Steps:

  • Preheat oven to 425°F. Snap off and discard woody bases from asparagus. If desired, scrape off scales. In a small bowl combine the next three ingredients (through lemon juice). Transfer half of the mixture to a small bowl; cover and chill until ready to serve.
  • Place bread crumbs in a shallow dish. Spread asparagus with remaining mayonnaise mixture, then roll in bread crumbs to coat. Place in a 15x10-inch baking pan. Drizzle with oil.
  • Roast 12 minutes or until asparagus is crisp-tender and crumbs are golden. Serve with reserved mayonnaise mixture.

¾ pound Yukon Gold potatoes, cut into 1/2-inch chunks
¼ cup all-purpose flour

⅔ cup panko
½ cup grated Parmesan cheese plus 2 tablespoons, divided
1 pound boneless, skinless chicken breast, cut into 4 portions

Steps:

  • Preheat oven to 400 degrees F. Coat a large rimmed baking sheet with cooking spray.
  • Combine cumin, thyme, garlic powder, smoked paprika, salt and pepper in a small bowl.
  • Stir oil and half the spice mixture in a large bowl. Add asparagus and potatoes; toss to coat well. Spread the vegetables on one side of the prepared pan.
  • Place flour in a shallow dish. Place egg whites in a second shallow dish. Combine panko, 1/2 cup Parmesan and the remaining spice mixture in a third shallow dish. Dredge chicken in the flour, shaking off the excess. Dredge in the egg whites, shaking off the excess, then heavily coat the chicken in the panko mixture. Coat both sides with cooking spray and place on the empty side of the sheet pan.
  • Bake, stirring the vegetables and flipping the chicken once, until the vegetables are tender and an instant-read thermometer inserted in the thickest part of the chicken registers 165 degrees F, about 25 minutes. Toss the vegetables with the remaining 2 tablespoons Parmesan and serve.

  • Preheat oven to 425 degrees. Spray a sheet pan with cooking spray or line with parchment paper. Set aside
  • In a shallow dish, whisk together egg and milk. In another shallow dish add panko, parmesan cheese, italian seasoning, and garlic powder.
  • Salt and pepper the chicken and dredge them in the egg mixture and then coat them in the panko mixture. Lay them on your sheet pan.
  • In two medium sized bowls add the asparagus and potatoes. Salt and pepper and toss with the olive oil. Lay the potatoes next to the chicken on the sheet pan.
  • Bake for 15 minutes, then flip the chicken over and add the asparagus and continue baking for 12-15 minutes or until the chicken reaches an internal temperature of 165 degrees.

2 tbsp Italian flavored panko
1 clove of garlic (minced)

Steps:

  • Preheat the oven to 400 degrees. Coat a small baking dish with cooking spray.
  • Remove the wooden ends of the asparagus then place them into the baking dish. Drizzle a touch of olive oil on the asparagus spears then season with sea salt and freshly cracked pepper, to taste; toss to coat evenly.
  • Place into the oven and roast for 10 minutes. While the asparagus is roasting, toss the panko crumbs with the minced garlic and a dash of olive oil; mix until well combined.

  • For the gremolata, heat a large skillet over medium heat. Add the olive oil and breadcrumbs and toast, stirring often with a wooden spoon until golden brown. Place in a small bowl and while still hot, add the lemon zest, chili flakes and salt. Mix together and allow the mixture to cool to room temperature. Stir in the parsley and cheese.
  • Wipe out the pan with a dish towel. To that pan, add 2 tablespoons olive oil and heat over medium high heat. Add the asparagus and 1/4 teaspoon salt. Cook for about 4 to 5 minutes, stirring and flipping often with tongs until they are bright green, cooked through and slightly browned. Divide among your serving plates.
  • Crack 2 eggs into the pan, being careful as it may splatter, season it with salt and reduce the heat slightly and cook for about 2 to 3 minutes or until the edges are light brown and crispy and the whites are just set. The yolk should still be runny. Using a slotted spatula slide the 1 egg on top of 2 of the plates. Repeat with the remaining eggs. Sprinkle each dish with the breadcrumb gremolata and a drizzle of olive oil if desired.

  • Preheat oven to 450°F Line a baking sheet with foil; coat with cooking spray.
  • Combine mayonnaise, scallions, miso, chile-garlic sauce and oil in a small bowl.
  • Place asparagus in a shallow dish and toss with half the miso mixture (about 1/4 cup), making sure the asparagus is well coated.
  • Combine panko and sesame seeds in another shallow dish. Working with one spear at a time, roll in the panko mixture and place on the prepared baking sheet, leaving a bit of room between each spear. Coat the prepared spears with cooking spray.

  • TIPS & NOTES.
  • Miso is fermented soybean paste made by inoculating a mixture of soybeans, salt and grains (usually barley or rice) with koji, a beneficial mold. Miso is undeniably salty, so a little goes a long way. White or sweet miso (Shiromiso), made with soy and rice, is yellow and milder in flavor; use for soup, salad dressings and sauces for fish or chicken. Look for it near tofu at well-stocked supermarkets.

Steps:

1 lb. Asparague, About 1 bunch

1/4 cup Shaved Parmesan

  • Arrange oven racks in centre and bottom of oven. Place a rack on a large rimmed baking sheet, Spray with oil. Place Panko in a shallow dish. Finely grate peel from lime into panko. Stir to mix. Unroll thighs and sprinkle with pinches of salt and pepper. Working with one thigh at a time, spread a little Dijon on both sides. Then coat all over with panko mixture, pressing so that crumbs adhere. Place on rack. Repeat with remaining chicken. For a crunchier coating, lightly spray chicken with cooking spray.
