8 cups Bisquick baking mix
5 1/3 cups milk
4 large eggs

Steps:

  • In a large bowl beat all ingredients with electric mixer till smooth. Grease griddle if needed.
  • For uniform pancakes, pour batter by 1/4 cupfuls onto hot griddle. Turn over when bubbles appear.
  • Bake the other side till golden brown. Serve.
  • To make 80: 10 cups (40 oz pkg) bisquick mixed with 6 2/3 cups milk and 5 eggs.
  • To make 120: 15 cups (60 oz pkg) bisquick mixed with 10 cups milk, 7 eggs.

Steps:

  • Mix flour, milk, egg, butter, sugar, baking powder, and salt together.
  • Heat a lightly oiled griddle over low heat. Scoop 1/4 cup batter onto the griddle and cook until top and edges are dry, 3 to 4 minutes. Flip and cook until lightly browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

This is the most basic recipe for a slightly thick pancake. It's just as easy to make a quick homemade batter as it is to open a box mix, which needs ingredients added to it anyway. Yield Makes 2 cups batter; 16 4-inch pancakes

1 1/2 cups all-purpose flour
1 tablespoon sugar
1 teaspoon coarse salt
2 3/4 teaspoons baking powder
1 large egg, lightly beaten
1 1/4 cups milk
3 tablespoons unsalted butter, melted, plus more for serving
Vegetable oil, for the griddle
Pure maple syrup, warmed, for serving

Steps:

  • Place a heat-proof platter into a warm oven (at 200 degrees).
  • In a large bowl, whisk together the flour, sugar, salt, and baking powder. Make a well in the center of the flour mixture. Add in the egg, milk, and 2 tablespoons of the butter. Whisk from the center, slowly incorporating the flour. Rest the batter for 10 minutes.
  • Heat a large well-seasoned cast-iron skillet or favorite griddle over medium-high heat. Swirl the remaining tablespoon of butter in the skillet (or use oil to coat the griddle) and immediately pour in 1/4 cup of batter for each pancake. When bubbles rise to the surface, flip the pancakes, slightly reduce the heat, and cook until the bottoms are golden and the centers are cooked, about 1 minute. (Rarely does the first pancake work because it takes a bit of time to get in the groove with the heat, fat, and batter.)
  • As the pancakes come out of the skillet, place them on the warm platter in the oven until ready to serve. Serve a stack of 3 pancakes, topped with more butter and the maple syrup.

4 cups all-purpose flour
¼ cup white sugar
1 tablespoon baking powder
1 tablespoon baking soda
1 teaspoon salt
4 cups buttermilk
4 eggs
4 tablespoons canola oil
1 tablespoon vanilla extract
1 teaspoon canola oil, or as needed

Steps:

  • Preheat a cast iron skillet or griddle over medium heat for 15 to 20 minutes.
  • Mix flour, sugar, baking powder, baking soda, and salt together in a large bowl.
  • Mix buttermilk, eggs, 4 tablespoons oil, and vanilla extract together in a medium bowl. Pour wet ingredients into dry ingredients and whisk until mixed.
  • Lightly grease the preheated skillet with 1 teaspoon canola oil. Pour batter into the hot skillet by 1/4 cup for small pancakes, 1/3 cup for medium pancakes, or 1/2 cup for large pancakes. Cook until edges are slightly dry and underside is golden brown, 2 to 3 minutes. Flip and cook until golden brown on second side, about 2 minutes more. Repeat until all batter is cooked. Regrease the skillet as necessary to keep pancakes from sticking.
