2 tablespoons Emeril's Original Essence, recipe follows
1 tablespoon crushed Szechwan peppercorns
1/2 cup hoisin
1/4 cup tamari
1/4 cup mirin or dry sherry
1/4 cup green onions
2 tablespoons minced fresh ginger
1 tablespoon sesame oil
1 tablespoon minced garlic
1 tablespoon minced Hawaiian peppers or chile paste
2 (1-pound) rib-eye steaks
1 tablespoon light brown sugar
2 Maui onions, peeled and cut into thick slices about 1/4 to 1/2-inch, slices kept together not separated

2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly and store in an airtight jar or container.

Steps:

  • In a bowl, whisk together all of the ingredients, except the onions, Essence, and peppercorns.
  • Place the steaks in a large sealable bag with the marinade. Seal and refrigerate for at least 12 hours, and up to 36 hours.
  • Preheat a grill.
  • Remove the steaks from the marinade and pat dry. Season both sides with 1 tablespoon of the Essence and the peppercorns. Pour the marinade into a small saucepan and bring to a simmer. Simmer until thickened and reduced by 1/3 in volume, about 5 minutes, stirring occasionally. Remove from the heat.
  • Sprinkle the thick onion slices with the remaining 1 tablespoon of Essence.
  • Grill the steaks until medium-rare, about 6 minutes per side. At the same time, grill the onions (as though grilling a patty, so the rings stay together) until golden and char-marked by the grill, turning once.
  • Remove the steaks from the grill and top with the grilled onions. Serve with the reduced marinade as sauce.

1/2 cup aji molida (red pepper puree)
2 teaspoon coarse salt
1 small bunch Italian parsley, picked
3 tablespoons white vinegar
3 tablespoons water
1 cup olive oil

Steps:

  • In a mortar and pestle or food processor, add garlic, aji, and salt. If adding the parsley, add it now. Ground until very fine. Transfer to a serving container. Add vinegar, water and oil. Store in an air-tight container in the refrigerator.

Simple Sirloin Steak With Chimichurri image

For the steak:
2 10-to-12-ounce sirloin steaks
Kosher salt and freshly ground pepper
2 tablespoons vegetable oil
For the sauce:
1/2 cup fresh cilantro leaves, roughly chopped
1/2 cup fresh parsley leaves, roughly chopped
1 tablespoon finely chopped onion
Juice of 1/2 lemon
2 teaspoons white wine vinegar
1 clove garlic, minced or pressed through a garlic press
Pinch of red pepper flakes
1/3 cup olive oil

Steps:

  • Prepare the steak: Set the steaks on a cutting board and slice them in half crosswise. Using your knife, round out the clean-cut edges so the sides look softer. Use paper towels to pat the steaks dry, then season all over with 1 teaspoon salt and 1/2 teaspoon pepper. Set aside 15 to 30 minutes to bring to room temperature.
  • Meanwhile, make the chimichurri sauce: Place the cilantro, parsley, onion, lemon juice, vinegar, garlic, red pepper flakes, 1 teaspoon salt and 1/4 teaspoon pepper in the bowl of a food processor and pulse until roughly chopped. Slowly pour in the olive oil and process until the chimichurri is semi-smooth, about 4 seconds. Transfer to a small bowl and set aside.
  • Heat a grill or grill pan over medium-high heat. Brush both sides of each steak with the vegetable oil, then cook, undisturbed, until marked, 3 to 5 minutes. Flip and cook until a thermometer registers 125 degrees F for medium rare, 3 to 5 more minutes. Transfer to plates and let rest 5 minutes. Serve with the chimichurri sauce.

GRILLED SKIRT STEAK WITH CHIMICHURRI



Grilled Skirt Steak with Chimichurri image

2 lbs. beef skirt steak
6-8 peeled garlic cloves
1 bunch parsley, washed and stemmed
1/4 cup fresh oregano leaves
pinch crushed red pepper flakes
2/3 cup olive oil
1/3 cup red wine vinegar
2 Tbs. fresh squeezed lime juice
salt and pepper to taste

Steps:

  • Season beef with salt and pepper and place it into a ziptop bag.
  • In the bowl of a food processor combine herbs, garlic, red pepper and process until chopped fine but not pureed. Scrape mixture out into a large measuring cup. Add olive oil, vinegar and lime juice and stir until combined. Pour about 1 cup into a small serving bowl and reserve for later. Pour the rest over the beef in the zip top bag. Seal and marinate in the fridge for at least 2 hours.
  • Preheat grill to medium-high heat. Remove meat from ziptop bag and place onto hot grill. Discard marinade. Grill 5-6 minutes per side until desired doneness. Remove from grill, loosely tent with foil and let rest for 5-10 minutes. Slice meat across grain into long strips and serve with reserved chimichurri sauce and crusty bread.

1/2 can chipotle pepper in adobe sauce
10 serrano chiles, stemmed, rough chop
3/4 cup hot pepper oil (chili oil)
3/4 cup olive oil plus 3 to 4 tablespoons
1 red onion, small dice
2 tablespoons finely minced fresh garlic
1 tablespoon dry basil
1 tablespoon dry oregano
2 teaspoons kosher salt, plus more for sprinkling
1 teaspoon black pepper, plus more for sprinkling
2 teaspoons cayenne pepper
2 teaspoons red pepper flakes
1 green bell pepper, small dice
1 red bell pepper, small dice
1 yellow bell pepper, small dice
8 cups favorite tomato sauce
6 cups heavy cream
2 cups grated Romano
1/4 cup sugar
1 to 1 1/2 pounds dried rigatoni noodles
2 pounds chicken breast, cut into strips
Shredded locatelli cheese, or favorite grated cheese, for serving
4 scallions, fine dice (retain for final garnish)

Steps:

  • For the hot sauce: In a blender, carefully blenderize the chipotle peppers, serrano chiles and pepper oil. This stuff is hot! Be careful with splatter! Reserve.
  • For the chicken: In a large braiser or saucepot, warm 3/4 cup of the olive oil over medium heat for 2 to 3 minutes. Add the onions, garlic, basil, oregano, salt, black pepper, cayenne and red pepper flakes. Stir well and cook until the onions are translucent.
  • Stir the fresh chopped bell peppers into the onion mixture. Stir to coat. Add the reserved hot sauce. Continue cooking for 2 to 3 minutes, stirring occasionally. Add the tomato sauce, heavy cream, Romano and sugar. Whisk well!
  • Lower the heat until the sauce slightly bubbles, and stir well. Turn the heat to low or off while sauteing the chicken strips and cooking the rigatoni noodles.
  • When the sauce is nearing doneness, cook the rigatoni noodles according to package directions. I like to pre-cook my pasta for sauteed pasta dishes such as this. Pre-cooking rigatoni to near doneness, straining and holding at room temperature, or completely chilling down if holding for several hours or more and then dunking in hot, boiling water prior to sauteing works well.
  • For the chicken saute, heat a large saute pan with the remaining olive oil. First, sprinkle the chicken strips with 1 teaspoon salt (more or less), and add to the hot olive oil, one layer at a time. Do not overcrowd the pan. Cook in batches if necessary. Add a dash of black pepper if desired. Flip and shake the chicken pieces around in the hot pan to sear all sides. Cook until opaque and lightly brown, about 4 minutes. Set aside.
  • Toss the tomato sauce and chicken in a large bowl in half-batches, or altogether. Pour onto a serving platter or individual pasta bowls. Garnish with locatelli cheese and reserved fresh scallions.
