Steps:

  • Make the strawberry sauce: Cook 3 cups chopped strawberries, 1/4 cup sugar, the juice of 1/2 lemon and 2 tablespoons water in a saucepan over medium heat, stirring, until the berries break down, 10 minutes. Stir in 1 teaspoon vanilla. Strain through a fine-mesh sieve, pressing on the solids; let cool. Meanwhile, make the pancakes: Whisk 1 1/2 cups flour, 3 tablespoons sugar, 1 tablespoon baking powder and 1/2 teaspoon salt in a large bowl. Whisk 1 1/4 cups milk, 1/2 stick melted butter, 2 eggs and a little vanilla in a medium bowl, then whisk into the flour mixture until just combined. Cook by 1/4 cupfuls in a hot buttered skillet until golden. Stack the pancakes, then drizzle with the strawberry sauce and insert a knife into the top.

Provided by Chef floWer

Categories     Breakfast

Time 45m

Yield 4 serving(s)

Number Of Ingredients 13

1/2 cup honey
1/2 cup blood orange juice, strained
1 1/2 teaspoons cornstarch or 1 1/2 teaspoons cornflour
1 tablespoon butter
8 ounces fresh strawberries, quarter
1 1/2 cups all-purpose flour, sifted
3 1/2 teaspoons baking powder, sifted
1/2 teaspoon salt, sifted
1 tablespoon white sugar, sifted
1 egg
3 tablespoons butter, melted and slightly cooled
1 1/2 cups milk
cooking spray, for pan

Steps:

  • Blood Orange Honey Sauce: In small saucepan, add honey, blood orange juice and cornflour, whisk well until sauce ingredients are blended.
  • Put saucepan over a medium heat and bring mixture to a boil, whisking occasionally and cook until sauce starts to boil, then remove from heat.
  • Whisk in butter until completely dissolved into the sauce. Set aside and allow cooling until pancakes are ready.
  • Pancake: In a large bowl, add sifted flour, baking powder, salt and sugar, mix well and make a small well in the centre of the bowl with the dried ingredients.
  • Add the egg in centre of the well, then add melted butter, slowly add milk and mix until smooth. (You may not need to add the entire 1 1/2 cups of milk, consistence of mixture needs to be smooth).
  • Using the cooking spray, lightly oil pancake pan or non stick frying pan over medium heat.
  • Once pan is hot, pour approximately 1/4 cup of pancake mixture onto the pan. Brown on one side of pancake then flip, brown other side of pancake, place cooked pancake onto a warm plate. Repeat this step until all the pancake mixture has completed. Note: Only flip once as pancake will become tough and not light.
  • To assemble: Equally divided pancakes on four plates. Equally pour blood orange honey sauce on top of the pancakes and then add strawberries on top of the sauce.
  • Enjoy.

Yield 12 pancakes (4 servings)

Number Of Ingredients 19

1 1/2 cups all-purpose flour
1/2 cup blue cornmeal
Pinch salt
1 tablespoon sugar
1 tablespoon baking powder
2 large eggs
1 1/2 to 2 cups milk
2 tablespoons unsalted butter, melted
1 cup fresh blueberries, plus more for garnish
2 to 3 bananas, peeled and sliced

RICOTTA PANCAKES WITH ORANGES & HONEY

Ricotta pancakes with oranges & honey image

Don't just save these for pancake day, make them for a scrumptious breakfast or quick dessert

Provided by Good Food team

Categories     Afternoon tea, Breakfast, Brunch, Buffet, Dessert, Snack, Supper, Treat

Time 20m

Number Of Ingredients 8

2 oranges
200g plain flour
1 tsp baking powder
1 egg , beaten
200ml semi-skimmed milk
220g tub ricotta
1 tbsp sunflower oil or vegetable oil
handful pistachios nuts, roughly chopped

Steps:

  • Cut the skin and pith away from the oranges, then slice into rounds. Put the flour, baking powder and a pinch of salt in a large bowl. Make a well in the middle, then pour in the egg and a splash of milk. Using a wooden spoon, gradually draw the flour into the liquid until you have a lump-free batter. Mix in the rest of the milk, then beat in the ricotta.
  • Heat a large non-stick frying pan and add the oil. Swirl it around the pan then tip out any excess into a heatproof bowl. Spoon in 3 or 4 generous tbsps of batter, spaced well apart, to make pancakes about 10cm across. Cook on medium heat for 2 mins until bubbles appear on the surface. Flip over with a palette knife and cook for 2 more mins until golden. Set aside and keep warm; cook the rest.
  • Stack the pancakes, pile the orange slices on top, drizzle with honey, then scatter with nuts and serve warm.
