2-4 Ribeye (2) or Strip Steaks (4) (1 1/2 inches thick, I used Kansas City Steaks)
3 cloves garlic (finely diced)
2 tablespoons fresh rosemary (finely chopped)
2 shallots (thinly sliced)
3-4 tablespoons butter
1 tablespoon olive oil (optional)
1 tablespoon white wine
2 teaspoons coarse sea salt
salt and pepper (to taste)

Steps:

  • Finely dice or mince rosemary and garlic.
  • On a cutting board add 2 teaspoons coarse sea salt, minced rosemary and garlic and mix together and roughly chop all together.
  • Rub the garlic and rosemary mixture all over your choice of steak, in this case I used ribeye. Allow to sit at room temperature for 20 minutes.
  • Over medium-high heat, heat up your skillet.
  • Once heated add butter and olive oil, if you are using.
  • Right before you add the steaks to the pan season with pepper and more salt if desired. Add steaks one at a time, I cook two at a time and cook about 1-2 minutes on one side then flip and cook for another 1-2 minutes.
  • Turn steaks again, add wine and shallots and cook 2 or 3 more minutes.
  • Depending how you want your steak cooked, turn your steak once more and cook for another 2-3 minutes.
  • Once cooked to desired temperature, remove skillet from the heat. Remove steaks and let rest for 5 minutes.
  • Right before serving, drizzle remaining liquids and shallots from pan over the steak.

2 lbs New York Strip Steaks (2 steaks) (or Ribeye or Top Sirloin Steaks (1 lb each steak, 1 1/4" thick))
1/2 Tbsp vegetable oil (or any high heat cooking oil like canola or extra light olive oil)
1 1/2 tsp sea salt
1 tsp black pepper (freshly ground)
2 Tbsp unsalted butter
2 cloves garlic (peeled and quartered)
1 sprig fresh rosemary

Steps:

  • Thoroughly pat steak dry with paper towels. Just before cooking, generously season with 1 1/2 tsp salt and 1 tsp black pepper
  • Heat the cast iron pan until hot then add 1/2 Tbsp oil over medium-high heat, swirling to coat. Once the oil is very hot, add steaks to the skillet. Sear the steaks on the first side for 4 minutes until a brown crust has formed then flip and cook another 3-4 minutes. Using tongs, turn the steak on its sides to render the white fat and sear the edges (1-minute per edge).
  • Reduce heat to medium and immediately add 2 Tbsp butter, quartered garlic cloves and rosemary to the pan. Spoon the butter sauce over the steak, tilting the pan to get butter on your spoon. Continue spooning the sauce over the steak for a minute or until the steak is about 5-10 degrees from your desired doneness (the temperature will continue to rise another 5-10 degrees while steaks rest).
  • Transfer steak to a cutting board, loosely cover and rest 10 minutes before slicing into 1/2" strips to serve. Spoon extra butter sauce over sliced steak to serve.

1 medium Lemon ((cut in half))

Steps:

  • Use paper towels to pat the halibut fillets completely dry - this will ensure even browning. Season the fish on both sides with garlic powder, paprika, sea salt, and black pepper. Set aside.
  • Heat the olive oil in a large skillet over medium-high heat for 2 minutes.
  • Add the fish fillets in a single layer (you can do it in batches if all the fish won't fit in a single layer). Sear, without moving, for 3-4 minutes, until the edges of the fish are opaque. Flip and cook for 2-4 minutes, until cooked through.
  • Remove the fish from the pan and cover tightly with foil to keep warm.
  • Reduce heat to medium-low. Add the butter to the same pan. Wait for it to melt, then heat for 2-3 minutes, stirring occasionally, until the butter is browned and smells nutty.TIP: If you like garlic, you can also use this lemon butter sauce recipe.

1 lb thick rib eye steak, 1 inch (2 cm) thick
2 tablespoons kosher salt
2 tablespoons freshly ground black pepper
4 tablespoons canola oil
3 tablespoons butter
2 sprigs fresh thyme
2 bunches fresh rosemary
2 cloves garlic, crushed

Steps:

  • Preheat oven to 250°F (120°C).
  • Season the steak evenly with the salt and pepper on all sides.
  • Place the steak on a wire rack on top of a baking sheet. Bake for 35 minutes.
  • Heat the canola oil in a skillet or stainless steel pan over high heat until smoking. Sear the steak on one side for 30 seconds, then flip.
  • Immediately, add the butter, thyme, rosemary, and garlic, swirling the pan to melt the butter quickly.
  • Place the herbs and garlic on top of the steak, and push the steak toward the top of the pan. Tilt the pan toward you to pool the butter near the bottom. Using a spoon, continuously scoop the butter over the top of the steak for about 30-45 seconds.
  • This helps not only flavor the steak, but also helps cook the steak faster. If you prefer your steak medium or medium-well, cook your steak longer.
  • To test the doneness of your steak, lightly press the tip of your left index finger to the tip of your left thumb. The fleshy area below the thumb should feel how rare steak feels pressing the surface of the steak. For medium-rare steak, touch your middle finger to your thumb and press the area below your thumb. For medium, touch your fourth finger to your thumb. For well done, touch your pinky to your thumb.
  • Rest the steak for 10 minutes on a cutting board. Slice, then serve!

