HOGS IN BLANKETS
We've all had the pigs in a blanket (the little smoked sausages wrapped in crescent rolls) but this is a little different twist--sausages wrapped in pancakes......yummy! This recipe comes from recipetips.com.

Steps:
- Heat oven to 350°.
- Cook sausage according to package directions.
- Meanwhile, make pancake mix using 2 cups of pancake mix and 1 1/2 cups of milk. You want the pancake to be thinner than normal. They are easier to wrap around the sausage when they are thinner.
- Heat a non-stick griddle.
- Pour a scant 1/4 cup of batter onto the griddle. Make 12 pancakes or however many sausage you have.
- Cook pancakes until golden brown.
- Remove to a wire rack to cool.
- Wrap a pancake around a sausage and place seam side down in a greased baking dish.
- Cover with foil and bake for 15 minutes at 350° or just until heated through.
- Remove from oven and sprinkle with powdered sugar.
- Serve with syrup.

PIGS IN A BLANKET
Adorably cute pig shaped Pigs in a Blanket are made by baking Little Smokies inside pancakes in a pig shaped silicone mold.

Steps:
- Preheat your oven to 425 degrees Fahrenheit.
- Butter the inside of 24 pig cavities in 2 silicone molds using melted butter, reserving 2 tablespoons of the melted butter to put into the pancake batter.
- In large bowl, whisk together the flour, salt, baking powder, and baking soda.
- Whisk together the egg and buttermilk then add the sugar.
- Pour the liquid mixture into the flour mixture and stir just to combine.
- Add 2 tablespoons melted butter and mix until blended but with lumps remaining.
- Pour batter into a squeeze bottle.
- Squeeze batter into a pig cavity in the silicone mold filling it about 3/4's full.
- Press a Little Smokie into the pancake batter.
- Cover the little sausage with more pancake batter.
- Repeat, filling up all 24 pig cavities.
- Bake for 14-18 minutes until golden brown.
- Remove and allow the pigs to cool for a few minutes before removing from the mold.
- Serve with your favorite dipping sauces.
PANCAKE PIGS IN A BLANKET
This pancake and sausage combination is great to make for a slumber party breakfast. Kids will have fun eating their way to the tasty "pig" hiding in the golden pancake blanket.

BREAKFAST/BRUNCH PIGS IN A BLANKET
This is a great take on the "Pigs in a Blanket" that are often served as a party appetizer. Why not surprise your family with this breakfast version? My kids never cared for breakfast sausage links when they were young until I started making these (they always just wanted cold cereal or pancakes). Now my daughter is off to college, and my son is in high-school, and they both make these for breakfast. Very few ingredients and time are needed. I hope you enjoy these little breakfast bites. (Also great when served for a Sunday brunch).

- Pre-heat oven to 250*F.
- Heat pre-cooked sausage links per box directions (I microwave them while I prepare the mini pancakes). Microwave the pure maple syrup while preparing the sausage links.
- Thoroughly mix the Bisquick mix, milk, egg and blueberries (if using).
- Spray a large non-stick skillet with cooking spray. Heat skillet over medium heat. Use 2 heaping tablespoons of batter to make each mini pancake. Do not over crowd the pan, work in small batches. When pancake starts to dry around the edges and bubble (approx 2 minutes), flip and cook on the other side (approx 1 1/2 - 2 minutes). (Cooking times may vary depending on the heat level and the type of skillet).
- Place cooked pancakes on an oven safe platter and keep warm in the oven while finishing the rest of the pancakes.
- When all pancakes are made, lay 1 cooked, warmed, breakfast sausage link across the middle of each mini pancakes, fold over (like a taco), and run a toothpick through the pancake and sausage to keep folded.
- Serve with warmed pure maple syrup for dunking and enjoy! (You may need to heat up more syrup. I only suggested 3/4 cup, but my kids would drown them while dunking and I went through a lot more than that).
PIG-IN-A-PANCAKE POPS
Fun to eat and easy to make, this new twist on a breakfast favorite starts with Original Bisquick mix and link sausages.

- Heat oven to 400°F. Spray cookie sheet with cooking spray, or line with cooking parchment paper.
- In large bowl, mix 1 cup of the Bisquick mix, the egg and milk with whisk or fork until blended.
- In small bowl, place 1/4 cup Bisquick mix. Thread each cocktail sausage on 1 end of a skewer. Dip each sausage first into dry Bisquick mix, then into batter. Place on cookie sheet.
- Bake 14 to 18 minutes or until golden brown. Cool 2 to 3 minutes on cookie sheet before removing. Serve with syrup for dipping.

HOME MADE PIGS IN THE BLANKET
This might seem like a lot of work but really it is very easy and well worth your time and I'm sure your family will love what you created. The sour cream on top of the pig gives it a special flavor which that is how I was raised to eat Pigs In The Blanket. I love to cook and this seems to be the time of year for this dish so hope you try this and let me know if you like it. Thanks If your head of cabbage is small try to use all of your leaves and if it is big take the left over leaves and put them on top of your pigs before pouring your V-8.

- First you will need two stock pots one to boil your cabbage in and then take out to cool. .Once cooled dig out the heart helps getting the leaves to come off without tearing
- While the cabbage is cooking to loosen the leaves in the other stock pot Put all of your sauce ingredients in and cook on low for 1 hour. Starting with the crushed tomatoes and ending with the thyme
- While sauce is cooking and cabbage is cooling prepare your Filling In a large bowl Start with beef and end with Worcestershire sauce. Mix this together and now you are ready to assemble your pigs
- Gently pull leaves from cabbage and I put about a small handful pending on the size of leave and roll it up and I secure mine with a toothpick but you could leave this part out just becareful and place it on a platter till all pigs are rolled up and your filling is gone
- Once this stage is complete now Put 1/2 of your kraut down in broiler pan and spoon in half of your sauce Layer pigs then rest of kraut on top with the remaining sauce
- Once you have used up all ingredients, pour your Spicy V-8 juice all over the top. You can add more if you like but 1/2 bottle is plenty
- Set oven to 325* and cook for 2 1/2-3 hours with lid on and do not take lid off and do not stir. Once done Serve with mashed potatoes and top the Pig with Sour Cream
