SEARED SCALLOPS
For a seafood supper tonight, try Alton Brown's foolproof Seared Scallops recipe. The trick is to add a touch of butter to the pan for a golden sear.

- Remove the small side muscle from the scallops, rinse with cold water and thoroughly pat dry.
- Add the butter and oil to a 12 to 14-inch saute pan on high heat. Salt and pepper the scallops. Once the fat begins to smoke, gently add the scallops, making sure they are not touching each other. Sear the scallops for 1 1/2 minutes on each side. The scallops should have a 1/4-inch golden crust on each side while still being translucent in the center. Serve immediately.
QUICK PAN-SEARED SCALLOPS
Steps:
- Heat olive oil in a large skillet over medium heat. Add shallot; cook and stir until lightly browned, 1 to 2 minutes. Pour in lemon juice and cook until evaporated, scraping the bottom of the skillet with a wooden spoon to release any browned bits, about 3 minutes.
- Place scallops 1/2 inch apart in the skillet. Cook until browned on the bottom, about 1 minute. Flip and continue cooking until the second side is deeply browned, about 1 minute more.
- Transfer scallops to a serving plate; season with salt and pepper. Garnish with parsley.

PAN SEARED DIVER SCALLOPS

- Pat dry the scallops with paper towel. Here's the big tip: cover the scallops, top and bottom with paper towel and put them in the microwave for 15 seconds. This removes the excess moisture (as they have been shipped in solution) and allows for an even searing.
- Put the butter and oil in a non-stick pan and allow to just brown - at that point add the scallops and sear on each side for 3 to 4 minutes (3 minutes is rare to medium rare and 3 is medium rare); seafood is always best and more flavorful when not overcooked.
- When cooked to desired doneness, remove from pan, plate and garnish with chopped parsley and a slice of lemon.
PAN-SEARED SCALLOPS WITH LEMON BUTTER
These Pan-Seared Scallops are prepared using classic techniques and then paired with a simple, delicious lemon butter sauce. This deceptively-easy meal is sure to impress!

- Preheat oven to 200 degrees (to keep cooked scallops warm for a few minutes while preparing lemon butter sauce). To prepare the scallops, examine each one for a side muscle, a square-shaped bit of tissue that runs in the opposite direction as the rest of the muscle. Pull it off by pinching it and tearing it away from the scallop.
- Line a rimmed baking sheet or plate with a clean kitchen towel. Arrange scallops in a single layer on towel, then cover with a second clean kitchen towel. Press down gently to blot liquid.
- Let scallops rest at room temperature until towels have absorbed most of their moisture, about 10 minutes. Season both sides of scallops with salt and pepper to taste.
- In a large skillet over high heat, heat 1 tablespoon vegetable oil until just smoking. Add half of the scallops in a single layer, flat-side down. Cook, without moving, until well-browned, about 1 1/2 to 2 minutes.
- Add 1 tablespoon butter to the skillet. Using tongs, flip scallops. Continue to cook, using a large spoon to baste each scallop with butter until the sides of scallops are firm and centers are opaque, about 30 to 90 seconds longer (tilt skillet to one side so the butter pools and is easier to scoop). Remove smaller scallops as they finish cooking.
- Transfer scallops to a large plate and tent loosely with foil. Wipe out skillet with paper towels and repeat with remaining vegetable oil, scallops, and butter. Transfer to oven to keep warm while preparing lemon butter sauce.
- In a small, heavy-bottom saucepan over medium heat, melt butter. Cook, swirling constantly, until butter turns dark golden brown and has a nutty aroma, about 4 to 5 minutes.
- Stir in shallots until fragrant, about 30 seconds. Remove pan from heat and stir in parsley, thyme, and lemon juice.
- Season to taste with salt and pepper (I like 1/4 teaspoon salt and 1/8 teaspoon pepper). Serve immediately with scallops.

- For the beurre blanc:.
- In a medium sauce pot, simmer shallots, white wine vinegar and tarragon for 3-4 minutes.
- Add white wine and fish stock, continue to reduce by half and strain.
- In a medium sauce pot, slowly add a ¼ lb of butter to the mixture until emulsified.
- With a hand held blender, puree the sea urchin and whipping cream to the emulsified mixture.
- Season to taste, with salt and pepper.
- In a large fry pan over medium heat, pan sear scallops 3-4 minutes.
- Assemble ingredients in a scallop shell.
- For the parsnip puree:.
- In a medium size pot, cook chopped parsnip with milk, honey, bay leaf and a pinc of salt for 15-20 minutes.
- Strain and puree in a food processor, slowly adding 3 T of butter.
- Pass through tamis to remove any fibrous strands.