1 pound yukon gold potatoes (sliced about 1/2 inch in thickness)

Steps:

  • In a large cast iron skillet over medium high heat, add olive oil and butter, potatoes, garlic, thyme, rosemary and oregano. Cook for about 3 minutes, stir and cook and additional 3 minutes or until fork tender. Remove and set on a plate.
  • Turn the skillet to high heat. Add the steaks. Cook on each side for 3 minutes or until outside is browned. Reduce heat to medium high. Cook the steaks to desired doneness. Mine took about 10 minutes flipping 3 times to get a medium well.
  • Right before the steaks are done, make the garlic butter compound. Mix the butter, garlic and fresh chopped herbs. Slather on top of steaks. Add the potatoes back to the pan and heat through and let the butter melt into the steaks.

16 ounces rib eye steaks
2 tablespoons butter, softened
2 teaspoons fresh garlic cloves, minced
2 teaspoons fresh Italian parsley, finely chopped
salt & pepper

Steps:

  • Preheat oven to 475 degrees.
  • Mix parsley and garlic. Sprinkle lightly with salt and mash slightly to mix, then mix with butter.
  • Melt the butter mixture over low heat in a small pan.

3 garlic cloves
Kosher salt
8 tablespoons unsalted butter, softened
1 teaspoon dried thyme
Ample pinch of coarsely ground black pepper
2 tablespoons vegetable oil
2 large (16 to 20 ounces) or 4 small (8 to 10 ounces) bone-in rib steaks or boneless rib-eye steaks

Steps:

  • Chop the garlic finely. Sprinkle 1 tablespoon salt over the garlic and continue to chop it, occasionally smashing and smearing the garlic with the flat side of the knife, until the garlic becomes paste-like. (Alternatively, mash the garlic and salt together in a mortar and pestle.) Put the garlic paste, butter, thyme, and pepper in a small bowl. Fold the softened butter over and onto the garlic and thyme, mashing it down with the back of a spoon or spatula. Use a sheet of plastic wrap to help shape the butter into a log, wrap the log well with the plastic wrap, and refrigerate until ready to use.   • Heat the oven to 425 degrees F.
  • In a large ovenproof saute pan, heat the vegetable oil over high heat until very hot. Season the steaks with a little salt and pepper. Add the steaks to the pan and brown them well on 1 side, about 5 minutes. Turn the steaks and brush them liberally with the garlic butter. Finish cooking the steaks in the oven, brushing them occasionally with more garlic butter, until done, about another 5 minutes. (The time will vary depending on how you like your steaks cooked and how thick they are.) Remove the steaks from the oven and allow them to rest for 5 minutes before serving. Serve smaller steaks whole or sliced thinly across the grain. Cut larger steaks into 2 servings or into thin slices. Spoon any remaining juices from the pan onto the meat as well.

2 (12 oz) Ribeye or New York strip steaks ((about 1 1/4-inches thick))
1 Tbsp vegetable oil
1 tsp kosher salt
3/4 tsp freshly ground black pepper

Steps:

  • Let steaks rest at room temperature 30 minutes.
  • Heat vegetable oil in a 12-inch cast iron skillet over medium-high heat (you want to let it get hot oil should be shimmering near smoking, preheating should take about 3 minutes if using a gas stove, longer for electric).
  • Dab both sides of steak dry with paper towels then season both sides with salt and pepper.
  • Place steaks in skillet and using metal tongs press down over top surface of steaks to ensure the entire bottom surface is making direct contact with skillet.
  • Let cook until browned on bottom, about 3 minutes.
  • Flip and continue to cook until steak is about 10 degrees away from desired doneness, approximately 3 minutes longer.
  • Reduce heat to medium-low, add butter, garlic and thyme.
  • Using an oven mitt grasp pan and tilt pan so butter pools to one side, spoon butter over steaks and continue to cook until steaks registers desired doneness (see notes below for temps, keep in mind they'll rise about 5 more degrees of heat), about 1 minute longer.
  • Transfer to plates. Let rest 5 minutes before slicing.

  • Before cooking, allow steaks stand 30 minutes at room temperature. Then season all sides with salt and pepper.
