ANGEL PIE
A lemon cream pie with a meringue crust.

Steps:
- Preheat oven to 250 degrees F ( 120 degrees C).
- Beat egg whites until stiff. Add cream of tartar and gradually add 1 cup sugar; beat until glossy. Turn the meringue into a well-greased 10 inch pie plate. Spread over bottom and sides of plate, building up the sides 1/2 inch above the edge of the plate. Place in oven, and bake 1 1/2 hours. Turn off oven, and leave meringue inside to cool slowly.
- Combine egg yolks, 1/2 cup sugar, 2 teaspoons zest, and lemon juice in double boiler. Cook, stirring constantly, over medium low-heat until thick. Pour into a bowl and cool thoroughly.
- Whip cold cream until stiff. Place half of the whipped cream in the cooled meringue shell. Cover with a layer of the lemon filling and top with the remainder of the whipped cream. (This top layer can be piped on with a decorative star tip). Garnish with remaining lemon zest. Refrigerate until serving.

ANGEL PECAN PIE
This chilled crustless pie is made with crushed buttery crackers, chopped pecans and beaten egg whites. After baking, it's crowned with whipped cream.

- Preheat oven to 350°F. Beat egg whites in large bowl with electric mixer on high speed until soft peaks form. Blend in vanilla. Gradually add sugar, beating until stiff peaks form. Mix crumbs, pecans and baking powder. Add to egg white mixture; stir gently until well blended. Spread into greased 9-inch pie plate.
- Bake 30 min. Cool completely.
- Refrigerate 6 hours or overnight. Spread whipped cream over pie to cover completely.

This pie has been in my family for over 100 years. It was my great,great-great Grandmother's reciepe. This pie was made for weddings as a wedding cake, and they continue to still make for weddings in my family. I had my great grandmother make this for my wedding and it went over GREAT!!!!

- First step: Add cream of tatar to egg whites and beat til stiff, slowly add sugar.
- Spread into a pie pan.
- Bake at 300 degrees for 1 hour& 15 minute.
- Pie filling: Beat egg yolks until thick& have lemon color, add lemon juice, rinds& sugar.
- Cook over low heat stirring constately.
- Till thick, let cool.
- Beat 1 cup whipping cream til siff and spread half into pie shell then pour cooled filling on top of whip cream then the rest of whipping cream.
- Makes 1 pie.

PASTEL DE PAPA (POTATOE AND GROUND BEEF PIE)
This is a delicious dish we make in Argentina. It's almost more like a casserole than a pie. Instead of potatoes you can also use mashed cauliflower, carrots or sweet potatoes as well.

Steps:
- Boil the potatoes until soft enough to mash. Drain then let cool down.
- Chop the onions into long thin slices and cook the onion together with the ground beef in a heated pan with (olive or canola) oil.
- Once the beef is fully cooked but not too dry (let there be some juice) you can add the grated carrots, olives, and chopped boiled eggs. Then add spices and mix together well.
- Preheat oven to 375 degrees.
- After the potatoes are cool enough, with a potatoe masher, mash them completely to take out as many chunks as possible. Add the butter, milk and salt if desired to taste.
- In an oven safe dish, place a first half inch layer of mashed potatoes on the bottom of the dish. Then apply all of the beef mixture on top of the first mashed potatoe layer. Then apply the second and final layer of mashed potatoes on top of the beef. Top with small pieces of butter, parsley and grated cheese (if desired). Let the potatoe brown and heat in the oven for twenty minutes. Let cool and serve warm!

- Heat the oven to 350 degrees with a cookie tray in it (preferably on a lower rack) - allow the cookie pan to heat up while the oven heats up.
- Slightly beat three eggs. Gently whisk in brown sugar, salt, cornstarch, and the melted butter. Add the vanilla and the corn syrup and stir to combine.
- Put the pecans into the bottom of your pie plate. Pour the filling over the top of the pecans. Put the pie plate onto the hot cookie tray and let the pie cook for about an hour.

- In a large bowl, combine flour, salt and sugar, if using. Cut in shortening with a pastry blender or fork until it resembles coarse meal. Add cold water, stir to combine. With floured hands, divide dough in half and shape into 2 disks. (Use right away or wrap in plastic and refrigerate or freeze until ready to use.)
- On a well floured surface, roll out one dough disk to fit the bottom and up the sides of your pie plate. Fold dough in half and then into a quarter to make it easier to transfer dough to the pie plate. Unfold and arrange to fit plate. Take a fork and pierce holes in the bottom and sides to prevent bubbling. Fill with desired filling.
- Roll out second disk to cover the top. Cut away excess dough, seal and flute edges. Cut slits on top to allow steam to escape. Bake according to recipe directions.