- In a saucepan combine Blackberry wine, bay leaves, allspice berries, whole cloves, Serrano pepper, blackberries and dash sea salt.
- Bring wine to a full boil and reduce by half.
- Place Blackberry Coulis in a bowl. Discard bay leaves, allspice and cloves. Puree Coulis and strain using a fine-mesh sieve. Hold Blackberry Coulis warm for service.
- Rinse scallops under cold water and pat dry. In a bowl combine Old Bay Seasoning, Cajun Seasoning, fine sea salt, white pepper and whisk in olive oil. Toss scallops until coated.
- In a sauté pan melt butter, add scallops and sear 1-2 minutes per side. Do not over crowd the pan. Add Chardonnay wine and reduce by half.
- Cover warm plates with Blackberry Coulis, place 3-scallops per plate.
- Garnish plates with Fresh Mint Sprigs and Serrano Pepper.

PAN SEARED DIVER SCALLOPS
Steps:
- Clean porcinis with a damp cloth. Remove caps from stems and slice. Trim outer part of stem with paring knife, slice, and set aside.
- Peel cipollinis and cut lengthwise. Carmelize in 2 tablespoons clarified butter and set aside.
- Heat oil on saute pan. Season scallops with salt and pepper. Sear until carmelized on both sides.
- Wash baby spinach and dry. Add butter to a small saute pan and melt. Add spinach and cook until wilted.
- Wash fingerling potatoes and slice thin using a mandolin or knife. Season with salt and pepper. Brown in 2 tablespoons clarified butter.
- Combine mushrooms, spinach and potatoes on center of plate. Top with scallops. Place onions around scallops and top it all off with Hot Bacon Vinaigrette.
- In a saucepot, render bacon. Add shallots and sweat. Add vinegar and reduce by 3/4. Add demi-glace and reduce by 1/2. Melt in whole butter slowly. Strain. Adjust seasoning with salt and pepper.

- Heat a large skillet or possibly saute/fry pan over high heat. When warm, add in 1 Tbsp. of the vegetable oil and heat till warm but not quite smoking.
- Season the scallops with salt and pepper. Dredge in the instant flour, shaking off any excess. Add in the scallops to the pan and sear for 2 min on the first side. Add in the butter to the pan and swirl to proportionately distribute. Turn the scallops and continue to cook for 1 1/2 to 2 min on the second side, or possibly till golden and just cooked through. Transfer to 4 serving plates and season with salt and pepper.
- In a small bowl combine 2 Tbsp. of the Red Pepper Paint with the rice wine vinegar, lemon juice and extra virgin olive oil and whisk to combine. Toss the greens with the dressing and serve on top of the scallops. Drizzle some of the remaining Red Pepper Paint decoratively over the plates, then drizzle some of the basil oil over all. Serve immediately.
- Red Pepper Paint: Core and stem the red peppers and place them along with the other ingredients in a small saucepan. Bring the pan to a boil over medium-high heat and cook for 15 min, stirring occasionally. Remove the pan from the heat and, using a slotted spoon, transfer the peppers to the bowl of a blender. Strain the cooking liquid and throw away the solids. Add in 3 Tbsp. of the cooking liquid to the blender and process on low for 1 minute, or possibly till smooth and thick. If the puree is too thick, thin by adding a bit more of the cooking liquid. Season the puree with a healthy pinch of salt, then pass the puree through a fine mesh sieve and reserve till ready to use. - Clean the scallops by removing the loose flap or "foot" on the side. (It will turn tough once cooked.) Then place the scallops on a paper towel to dry. Pat the tops with another paper towel.
- Heat a large skillet to medium-high heat. Drizzle a scant amount of oil in the skillet and brush it over the surface of the pan. You just want the pan to be lightly coated, not pooling with oil.
- Once the pan is smoking-hot, place the scallops in the skillet flat-side-down. Sprinkle with salt and pepper and allow them to sear for 1-2 minutes. You'll know the scallops are ready to flip when they pull away from the skillet easily, and are caramelized. If they hold tight to the skillet, give them a little longer.
- Flip the scallops, salt and pepper again, and sear for 1 minute. Then add the butter and garlic to the skillet. Sear another minute, turn off the heat. Add the lemon juice, one pinch of lemon zest, and the parsley. Toss to coat and serve immediately.
