PANNEKOEKEN (BAKED APPLE PANCAKE)
A simple recipe for Pannekoeken, a baked apple pancake hailing from the Netherlands, this "casserole" version is infused with cardamom and nutmeg and puffs up dramatically in the oven. A delicious weekend breakfast or brunch. Adapted from The Heavy Table

Steps:
- Pre-heat oven to 425 F with the 13 x 9 inch baking dish inside.
- In an extra-large skillet over medium, heat the butter and saute the apples, stirring until tender, about 10 minutes. Add the pecans, lightly toasting. When the apples begin to caramelize, stir in the maple syrup and a pinch of salt and and turn off the heat.
- by placing everything in a blender (eggs, milk, flour, vanilla, maple syrup, salt, cardamom, nutmeg, cinnamon) and blend until smooth. (Or feel free to whisk in a bowl)
- When the oven is fully preheated remove the heated baking dish, and add 2 tablespoons butter, brushing the sides and bottom. Add the caramelized apples and spread out evenly on the bottom. Pour the batter over top. Grate with extra nutmeg if you like.
- Place on the middle rack with ample room on top and bake 30 minutes or until beatufully puffed and deeply golden.
- Serve immediately with maple syrup. Feel free to sprinkle with powdered sugar.

PANNENKOEKEN (DUTCH PANCAKES)
Thin, custardy crepes are easy to throw together and delicious topped with maple syrup, jam, nutella, nut butters, whipped cream or fresh fruit.

- Combine all ingredients. My dad follows this order: flour, salt, vegetable oil, eggs and milk. Whisk together until there are no lumps.
- Preheat an ungreased, nonstick frying pan over medium heat. When pan is hot, pour in enough batter to lightly cover the bottom of the pan, quickly swirling the pan to coat evenly (in our 10-inch frying pan, my dad uses about 4 oz or 1/2 cup batter per crepe). Cook for 30 to 45 seconds, or until the edge of the crepes start to turn from beige to brown and bubbles start to puff up the crepe (you can lift the edge of the pancake to check the browning of the underside.) Flip and cook for another 30 to 45 seconds, then plate and serve.
GAMMA'S PANNEKOEKEN - BAKED APPLE PANCAKE
I only saw a handful of other Pannekoeken recipes out here, but none quite like Gamma's. Be sure to serve immediately as it will sink. Serve with warm syrup.

- Beat eggs, flour, milk, sugar and salt in small mixing bowl on medium speed for 1 minute.
- Prepare apples and fold into mixture.
- Place butter in a 9x13glass pan and put in oven just until melted. Remove pan from oven and pour egg mixture in pan.
- Combine sugar and cinnamon and sprinkle over mixture.
- Bake uncovered until puffed and golden, about 25-30 minutes.

This makes a tasty dessert for a dinner party. You can use a pizza cutter to slice it into wedges and serve it with some vanilla ice cream.

- Preheat the oven to 400 degrees F.
- Add the cinnamon, nutmeg and apples to a pan. Saute the apples over medium-low heat until slightly soft, 3 to 5 minutes.
- Meanwhile, prepare the batter. Mix the milk, vanilla and eggs in a bowl. Add the flour, granulated sugar and salt and whisk lightly (some lumps are ok but not too many).
- Increase the heat under the apples to medium and add the brown sugar and butter. Cook until a syrup forms, about 3 minutes, then add the batter all at once to the center of the pan. Swirl the apple syrup mix through the batter, using a heatproof spatula, to form ribbons (you do not want to fully combine the apple-sugar syrup into the batter). Cook until small bubbles form around the edge.
- Finish cooking the pannekoeken in the oven, 12 minutes. To serve, invert a 12-inch plate over the pan and flip the pan to turn out the pannekoeken. Sprinkle with powdered sugar, top with whipped cream and enjoy!
PANNEKOEK (TRADITIONAL SOUTH AFRICAN - FLAT PANCAKES)
Pannekoek recipe for traditional South African pannekoek. South African pannekoek is a flat version of pancakes.

- Beat the eggs and water together until well blended.
- Add the oil, vinegar and salt and mix.
- Sift the flour into the mixture and beat. It is important that everything be well mixed at this point.
- Lastly, add the baking powder and stir it in thoroughly.
- The consistency of the batter should be runny, but not watery. The batter works better if it is left standing for a few hours, although it can be used right away too.
- Baking probably works best in a non stick pan.
- Add a little oil to the pan and warm it up to somewhere between 50 and 75% heat (probably around dial 5 or 6).
- Scoop about 1 soup laver full of batter into the pan, and swivel the pan around to coat the bottom with the batter.
- Bake until the sides begin to lift and the centre is cooked.
- Flip the pannekoek with a spatula to bake on the other side (if the batter consistency is not right, the pannekoek will burn or crumble at this point. Burning indicates more oil is needed in the batter, and crumbling indicates too much water, or too little eggs).
- Once cooked, place the pancake flat onto a dish. Add filling and serve. Traditionally, a mixture of sugar and cinnamon is sprinkled over the pannekoek and the pannekoek is rolled up, like a tube.

This is a puff pancake. I've also heard it called "German pancake" or "Dutch Baby".It is a slightly sweet eggy breakfast. It's quick, showy and unusual. Perfect for company brunch.It's an oral recipe so I'm not even for sure this is the proper spelling but it's a favorite at our house.
