PAN-COOKED QUAIL, VIETNAMESE-STYLE

Pan-Cooked Quail, Vietnamese-Style image

Provided by Mark Bittman

Categories     dinner, easy, quick, main course

Time 30m

Yield 4 servings

Number Of Ingredients 10

8 quail
1 medium onion, chopped
1 tablespoon minced ginger
2 tablespoons minced garlic
1 tablespoon or more freshly ground black pepper
1/4 cup lime juice or rice vinegar
1/2 cup nam pla or soy sauce
4 tablespoons neutral oil, like grapeseed or corn
Chopped fresh cilantro, mint or Thai basil leaves (or a combination), optional
Lime wedges, optional

Steps:

  • Cut along each side of breastbone of each bird, then straight down through where thigh meets body to get 2 semi-boneless halves from each bird. (Don't worry if skin holding thigh and drumstick together separates.) Combine other ingredients except oil, herb and lime wedges and marinate for at least an hour, or overnight in a refrigerator, if you have time.
  • Drain quail of marinade and strain and reserve marinade. Pat birds dry. If you have a skillet large enough to hold quail in one layer, put oil in it; if not, put 2 tablespoons of oil in each of two skillets. Turn heat to high and, when oil is hot, sauté quail, skin-side down, until nicely browned, about 4 minutes. Turn and brown other side for 2 or 3 minutes, or until quail are cooked through. Remove to a platter and keep warm.
  • Lower heat and remove any excess fat from skillet (there may not be any). Add strained marinade, along with 1/4 cup water, and raise heat to high. Cook, stirring and scraping any browned bits from bottom of pan, until liquid is reduced to about 1/4 cup. Spoon over quail and serve immediately, garnished, if you like, with herbs and lime.

ROAST QUAIL

Roast Quail image

This is a basic roast quail recipe that can serve as a stepping stone for other, fancier recipes. Once you know how to properly roast a quail, you can then play with glazes or marinades -- even though I am not normally a fan of marinades, they will work with quail because the birds are so small.

Provided by Hank Shaw

Categories     Appetizer     Main Course

Time 45m

Number Of Ingredients 9

1/4 cup kosher salt
1 quart water
2 bay leaves
4 whole (plucked quail)
Lard, (butter or olive oil)
Salt
2 celery sticks ((optional))
Black pepper
Lemon wedges ((optional))

Steps:

  • If you choose to brine your quail, boil the water or wine with the kosher salt and bay leaves, then turn off the heat and let cool. Submerge the quail in this brine for 2 to 6 hours.
  • Preheat your oven to 500°F, or if it doesn't get that hot, as hot as your oven will go. This will take a little while for most ovens, up to 30 minutes. While the oven is preheating, take the quail out of the fridge and pat them dry. Coat with lard, olive oil or butter (your quail will be browner with melted butter) and salt generously. Set aside at room temperature while the oven heats.
  • When the oven is hot, get a small roasting pan or cast-iron frying pan and set the quail in it. They will want to tip over, so steady them with cut pieces of the celery stick. Try to prevent the quail from touching each other to speed the cooking process.
  • Roast the quail in the oven for 12 to 18 minutes. The lower end of the spectrum will give you quail that are juicy, succulent and a little pink on the inside -- but pale. The higher end of the spectrum will give you a fully cooked, browner quail, but one that is at the edge of being dry. Your choice.
  • When you take the quail out of the oven, place on a cutting board and rest for 5 to 10 minutes. Use this time to make the wild game sauce of your choice, or just squirt lemon juice on the birds before serving.

PAN-ROASTED QUAIL

Pan-roasted Quail image

Pan-roasted Quail. These tiny birds make an elegant, yet easy dinner. Depending on the size of the quail, calculate 1 to 2 birds per serving. Since quails are small and don't have much meat, encourage your guests to chew the meat off the bones rather than trying to cut it off with a knife and fork.

Provided by SOSCuisine

Categories     Main courses/Entrées

Number Of Ingredients 11

6 quails
6 sun-dried tomatoes (oil packed)
3 cloves garlic
6 leaves fresh basil
1 pinch salt
6 slices bacon
6 toothpicks
1 1/2 tbsp olive oil
1/3 cup white wine
2/3 cup chicken broth
1 bay leaf

Steps:

  • Stuff the cavity of each quail with the following ingredients: one dried tomato, a half of a garlic clove, one basil leave, and one pinch of salt.
  • Wrap one strip of bacon around the breast, then secure the strip to the quail with a toothpick.
  • Heat the oil in a pan over medium heat.
  • Add the quails and sauté until they become golden-coloured, 12-15 min, with frequent turning to brown each side.
  • Pour in the wine, while scraping the bottom of the pan to detach any browned bits.
  • Add the broth and bay leaf.
  • Cover partially and simmer about 1 h, turning the quails from time to time.
  • You may need to add a little water during cooking to avoid drying and burning the quails.
  • Remove the cover and continue to cook a few minutes, if necessary, to evaporate the liquid and caramelise the juices.
  • Remove the toothpicks and bay leaf, then serve on the warmed dishes.

