- Season chicken on both sides with salt and pepper.
- Heat olive oil in a heavy skillet over medium-high heat until it starts to shimmer. Place chicken breasts in skillet skin side down. Sprinkle with fresh herbs. Do not disturb the breasts until the skin side sears, 5 or 6 minutes. Turn chicken.
- Cook until internal temperature reaches 150 degrees F, about 5 minutes. Add vinegar and butter to pan with chicken. Shake pan gently until butter melts and internal temperature of chicken reaches 160 to 165 degrees F, 2 to 3 minutes more. Add a splash of chicken broth or water if sauce needs to be thinned.

CHICKEN MARSALA AND MUSHROOMS
Served over a tangle of linguine or with side of roast potatoes, this classic Italian-American dish made with chicken breasts, mushrooms and Marsala wine is comfort home cooking at its absolute best. Good news: It's also weeknight easy. First, pound boneless chicken breasts (you can use boneless thighs, too, but they might need a little more cooking time) with a mallet or a rolling pin until they're about 1/4-inch thick. Season them generously with salt and pepper, dredge in flour and fry in a little olive oil until they're golden brown. - Heat 1 tablespoon of the oil in a medium-size skillet set over high heat. Sprinkle the chicken pieces with salt and pepper to taste and dredge in flour. Place 2 of the chicken pieces in the pan and cook until nicely browned, about 2 minutes per side. Add another tablespoon of oil and the remaining chicken pieces. As chicken is cooked, set aside on a plate and loosely tent with foil to keep it warm.

- It is easiest to pound the chicken between two sheets of plastic wrap, or in a study zip-top freezer bag. Spritz the chicken with a little water to prevent the meat from tearing. Season the breasts with salt and pepper and dredge in the flour. Shake off the excess flour -- add more flour if needed.
- In a 12" skillet heat 2 tbsp. olive oil and 1 tbsp. butter over medium-high heat. Add the chicken to the pan but don't crowd then. Cook chicken breasts, turning them over midway during cooking, until they are browned on each side. They don't have to be completely cooked through at this point. When browned, transfer the chicken to a large platter and set aside.
- Add 2 tbsp. olive oil and 1 tbsp butter to the skillet over high heat until the butter starts to sizzle. Add the sliced mushrooms, season with salt and pepper, and cook, stirring occasionally, until the mushrooms are a golden brown, about 8-10 minutes. Transfer the mushrooms to the platter with the chicken.
- Heat remaining 1 tablespoon olive oil in the skillet, add shallots and garlic; sauté, stirring, until soft, about 1-2 minutes. Stir the cornstarch into the chicken stock until it is completely dissolved, then mix it with the Marsala. Add the liquid to the skillet; cook, stirring and scraping bottom of pan until slightly thickened, about 2 minutes. Add the mushrooms and the chicken to the skillet and cook the the sauce over medium heat, turning the chicken over occasionally, to make sure the breasts are well-basted about 4 - 5 minutes. Remove from heat; stir in remaining 3 Tablespoons butter and chopped parsley. Taste the sauce to make sure it is well seasoned with salt and pepper. - Add marsala wine and chicken broth to a medium saucepan. Heat over medium-high heat, bring to a boil, then reduce heat to medium and let gently boil until reduced to 1 cup**, about 15 minutes.
- Meanwhile season both sides of chicken with salt and pepper. Dredge each side in flour.
- Melt 1 Tbsp butter with 1 Tbsp olive oil in a 12-inch skillet over medium-high heat. Add chicken pieces and let sear until cooked through (165 in center), turning once halfway through, about 10 - 12 minutes.

- Place the chicken breasts on a cutting board and use a sharp chef's knife to slice them horizontally into two even pieces (cutlets). Transfer the cutlets, one at a time, to a ziploc bag. Using a meat hammer or a heavy rolling pin, gently pound each cutlet to a 1/4-inch thickness.
- Transfer all the pounded cutlets to a bigger ziploc bag. Add salt and pepper to taste, seal and massage to season. Then, add the flour and massage again so every piece is thoroughly coated.
- Heat olive oil in a large skillet over medium-high heat until shimmering. Tap off the excess flour of each cutlet and place them in the skillet, cooking - turning once - until golden brown and cooked through, about 3 minutes per side. Remove and reserve in a plate.
- Add more olive oil if needed. Then, sauté the shallot and garlic until softened and fragrant, about 2-3 minutes.
- Stir in the butter and, once melted, add the mushrooms. Cook, stirring frequently, until the mushrooms release their juices and gain some color. Season with salt and pepper.
- Pour in the Marsala wine, scraping all the browned bits from the bottom of the skillet with a wooden spoon. Cook until reduced by half, about 2-3 minutes.
- Stir in the chicken broth and bring to a boil, cooking until the sauce thickens.
- Pour in the heavy cream and stir in the chopped parsley and butter. Taste and adjust seasoning as needed.
- Add the chicken cutlets back to the skillet, swirling them so they get coated in the sauce. Cook just to warm them through.

Marsala and chicken don't always have to perform the same scaloppine routine, where you sauté the pounded breast and deglaze it with the wine to make a sauce, perhaps adding some mushrooms and cream. You'll get so much more flavor if you use chicken thighs and let them marinate in the fortified wine with some Dijon and shallots before cooking. Transfer the poultry with mushrooms, carrots and more shallots to a sheet pan, roast them and dinner is done. This Marsala marinade is generous and versatile: It's veal, pork and lamb-friendly. - Prepare the marinade: Finely chop 2 shallots. In a large bowl, stir the chopped shallots with 3 tablespoons mustard, the honey, 2 1/2 teaspoons salt and 1 teaspoon pepper. Whisk in the Marsala then 1/4 cup oil. Refrigerate 1/4 cup marinade to use for the vinaigrette.
- Place the chicken and oregano sprigs in a large zip-top bag and add the remaining marinade. - Pat the chicken breasts dry and season them with salt and pepper. Heat large skillet over medium-high heat. When the pan is hot, add the oil and 1 tablespoon of the butter. - I’ve got another great recipe, to add to your (hopefully growing) list of great boneless, skinless chicken breast recipes. This one an Italian Classic - Chicken Marsala. I just started making this dish a few years ago, and it’s developed in a pretty consist hit in my house. And frankly, once you learn the cooking techniques…out will come pork marsala, veal marsala, scallop marsala…and at least a few marsalas I'm sure you can come up with.. The combination of mushrooms and the marsala wine, makes the dish earthy, rich and wonderful. Add to that, the fact that it’s easy to make and you got a winner. Hope you enjoy this chicken marsala recipe as much as I do. Recipe Overview & Keys to Success To make the best Chicken Marasala, just follow these few cooking techniques:
- Start by cooking the mushrooms, as they take the longest. And cook them thoroughly. My preference it to brown them well, where the are slightly crispy on the edges, most of the internal water is evaporated out and the flavors concentrated As with any chicken breast recipe, you need to cook the chicken breast well. Check out my tips for cooking chicken here. The sauce needs to be balanced between the marsala wine and the stock. Ideally you’ve got good homemade stock to use, but even if you don’t, use a 50/50 ratio, or even a bit less marsala.
