PANCH-PHORAN POTATOES

Dinner at a friend's house introduced me to panch phoran - a whole spice blend from eastern India. The name means five spices, and it's a mixture of fenugreek, nigella seed, cumin seed, black mustard seed and fennel seed. You can substitute the potatoes for green vegetables such as beans, broccoli or zucchini and this dish is an excellent accompaniment for roast meats such as lamb shoulder, beef ribs or a traditional Sunday roast.

800g desiree potatoes, peeled
100ml vegetable oil
3 tbsp panch-phoran mix
1 brown onion, roughly diced
1 tbsp ginger, finely diced
2 cloves garlic, chopped
1 green chilli, deseeded and chopped
8 fresh curry leaves
1 tsp ground turmeric
1 tsp sea salt
2 tomatoes, diced
100g frozen peas
1/2 cup picked fresh coriander, washed

Steps:

  • Cut potatoes into 2-centimetre pieces. Heat the oil in a medium-sized pot over a medium heat. Toast the panch phoran in the oil for about a minute or until the spices release their aroma.* Add the onion and cook until golden, then add the potatoes, ginger, garlic, chilli, curry leaves, turmeric, salt and tomatoes. Stir well to coat everything in the spices. Add water so the potatoes are not quite covered. Add the peas, bring to a simmer then cover with a lid and cook for about 20 minutes or until tender. Add more water if it gets too dry then check seasoning and put into a serving bowl. Sprinkle with coriander before serving. * When toasting spices it is important to keep an eye on the heat of the pan. If the spices burn, throw them out and start again.

Panch phoron or panch phoran or panch masala is a blend of 5 aromatic spices used in Bengali cooking as well as in Eastern Indian cuisine. This spice blend looks colorful, attractive and is made of four bold, aromatic spices and one legume.

2 tablespoons cumin seeds
2 tablespoons nigella seeds ((kalonji))
2 tablespoons wild celery seeds ((radhuni) or mustard seeds (rai))
2 tablespoons fennel seeds ((saunf, mouri))
1 tablespoon fenugreek seeds ((methi dana))

Steps:

  • Mix all the spices in a bowl or directly in a small glass jar.
  • Tightly seal the jar. Store the panch phoron in a cool, dry place.
  • Shake the jar before each use to make sure the spices are evenly distributed.
  • Use the spices as required in the recipe. Usually panch phoron is tempered or fried in oil to release their flavors and then the other ingredients are added.

Panch phoran (spellings vary) is a Bengali mixture of five whole-seed spices that's used as a flavor base in many Indian recipes, such as kitchri. It's usually cooked in a little oil until fragrant and the mustard seeds start to pop. You can find it in Indian markets, but it's also easy to make yourself. The recipe below can be multiplied to make any amount.

4 large Russet potatoes (about 3 lbs), cut into 1 inch chunks (if leaving the peels on, scrub thoroughly first)
3-4 tablespoons extra-virgin olive oil
2 tablespoons fresh garlic, minced
1½ teaspoons salt
2-3 tablespoons panch phoron (see below)
Panch Phoron (Indian Five Spice Blend)
1 tablespoon cumin seeds
1 tablespoon brown mustard seeds
1 tablespoon fennel seeds
1 tablespoon nigella seeds (also called black cumin or kalonji)
1½ teaspoons fenugreek seeds
Combine the seeds and store in an airtight jar.

Steps:

  • Preheat the oven to 400 F.
  • Heat a small skillet over medium-high heat and dry roast the panch phoron, tossing regularly to prevent burning, until very fragrant, about 3-4 minutes. Set aside.
  • Place the wedges in a bowl, add the olive oil, garlic, salt and panch phoron and toss to evenly coat the potato pieces.
  • Spread the potato pieces onto a large baking sheet. Bake for about 45 minutes or until lightly browned and crispy, turning them over with a spatula after 20 minutes and every 10 minutes thereafter. Serve immediately.

2-1/2 tablespoons vegetable oil
2 tablespoons Bengali Five Spice
2 dried Turkish bay leaves
2-1/2 tablespoons grated fresh ginger
2-1/2 tablespoons minced fresh garlic
2-1/2 tablespoons ground Indian coriander
1-1/2 teaspoons kosher salt
1-1/4 cups plain whole-milk yogurt mixed with 1-1/2 tsp. flour
4 each bone-in chicken thighs and drumsticks (separated; 2 lbs. total if you have a preference for one over the other)
1 red bell pepper, cored and coarsely chopped
1 yellow bell pepper, cored and cut into chunks
2 large carrots, quartered lengthwise then cut into 3" pieces
1 lb. Yukon Gold potatoes, peeled and cut into chunks (defer if marinating chicken and other vegetables overnight)

Steps:

  • Combine bay leaves, ginger and garlic and have at the ready (they do not need to be mixed). Heat oil over small-to-medium frying pan or skillet over medium heat. Add Panch Phoron, and stir until seeds begin to pop, about 30 seconds. Add bay leaves, ginger and garlic all at once, and stir until ginger softens, about 3 minutes. Remove skillet from heat, and stir in coriander and salt. Let sit until fragrant, about 30 seconds. Add yogurt and flour mixture, stir to loosed browned bits, and let marinade cool.
  • Combine marinade with chicken, bell peppers and carrots, stir or toss to coat, and cover (you can use a dish with a tightly fitting lid or a resealable plastic bag). Chill at least 2 hours or overnight.
  • Preheat oven to 475°F with rack set in upper third of oven. Arrange potatoes in single layer in large rimmed oven dish or on rimmed baking sheet. Turn out marinated ingredients over potatoes, mix to coat, and pat to single layer. Bake until browned, about 40 to 45 minutes, turning with wide spatula every 15 or 20 minutes and ending with chicken skin-side up.

Panch Phoran is a Bengali spice mixture used to provide a base flavoring to many Indian recipes. The flavors drift from one to another with each bite, giving the spices a chance to surprisingly show the unique flavor rather than disappearing in a blur of spices ground together. The spices themselves are commonly found in Indian markets (at a much better price as well!), although some high end supermarkets may have them, provided their shelf space allows it. If you cannot find your spices there, I strongly suggest buying on the internet.
