PANDAN COCONUT RICE BALLS
This is a fun dessert to make and eat. Pandan-flavored dough balls are stuffed with a coconut filling to make a hearty and exciting dessert.

- Cook 1 3/4 cups grated coconut and sugar for filling over medium heat in a saucepan until thickened, 5 to 7 minutes. Remove from heat and cool slightly, about 5 minutes. Roll into 1/2-inch balls to be used as filling.
- Mix 1 2/3 cups grated coconut and salt for coating together in a bowl. Place coconut mixture in the top of a double boiler over simmering water and steam for 3 minutes. Remove from heat and transfer coconut coating into a bowl.
- Combine pandan leaves and water in a blender; blend until smooth. Squeeze juice through a cheesecloth; you should be left with 1/4 cup pandan juice. Set aside.
- Knead rice flour, coconut cream, and 1/4 cup pandan juice in a bowl until a smooth dough is formed, about 5 minutes. Roll dough into 1/2-inch balls.
- Flatten the balls into discs; wrap them around the coconut balls. Make sure coconut balls are completely sealed.
- Drop the balls into gently boiling water and cook until they float on top. Remove with a slotted spoon. Toss balls into bowl of coconut coating. Roll each ball in the coating and place on a dish to serve.

- In a plate, add in coconut flakes, salt and water. Mix everything together. Microwave at max power for 2 minutes with 30 seconds intervals. Stir in each interval. Set aside.
- In a bowl, add in both flours. Slowly pour bit by bit the pandan water and mix everything together until becomes a dough.
- Take a thumb sized dough and make a cup shape, more or less. Then spoon in some coconut sugar. Pinch the seams to seal and gently roll it into a ball. Place it on an oiled cling film. Do the same to the rest of the dough.
- Bring a pot of water to a boil. Carefully put some of the balls inside and cook until they start to float. Once they're floating, cook for another 1 minute. Take them out drain of water and place them in the coconut mixture that we've prepared earlier. Coat them with the coconut and place them in a serving plate.

- To make the pumpkin rice balls. Mash the steamed pumpkin to a puree and add glutinous riceflour. Knead until combined into a sandy textured dough. Add water, 1 tsp by 1 tsp at a time, until the dough comes together with a sheen. This is typically 5-6 tsp. Roll into small marble sized balls.

- Cooking the pumpkin and pandan balls. Bring a pot of water to the boil and tip in all of the pumpkin and pandan balls. Boil for 30 seconds to a minute, or until all the balls are floating. Strain with a spider or mesh strainer and divide up amongst some bowls.