SWEET & STICKY ROAST QUAIL

Sweet & sticky roast quail image

Za'atar, a Lebanese herb mix, is available at larger supermarkets and speciality shops. You can easily make it by crushing dried thyme and marjoram using a pestle and mortar, then stirring through some sesame seeds.

Provided by Andy Harris

Categories     Mains     Jamie Magazine     Game     Dinner Party     Sunday lunch

Time 40m

Yield 4

Number Of Ingredients 12

8 quail
2 teaspoons za'atar
4 Arab-style flatbreads
2 little gem lettuces
1 handful of rocket leaves
MARINADE
6 tablespoons extra-virgin olive oil
4 tablespoons pomegranate molasses
1 tablespoon coriander seeds
1 tablespoon ground cumin
1 tablespoon ground ginger
1 teaspoon saffron threads

Steps:

  • Combine the marinade ingredients in a very large bowl and mix well.
  • Add the quail and gently toss to coat thoroughly in the marinade. Cover and refrigerate for at least 30 minutes.
  • Preheat the oven to 200ºC/gas 6.
  • Place the quail in a small roasting tin, pour over the marinade and roast for 20 to 30 minutes, basting occasionally with the marinade, until golden brown and cooked through - if you find the quail are browning unevenly, move them around in the tin during cooking.
  • Just before they're ready, sprinkle the za'atar over the quail and return them to the oven until done.
  • Cut or tear the flatbread into wedges, then arrange on a large platter. Separate the little gem leaves and scatter on top along with the rocket leaves.
  • Place the quail on the bread and lettuce, then drizzle over the remaining marinade from the roasting tin. Great with a green salad and crusty bread.

PAN ROASTED QUAIL WITH PORT SAUCE

Pan Roasted Quail with Port Sauce image

Provided by Food Network

Yield 4 servings as an entree or 8 as an appetizer

Number Of Ingredients 25

1/2 cup dry red wine
1/4 cup good quality port (preferably not too sweet)
1/4 cup olive oil
2 tablespoons balsamic vinegar
2 tablespoons maple syrup
2 tablespoons low-salt soy sauce
2 bay leaves
1 teaspoon cracked black pepper
2 cloves garlic, crushed
Several sprigs of fresh thyme or 1/4 teaspoon dried thyme
1/2 teaspoon juniper berries
8 quail, preferably fresh, with breast and backbones removed
2 tablespoons olive oil
2 pounds poultry bones, necks, and wing tips (quail, chicken, duck, or any combination of the three)
2 carrots, roughly chopped (about 1/2 cup)
1 onion, diced (about 1/2 cup)
3 ribs celery, roughly chopped (about 3/4 cup)
1 bay leaf
1/2 teaspoon dried thyme
1 clove garlic, crushed with the flat of a knife blade
3 quarts water
1/2 cup veal stock, or beef stock
1 cup good quality port
2 tablespoons good quality port
2 tablespoons unsalted butter

Steps:

  • Using a wire whisk, combine the marinade ingredients in a stainless steel bowl. Add the quail and rub thoroughly with the marinade, inside and out. (Don't be afraid to use your hands.) Cover the bowl and refrigerate for several hours or overnight.
  • The Port Sauce with which the quail will be served may be made while the quail is marinating. Combine the bones, vegetables, and seasonings in a roasting pan and roast in a 375 degrees oven for 2 hours, turning occasionally, until everything is well browned. Transfer the bones and vegetables to a heavy bottomed stock pot and cover with the water. Bring to a boil, add the veal stock or beef broth, lower the heat to a simmer, and cook 1 1/2 hours. Strain this rich stock into another sauce pan, add the cup of port, and simmer again to the reduce liquid to 11/2 cups. At this point, the sauce may be cooled and refrigerated for up to two days. Rewarm the sauce during the quail's preparation and add the final enrichment of port and butter just prior to serving. This will both enhance the final flavor and give the sauce a silken sheen.
  • To cook the quail, preheat the oven to 350 degrees. Heat 2 tablespoons of olive oil in a cast iron or other heavy bottomed, ovenproof skillet over medium heat. Drain the quail of excess marinade and pan roast, uncovered, until mahogany in color (about 3 minutes on each side). Place the ovenproof skillet and quail in the oven for 9 minutes. Serve immediately with the port sauce.
