MINCED CHICKEN SALAD IN LETTUCE CUPS
A not too far from traditional Chinese dish served in many restaurants near here. These make a great lunch or starter for a dinner party. Serving amount is an estimate for lunch portions. From the Kikkoman website. Cook time does not include chilling time. I usually serve these "warmish."

Steps:
- Heat a medium saute pan over high heat, add the peanut oil and the minced chicken. Reduce heat to medium and cook, stirring occasionally, until cooked through. Add the ginger and cook another 30 seconds. Remove from heat and drain, then chill.
- Combine hoisin sauce, soy sauce, sesame oil, vinegar and sugar to make dressing. Set aside.
- Cut the core from the iceberg lettuce and soak in ice water for 10 minutes to help separate the leaves. Carefully remove the leaves from the heads of lettuce one at a time, then take each leaf and trim into a perfect circle using kitchen scissors. You should get about 12 nice lettuce cups out of each head, depending on the size and condition of the lettuce. You can save the leftovers to add to salad.
- Combine the chicken, scallions and jicama with the dressing, and place about 3 T of the mixture into each lettuce cup. Garnish with pomegranate seeds. I left the seeds off as they were impossible to find when I made these.

- Heat the oil in a large pan and cook the shallots and garlic for 2 minutes. Add the chilie, pork and five spice and cook for a further 5 minutes. stir in the water chestnuts, fish sauce, soy sauce and honey and warm through gently, stirring until the pork is cooked through. Allow to cool then chill for at least 20 minutes.
- Separate the lettuce leaves and place 12 on a large serving platter. Stir the bean sprouts into the minced pork then spoon into the lettuce leaves. Garnish with coriander leaves and serve.

VIETNAMESE GRILLED PORK WRAPPED IN LETTUCE
This interesting Vietnamese grilled dish combines pork with the sweet spice of anise and cinnamon. The longer the pork is marinated, the more flavorful the dish. To serve according to Vietnamese tradition, wrap in lettuce leaves, with noodles and fresh mint and cilantro leaves inside. I found this recipe at the EthnicGrocer sight. How good and easy does it sound! I think I'll make it with chicken!

- Cut pork into 8 to 10 strips.
- Combine marinade ingredients.
- Add meat and marinate meat for 1 hour.
- Grill or broil pork until done, about 10-15.
- Arrange lettuce leaves, mint, cilantro, and noodles on a serving platter.
- To serve, wrap hot meat, mint, cilantro, and noodles in lettuce leaves.

Steps:
- Cover mushrooms with hot water for 30 minute Drain, remove steps, slice mushrooms.
- Finely chop spring onion.
- Heat oil in wok, add pork and stir fry until almost cooked.
- Add mushrooms, onions, water chestnuts, crabmeat to wok.
- Add sesame oil, sauces and cooking wine to mixture and stir fry for 1-2 minutes. Remove from heat and place in large plate. Add some chopped spring onion or parsley on top for garnish.
- Guests may choose to wrap their own. Simply scoop the pork and mushroom mixture onto the lettuce leaves, fold in ends and sides of lettuce leaves for a neat appetiser!
