PANNEKOEKEN (BAKED APPLE PANCAKE)
A simple recipe for Pannekoeken, a baked apple pancake hailing from the Netherlands, this "casserole" version is infused with cardamom and nutmeg and puffs up dramatically in the oven. A delicious weekend breakfast or brunch. Adapted from The Heavy Table

- Pre-heat oven to 425 F with the 13 x 9 inch baking dish inside.
- In an extra-large skillet over medium, heat the butter and saute the apples, stirring until tender, about 10 minutes. Add the pecans, lightly toasting. When the apples begin to caramelize, stir in the maple syrup and a pinch of salt and and turn off the heat.
- by placing everything in a blender (eggs, milk, flour, vanilla, maple syrup, salt, cardamom, nutmeg, cinnamon) and blend until smooth. (Or feel free to whisk in a bowl)
- When the oven is fully preheated remove the heated baking dish, and add 2 tablespoons butter, brushing the sides and bottom. Add the caramelized apples and spread out evenly on the bottom. Pour the batter over top. Grate with extra nutmeg if you like.
- Place on the middle rack with ample room on top and bake 30 minutes or until beatufully puffed and deeply golden.
- Serve immediately with maple syrup. Feel free to sprinkle with powdered sugar.

PANNEKOEKEN
This makes a tasty dessert for a dinner party. You can use a pizza cutter to slice it into wedges and serve it with some vanilla ice cream.

- Preheat the oven to 400 degrees F.
- Add the cinnamon, nutmeg and apples to a pan. Saute the apples over medium-low heat until slightly soft, 3 to 5 minutes.
- Meanwhile, prepare the batter. Mix the milk, vanilla and eggs in a bowl. Add the flour, granulated sugar and salt and whisk lightly (some lumps are ok but not too many).
- Increase the heat under the apples to medium and add the brown sugar and butter. Cook until a syrup forms, about 3 minutes, then add the batter all at once to the center of the pan. Swirl the apple syrup mix through the batter, using a heatproof spatula, to form ribbons (you do not want to fully combine the apple-sugar syrup into the batter). Cook until small bubbles form around the edge.
- Finish cooking the pannekoeken in the oven, 12 minutes. To serve, invert a 12-inch plate over the pan and flip the pan to turn out the pannekoeken. Sprinkle with powdered sugar, top with whipped cream and enjoy!
GAMMA'S PANNEKOEKEN - BAKED APPLE PANCAKE
I only saw a handful of other Pannekoeken recipes out here, but none quite like Gamma's. Be sure to serve immediately as it will sink. Serve with warm syrup.

- Heat oven to 400°F.
- Beat eggs, flour, milk, sugar and salt in small mixing bowl on medium speed for 1 minute.
- Prepare apples and fold into mixture.
- Place butter in a 9x13glass pan and put in oven just until melted. Remove pan from oven and pour egg mixture in pan.
- Combine sugar and cinnamon and sprinkle over mixture.
- Bake uncovered until puffed and golden, about 25-30 minutes.

This is a puff pancake. I've also heard it called "German pancake" or "Dutch Baby".It is a slightly sweet eggy breakfast. It's quick, showy and unusual. Perfect for company brunch.It's an oral recipe so I'm not even for sure this is the proper spelling but it's a favorite at our house.

- Heat oven to 400. Grease a 9 inch pie plate with cooking spray.
- Mix brown sugar and cinnamon in a bowl. Add apples and toss to coat.
- Heat water and butter to boiling and reduce heat to low. Add bisquick and stir until mixture forms a ball; remove from heat.
- Beat in eggs one at a time and beat until smooth.
- Spread batter into pie plate. Arrange apples on top within 1 inch of edge.
- Bake for 23 minutes or until puffed and edge is golden brown.

- In a large bowl, blend eggs, flour, baking powder, sugar and salt. Gradually mix in milk, stirring constantly. Add vanilla, melted butter and 1/2 teaspoon nutmeg. Let batter stand for 30 minutes or overnight.
- Preheat oven to 425 degrees F (220 degrees C).
- Melt butter in a 10 inch oven proof skillet, brushing butter up on the sides of the pan. In a small bowl, combine 1/4 cup sugar, cinnamon and 1/2 teaspoon nutmeg. Sprinkle mixture over the butter. - Preheat the oven to 450 degrees. Beat together the eggs, milk, flour, and salt until very smooth. Add some very thinly sliced apples if desired. In a heavy 12-inch skillet, melt about 1 1/2 Tablespoons butter. As soon as it is quite hot, pour in the batter and put the skillet in the oven. After 15 minutes, lower the oven temperature to 350 degrees and continue baking for another 10 minutes. The pancake should be light brown and crisp.
- During the first 10 to 15 minutes of baking, the pancake may puff up in large bubbles. If it does, pierce it thoroughly with a fork or skewer.
- While the pancake is baking, prepare the apple filling. Peel and thinly slice a pound of apples. Saute them lightly in 1/4 cup butter and add 1/4 cup sugar. Season to taste with cinnamon and nutmeg. The apples should be just tender, not too soft. About 8 to 10 minutes of cooking over a medium flame should be plenty. (The filling can be prepared ahead and re-heated just before serving.).
- When the pancake is ready, slide it onto an oval platter, pour the apple filling over one side, and fold the other side over. A little melted butter can be poured on it you choose, and the whole thing carefully sprinkled with powdered sugar through a sieve. Serve it at once, slicing pieces off crosswise.
