Pan-Seared Salmon with Creamy Avocado Sauce image

Simply pan-sear salmon in a little olive oil on medium-high heat for 5 to 6 minutes per side. That's it. Top with creamy avocado sauce and serve with a lemon wedge.

¼ cup olive oil
¼ cup light whipping cream
1 avocado - halved, pitted, and peeled
1 clove garlic
1 tablespoon freshly squeezed lemon juice
salt and ground black pepper to taste
4 (6 ounce) fillets salmon fillets
2 tablespoons olive oil
¼ cup fresh basil leaves
1 lemon, cut into wedges

Steps:

  • Combine 1/4 cup olive oil, cream, avocado, garlic, lemon juice, salt, and pepper in an electric blender. Blend until smooth and creamy. Set aside.
  • Season salmon fillets with salt and pepper on both sides. Coat the bottom of a skillet with olive oil and heat over medium-high heat. Add salmon once oil is hot and sear, 5 to 6 minutes. Flip and sear for 5 to 6 minutes more.
  • Transfer salmon to a plate and top with creamy avocado sauce. Sprinkle with basil and serve immediately with a lemon wedge.

2 large avocados, cut and peeled
3 tablespoons freshly squeezed lime juice (can substitute lemon)
3 -4 tablespoons light olive oil (light refers to flavor and color, not calories)
1 tablespoon shallots or 1 tablespoon green onion, minced
1 tablespoon parsley, minced
1 teaspoon Dijon mustard (or to taste)
salt and pepper, to taste
1 -1 1/2 lb salmon fillet
grapeseed oil or canola oil

Steps:

  • Put avocado pieces and lime juice into a food processor or blender and pulse until blended.
  • Slowly add olive oil, pulsing, until you reach desired consistency of sauce.
  • Add minced shallots (or green onions) and parsley, pulse just until combined.
  • Remove to a bowl, add mustard, salt and pepper to taste.
  • Coat the bottom of a sauté pan with oil, heat on medium high until almost smoking.
  • Season both sides of the salmon fillets with salt and pepper, carefully lay the salmon into the pan, skin side down.
  • Cook the salmon until about medium doneness, about 3-4 minutes per side.
  • Serve salmon with avocado remoulade sauce.

This Creamy Pan Seared Salmon Recipe makes a restaurant quality dinner right at home! Flaky salmon smothered in a flavor-packed, creamy sauce that's ready in only 30 minutes!

2 tablespoons garlic-flavored olive oil
4 (4-ounces each) skin-on salmon fillets
salt and fresh ground black pepper (to taste)
1 tablespoon butter
3 cloves garlic (minced)
2 cups halved cherry tomatoes
1 bag (6 ounces) baby spinach
1/2 cup low fat evaporated milk ((you can also use half & half or heavy cream))
1/4 cup grated parmesan cheese
2 tablespoons chopped fresh basil
1 tablespoon chopped fresh parsley

Steps:

  • Heat olive oil in a large skillet over medium-high heat.
  • Season salmon fillets with salt and pepper and transfer to the skillet, skin-side up.
  • Cook for about 7 to 8 minutes, or until browned and cooked about three quarters of the way through.
  • Flip over and cook for 2 more minutes more; remove from skillet and set aside.
  • Add butter to skillet and melt over medium heat.
  • Stir in garlic and cook for 1 minute.
  • Add cherry tomatoes and season with salt and pepper.
  • Continue to cook for 1 to 2 minutes, or until tomatoes begin to soften.
  • Stir in spinach and cook for 1 minute, or until spinach is beginning to wilt.
  • Stir in evaporated milk, parmesan cheese, basil, and parsley; bring to a simmer.
  • Reduce heat to low and cook for 2 minutes.
  • Add salmon back to skillet and continue to cook for 3 minutes, or until salmon is heated through.
  • Remove from heat.
  • Spoon sauce over each fillet and serve.
