PANCETTA AND PARMESAN-FILLED CHICKEN BREAST
If you want to spoil yourself with a delicious meal, then you've come to the right place. Use a nice piece of the all-classic chicken breast, and fill it with pancetta and parmesan. It's a delicious combo, and it's wonderful when served with lots of veggies. Add everything in the same baking tray and let the heat do its thing!

Steps:
- Preheat the oven to 440°F/220°C.
- Slice the chicken breast through the middle and spread it wide to make room for the filling.
- Season with salt and pepper and add pancetta and parmesan.
- Wrap the chicken with the help of a string, making about 3 knots in the process.
- Add it in a baking tray along with the veggies. Season with salt and pepper and drizzle with olive oil.
- Put the tray in the oven for the next 10 minutes. Do not turn off the heat.
- Take the chicken out of the tray and remove its strings with a scissor.
- Add it in another baking tray, top with Cheddar, and bake it again for another 10 minutes.
- Slice it in half and serve with the oven-baked veggies.

- Position the rack on the bottom third of the oven and preheat the oven to 400 degrees F.
- Press the crust into a 9-inch-diameter tart pan with a removable bottom. Trim the edges; set aside.
- Heat the oil in a heavy medium skillet over medium heat. Add the pancetta and saute until crisp, about 7 minutes. Using a slotted spoon, transfer the pancetta to paper towels and drain. Beat the cream, milk, eggs, parsley, salt, and pepper in a medium bowl to blend. Stir in the cheese and pancetta. Pour the cream mixture into the crust.
- Bake the torte until the filling puffs and is golden brown on top, about 25 minutes. Let the torte cool for 15 minutes. Cut the torte into 12 thin wedges and serve.

Steps:
- Preheat oven to 350 degrees. Grease 13 by 9 by 2-inch pan. In a large pot cover potatoes with water. Boil until skin cracks and potatoes are not mushy. While potatoes are still hot, peel of the skin. In a large saucepan melt butter and add about 2 tablespoons of olive oil and onions, saute until soft and transparent. Add the basil and the parsley. Mash the potatoes and add onion mixture. Stir with a wooden spoon. Stir in Parmesan cheese a little at a time. Add eggs and pepper. Taste and add salt if necessary. (sometimes salt isn't necessary because cheese has salty taste) Crust: Put flour in a large bowl. Make a well in the flour. In the center add egg yolks and salt, then add oil. Mix with fingers. Add cold water, a little at a time, and work with your fingers. Start kneading the dough for about 10 minutes until it blisters. Roll out on a floured board. Dough will be very hard. Roll out to a rectangular shape. Lay the dough in the pan with edges hanging over the sides. Make sure the pan is greased with butter. Pour potato mixture into the pastry shell, spread the mixture evenly, fold over dough that was hanging over the sides the center will be exposed. Beat egg with a little water and brush over the top. Bake in oven for 45 minutes.
- Cut into squares and serve warm.

- Cook the pasta to al dante in plenty of salted boiling water, consult package for instructions. Reserve 1 cup of the pasta cooking water aside, then drain pasta (some of the starchy pasta water will serve as sauce later)
