HONEY MUSTARD PORK CUTLETS



Honey Mustard Pork Cutlets image

This is very good! I serve it with her smashed broccoli potatoes which I have also posted. I have used lemon Instead of the vinegar, used the juice from half the zested lemon. This is adapted from Rachel Ray, Food Network, hope you enjoy!

4 thin-cut boneless pork loin chops
salt & freshly ground black pepper
1/2 cup stone ground dijon mustard
1/4 cup honey
2 tablespoons cider or 2 tablespoons wine vinegar
1 cup panko breadcrumbs
2 tablespoons freshly chopped thyme leaves
1 lemon, zested
2 tablespoons extra virgin olive oil
2 tablespoons butter
2 tablespoons all-purpose flour
2 tablespoons orange marmalade or 2 tablespoons apricot preserves
1 cup chicken stock
2 teaspoons Worcestershire sauce

Steps:

  • Line a baking sheet with a wire rack. Spray rack with Pam.
  • Heat the oven to 275 degrees F.
  • Trim the fat from the chops and sandwich each chop between 2 pieces of waxed paper or plastic. Pound the chops to 1/8-inch thickness and season with salt and pepper, to taste.
  • In a shallow dish combine the mustard, honey and vinegar.
  • Add the chops and turn to coat in sticky sauce.
  • On a plate combine the bread crumbs with the thyme and zest of the lemon. Press chops in the crumbs to coat evenly.
  • Heat the extra-virgin olive oil, a couple turns of the pan, in large skillet over medium heat. Cook the cutlets until crisp, 3 to 4 minutes on each side.
  • Arrange the chops on the baking sheet with the rack and put in the oven to keep them crisp.
  • To the skillet, over low heat, add the butter and melt. Whisk in the flour and cook for 1 minute. Stir in the preserves, then whisk in the stock.
  • Cook for a couple of minutes to thicken and season with salt and pepper, to taste.
  • Transfer the chops from the oven to a serving platter and douse with sweet-savory gravy before serving.

I have become a BIG fan of using dijon mustard to coat meat... It seems to not only enhance the meat's flavor, but also helps to seal in the juices. This recipe is the perfect testament to that theory - It's a must-try!

3/4 c panko bread crumbs
1 Tbsp fresh sage chopped fine, or 1 teaspoon dried sage
1 tsp grated fresh lemon rind
1/2 tsp black pepper
1 egg
2 Tbsp water
1 Tbsp mayonnaise
1 Tbsp dijon mustard
2 (10) oz pork cutlets, tenderized, if preferred
3 Tbsp olive oil, more if necessary
lemon wedge (optional)

Steps:

  • 1. Combine first 4 ingredients on plate. Whisk egg and 2 T water in medium bowl to blend. Whisk mayonnaise and Dijon mustard in small bowl.
  • 2. Dredge pork cutlets with mayo-mustard mixture; dip into beaten egg, then coat with panko crumb mixture. Transfer to plate. Heat oil in heavy medium skillet over med-high heat.
  • 3. Add pork; cook until no longer pink on inside and crumbs are golden brown, about 5 minutes per side. Garnish with fresh sage, if desired, and serve with lemon wedges.

2 (1 1/4 pound) fully trimmed pork tenderloins, cut into 8 pieces
salt and freshly ground black pepper to taste
2 tablespoons all-purpose flour, or as needed
2 eggs, beaten
3 cups panko bread crumbs
2 tablespoons butter
⅓ cup diced dill pickles
1 jalapeno pepper, seeded and minced
1 bunch green onions, chopped, green tops reserved
1 pinch cayenne pepper, or to taste
1 ½ tablespoons all-purpose flour
1 ½ cups cold milk, or more as needed
1 teaspoon Worcestershire sauce, or to taste
¼ teaspoon freshly ground black pepper, or more to taste
½ cup vegetable oil for frying
salt to taste

Steps:

  • Place pork between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound pork with the smooth side of a meat mallet to a thickness of 1/2 inch.
  • Place pork pieces on a plate and season both sides generously with salt and black pepper. Sprinkle 2 tablespoons of flour over pork pieces, lightly coating both sides. Pour eggs over pork, turning to coat.
  • Transfer pork pieces to a bowl filled with panko bread crumbs. Press bread crumbs firmly into the meat on both sides. Transfer breaded cutlets to a clean plate, cover with plastic and refrigerate for 15 minutes.
  • Melt butter in a skillet over medium heat. Stir in pickles, jalapeno pepper, and green onions; cook and stir until onions have softened, about 3 minutes.
  • Sprinkle in 1 1/2 tablespoon flour. Cook and stir for 3 minutes.
  • Slowly stir in 2 to 3 tablespoons cold milk, whisking constantly. Stir in remaining milk, Worcestershire sauce, and black pepper. Simmer on low for 5 minutes. Taste and adjust seasoning.
  • Heat half the vegetable oil in a large skillet over medium-high heat. Add 4 breaded pork cutlets and cook until pork is not longer pink inside, and the crust is well-browned, 4 to 5 minutes per side. Transfer to plate lined with paper towels. Sprinkle with salt. Repeat with remaining vegetable oil and pork cutlets.

¼ cup mayonnaise
¼ cup Dijon mustard
¼ cup honey
1 teaspoon paprika
1 teaspoon lemon juice
1 cup panko bread crumbs
½ cup Parmesan cheese
1 cup all-purpose flour
1 tablespoon olive oil
4 (1 1/2 inches thick) pork chops
1 pinch rubbed sage, or to taste
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Mix mayonnaise, mustard, honey, paprika, and lemon juice for sauce together in a bowl.
  • Mix panko bread crumbs and Parmesan cheese together on a plate. Place flour on a plate. Drizzle oil on pork chops; coat moistened chops in flour, followed by the honey mustard sauce, then followed by the panko mix. Sprinkled tops of breaded chops with rubbed sage, salt, and pepper. Transfer to a broiler pan.
  • Bake the pork chops in the preheated oven until no longer pink in the center, 30 to 40 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

2 tablespoons vegetable oil, such as safflower
4 boneless pork loin chops (6 to 8 ounces each)

Steps:

  • Preheat oven to 425 degrees. On a rimmed baking sheet, toss panko with oil. Bake, tossing once, until golden brown, 7 to 10 minutes. Transfer to a medium bowl. Reduce oven temperature to 400 degrees.
  • Meanwhile, one at a time, place chops between 2 large pieces of plastic wrap. Using a meat mallet or the bottom of a small heavy pan, pound to make 1/4-inch-thick cutlets.
