PEA & PANCETTA CREAMY PASTA
An easy, tasty quick pasta for busy weeknight meals.

Steps:
- Bring a large pot of lightly salted water to a boil.
- While the water is heating, fry the diced pancetta in a skillet over medium heat until crispy and lightly browned, about 8 to 10 minutes.
- Drain excess fat from the skillet.
- Add the pasta to the boiling water and cook until it is "al dente".
- Add the garlic to the skillet and stir for a minute but do not let it color.
- Add the cream, peas, and season with salt and pepper.
- Bring to a boil and cook a couple of minutes to thicken.
- Use a slotted spoon to remove the pasta from pot and add to the skillet. (Do not worry about adding a little pasta water as well!)
- Stir continuously over high heat until the pasta is well coated with sauce, and the sauce is thick.
- Serve in individual bowls topped with some freshly cracked black pepper and pass the grated cheese.
LINGUINE WITH GARLIC OIL AND PANCETTA

- Preheat the oven to 500 degrees F.
- Fill a large saucepan with water and bring to a boil. While it's heating up, put the garlic olive oil in an ovenproof dish; I use an enamel Le Creuset one, measuring 12 by 8-inches. Remove the rind from pancetta and put it in the dish (to render down: you want as much bacony juices as possible), then dice the rest of the pancetta and add these cubes to the oil, smooshing them about with your fingers to make sure they're equally, if lightly, coated. When the water's boiling, put the dish of garlic-oiled pancetta in the oven, then salt the boiling water and add the linguine; these should need about 10 minutes to cook. When the pasta's ready, drain it, reserving a scant cupful of the cooking water and take the pancetta dish out of the oven. Tip the drained linguine into the dish and toss well, adding some of the pasta, cooking water, drop by cautious drop, for lubrication as you need it.
- And that's it: I like this without Parmesan, but a sprinkling of roughly scissored parsley, should you feel inclined, is always a good idea.
PANCETTA AND PEA PASTA
This pancetta and pea pasta is a quick and delicious weeknight dinner recipe. It can be on your table in less than 30 minutes! The garlicky cream sauce is lightened up by using half-and-half instead of heavy cream.

- Boil a large, salted pot of water for the pasta. Cook it al dente according to package directions.
- Meanwhile, in a skillet, fry the pancetta over medium-high heat until it's nice and crispy (about 10 min.).
- If there's a lot of fat left over, drain the majority of it.
- Add the garlic to the pan and cook for about 30 seconds, then add the half-and-half, Italian seasoning, and peas.
- Let the sauce bubble for a few minutes, then drain the cooked pasta and add it to the skillet, along with the parmesan.
- Toss the pasta with the sauce and let it cook for a few more minutes, tossing often (turn heat down to medium/med-low). This will help more of the starch to release from the pasta so the sauce thickens up a bit more. Serve immediately with fresh cracked pepper if desired.

LINGUINE WITH PANCETTA AND PEAS #RECIPE

- Cook the pasta according to the directions on the package.
- While the pasta is cooking, you can make the sauce.
- Place a large skillet over medium heat, and add the olive oil.
- When the oil is hot, add the onion and sauté for 3 to 4 minutes.
- Add the garlic and the pancetta, and sauté for another 3 to 4 minutes.
- Add the broth and the peas, and bring to a simmer.
- Add the butter and whipping cream, and turn the heat down to low.
- Gently stir sauce until the butter has melted and the sauce has slightly thickened.
- Add the green onions, parsley, basil, and a little of the parmesan cheese and gently stir to combine. Add the remaining parmesan a little at a time, stirring in between each addition.
- Taste the sauce, and adjust the salt and pepper to your liking.
- Add the pasta to the sauce and toss to combine for 1 to 2 minutes.
- Serve immediately with extra Parmesan cheese sprinkled on top.
PANCETTA AND PEA LINGUINE
A great, quick after work supper for 2.

- Bring a pan of lightly salted water to the boil and add in the pasta.
- To a preheated, thick bottomed frying pan add the pancetta. Do not add in oil as the pancetta will release oil as it is cooking. Fry until lightly crispy.
- Once the pancetta has cooked through remove it from the pan with a slotted spoon, and place it to one side. Leaving behind the pancetta oil in the pan.
- Add the finely sliced shallots to the pancetta oil and fry until opaque.
- Add the glass of wine to the shallots. You should hear a satisfying sizzle as the wine hits the pan. Reduce the heat so the wine mixture simmers and leave this until the wine has reduced by 2/3rds its original volume.
- Now add in the pancetta, creme fraiche, peas, parmesan (reserving some for the garnish at the end) and a good few grinds of black pepper and stir thoroughly together. Leave the sauce to simmer and thicken slightly, 3-4 minutes. If the sauce over thickens you can thin it down by adding a small spoonful of pasta water.
- Drain the pasta and spoon into warmed pasta dishes. Pour over the sauce as desired or mix the sauce with the pasta and then serve with a sprinkling of the remaining parmesan. Goes well with a lightly dressed green salad. ENJOY!

The original recipe I followed was an Emeril's recipe. I have tweaked the recipe to my husband and my taste, so now it is a little different than the original recipe. It is so simple, easy yet has a robust of flavors. It always pleases! All guest I have served this recipe to have loved it.

- In a large pot of salted water, cook the pasta until just al dente. Drain and return to the pot.
- Meanwhile, in a large skillet heat the olive oil over medium-high heat.
- Add the pancetta and cook until golden brown, 5 minutes. Remove and set aside.
- In same skillet add the shallots and cook, stirring, for 1 minute. Add the garlic and cook, stirring, for 30 seconds.
- Add the wine, salt, red pepper, lemon juice, lemon zest, pancetta and shrimp. Bring mixture to a boil and cook about 4 to 5 minutes. Stir frequently. Shrimp should become pink and cooked through. DO NOT OVER COOK.
- Add the parsley and stir to combine.
- In a large bowl, combine pasta with shrimp mixture. Toss well to combine.
- Add parmesan and toss well to thoroughly combine. Let set for 3 minutes until pasta absorbs all the liquid.
- Garnish with parsley and serve immediately.

- 1. Bring a large pot of salted water to a boil for pasta. In a large skillet over medium heat, add the olive oil. When the oil is hot, add the pancetta and cook until the fat is rendered, about 4 minutes. Add the scallions and garlic and cook until the scallions are wilted, about 3 minutes.
