Or use a candy thermometer if your mama didn't teach you how to do this. The thermometer will tell you what temperature a "soft-ball" is. I don't know! NOTE: The 45-minute cook-time listed is approximate. It might take more or less time for your mixture to reach the soft-ball stage. Don't go by a clock, go by the temperature of the candy.
  • 3. Remove from heat. Add red food coloring and salt.
  • 4. Stir until mixture begins to thicken and loses its "shine." (You can let it cool a few minutes before you start stirring...otherwise you might need someone to help you stir!)
  • 5. Drop by spoonfuls about 1 inch apart on buttered aluminum foil. (Or spread in an 8x8" buttered cake dish and cut into squares after it hardens.)To make them more like the original, you can butter a "muffin top" pan and fill the holes with the candy mixture. This will give you 10-12 thick, round patties that are similar to the originals.
  • 6. If you make it without the red food coloring and/or the red-skinned peanuts, it will taste the same. It just won't look like the original. (To ME they don't taste as good, but I'm sure it's just the power of suggestion! I don't think red peanuts really taste much different than regular ones.)

1 1/2 cups sugar
1 (3 ounce) package vanilla pudding mix (not instant)
3/4 cup evaporated milk
1 teaspoon vanilla extract
2 cups Spanish peanuts

Steps:

  • Combine the sugar, pudding mix, and milk in medium sauce pan over medium high heat stirring frequently. Bring the mixture to a boil; reduce the heat to medium and boil for 5 minutes.
  • Remove from the heat and stir in the vanilla.
  • Beat for 3 minutes until thickens and stir in the peanuts.
  • Drop by tablespoon full onto wax paper and allow candy to harden.
  • Store in an airtight container.
  • For gifts, give in tins.

2/3 cup white Karo
1 teaspoon vanilla
1 tablespoon red food coloring
2 tablespoons butter
1 cup half-and-half
2 1/2 cups sugar
1/2 cup peanut butter

Steps:

  • Combine all ingredients except peanut butter in large heavy pan.
  • Cook until the mixture reaches soft-ball stage.
  • Remove from heat and add peanut butter.
  • Beat with a wooden spoon until thick and the candy loses it's glossy look.
  • Drop by spoonfuls onto buttered foil, buttered foil pans, or buttered muffin tins. Let cool.

This came from my Nanny's collection. I think it is from a neighbor that made AMAZING candy. In TX the weather has to be just right for candy making. I have made this twice so far and out of 2 times got it perfect once.

1 cup milk
2/3 cup corn syrup
2 cups peanuts, raw
1 tablespoon butter
1 tablespoon vanilla
4 drops red food coloring

Steps:

  • Combine sugar, milk & corn syrup on indirect heat- add peanuts-cook until it forms a firm ball in cold water-or hard boil stage. Remove from heat- add butter, vanilla,coloring. Beat until mixture drops from a spoon on buttered sheet.
  • I typed as it was written in her file from her friend. I used direct heat the whole time and had to beat for quite a while to get it thick enough to drop into patties. These taste amazing- but are a lot of effort. My Papa's favorite candy, mine too ! Good old fashioned candy !

2 1/2 c sugar
1 c milk or evaporated milk
2 1/2 c raw peanuts
2/3 c white karo syrup
AFTER COOKED:
1 1/2 c powdered sugar
4 Tbsp butter or oleo
red food coloring

Steps:

  • 1. Cook all ingredients from top list together to soft ball stage, pretty firm. Remove from heat.
  • 2. Add 1 1/2 cups powdered sugar and 4 tablespoons of butter. Also add a few drops of red food coloring.
  • 3. Mix well and drop large spoonfuls out on wax paper to cool. Should be about 3-4 inches wide. Wrap in plastic wrap when cool. Do not leave out in air as they will get dry.

  • 1. Lay out wax paper spray with butter spray so it is ready to use. In Sauce pan all ingredients except peanuts, med heat, bring to boil, using candy thermometer....boil to soft ball stage approx. 1 hr stirring constantly...
  • 2. Then add 3C Nuts...fold in...remove from heat, immediately to wax paper and start dropping by teaspoonful onto wax paper as fast as you can... the candy will thicken fast if need be return to stove and heat just a bit to soften a bit to return to the liquid stage once more.
  • 3. Let candy cool completely before storing... If you want to add food coloring to it you may but we like ours O-Natural.....
