Panackelty - My Grandma's Baked Corned Beef and Potatoes image

My grandma's recipe, an easy and tasty way mid-week meal made with corned beef, potatoes and onions - simple and packed with flavour. Panackelty is a corruption of the word Pan Haggerty; Panackelty is a baked dish consisting of meat, usually corned beef, bacon or lamb chops, and root vegetables (mainly potatoes and onions) which is left to bake throughout the day in a pot on low heat. Originating in the Sunderland area of North East England, the dish was a favourite of working-class families and was traditionally eaten on Monday as the leftover meat and vegetables from the previous day's meal could be used. A local version of the popular dish of Shepherd's Pie or Cottage Pie. I have a vegetarian recipe for this recipe, Recipe #423399. Historical Note: The families of miners and shipyard workers would often prepare this meal as it could be slow cooked by a housewife during the day while she continued with other household tasks. A hungry worker coming home would also be especially satisfied with the high in fat and carbohydrate content of the dish. There are endless interpretations of the dish, with different families using different ingredients. Other popular panackelty concoctions will include bacon, sausages, black pudding, beef stock, and occasionally pork or lamb chops and additional vegetables such as carrots. The vegetarian version is called Pan Haggerty, and it is thought that the meat version is a corruption of that word.

1 (340 g) can corned beef, sliced
1 large onion, peeled and thinly sliced
3 -4 large potatoes, peeled and thinly sliced
2 beef bouillon cubes (dissolved in 3/4 pint of water)
salt and pepper

Steps:

  • Layer onions, corned beef and potatoes in an ovenproof dish, finishing with a top layer of potatoes, seasoning with salt and pepper between each layer. (My grandma used an old oval enamel dish). Pour over the oxo stock and cover with a lid or foil.
  • Cook in the pre-heated oven, (Gas mark 5/190C/380F) for an hour, removing the lid/foil for the last quarter of an hour, continue baking until the potatoes are browned and cooked.
  • Serve hot with fresh green vegetables.

500 g Thinly sliced potatoes
200 g Thinly sliced white onions
150 g Grated cheddar
Garlic salt, Pepper & Thyme leaves To season

Steps:

  • Coat an oven proof pan or dish with the 25g of salted butter
  • Separate the ingredients into 3 equal portions
  • Layer the pan with a third of the potatoes, followed by a third of the onions and cover with a third of the cheese
  • Season the layer with the garlic salt, pepper and thyme leaves
  • Repeat 3 times in total
  • Place in pre-heated oven at 180°C for 50 minutes

Irish Pan Haggerty is a delicious Irish twist on a classic Northumberland potato dish using Dubliner cheese. It's easy to make and will definitely wow those at your St. Patrick's Day gathering.

3 tbsp unsalted butter, divided
3 cups onion, thinly sliced (about 10 ounces)
4 cups Russet Potatoes, peeled and thinly sliced (about 1-1/4 pounds) (See Tip 1)
1 cup (4 ounces) Dubliner cheese, shredded (See Tip 2)
1/2 teaspoon Kosher salt
1/8 teaspoon freshly ground black pepper
Sliced green onion tops for garnish (optional)

Steps:

  • Preheat oven to 400° F.
  • Melt 1 tablespoon butter in a large skillet over medium heat. Add onions, and cook until soft, but not browned, about 15 minutes.
  • Melt 2 tablespoons butter In a 10-inch oven proof skillet over medium heat. Remove from heat. Arrange 1/3 of the potatoes in a layer, overlapping the slices. Top with half of the onions, and half of the cheese, Sprinkle on 1/4 teaspoon salt and half of the pepper. Repeat layering with half of remaining potatoes, the rest of the onions, and the rest of the cheese. Sprinkle with remaining salt and pepper.
  • Top with remaining potatoes. Heat over medium heat for 15 minutes or until bottom starts to brown.
  • Top with piece of parchment paper, and press down to compact the layers. Bake at 400° F for 15 minutes. Remove from oven; top with piece of parchment paper, and press down to compact the layers. Return to oven for 15 more minutes. (See Tip 3)
  • Using a silicon spatula, loosen the edges and bottom of the Irish Pan Haggerty from the pan. Quickly flip onto a cutting board. Cut into wedges and serve. (See Tip 4)
  • Yield: 4 servings.

A classic British potato dish from Northumberland, originally made with lard. The original recipe had Lancashire cheese, "a creamy-white cheese with a crumbly texture and tangy taste" but Cheddar or Gruyere are acceptable alternatives. I've listed Cheddar in the ingredients. I've also added garlic and thyme. Adapted from a 'Pan or Wok' recipe card by International Masters Publishers.

500 g waxy potatoes
1 onion, finely sliced
2 garlic cloves, finely chopped
1/2 teaspoon dried thyme
100 g cheddar cheese
1 tablespoon sunflower oil
salt & freshly ground black pepper, to taste
fresh flat leaf parsley, chopped, to garnish

Steps:

  • Peel the potatoes, cut into very thin slices, rinse under cold water and then pat dry with paper kitchen towel.
  • Over a medium-low heat, heat the oil in a non-stick pan which has a lid and which will fit under the grill.
  • Add a third of the potatoes and spread in a single layer, then season to taste.
  • Add half the onions, half the garlic, half the thyme and spread evenly. Top with one third of the cheese. Then layer the remaining potatoes, onions, garlic and thyme, finishing with a layer of potatoes.
  • Cover the pan, cook over a medium heat for 30 minutes or until the base is golden brown, and the potatoes onion and garlic are tender.
  • Preheat the grill to medium, top the potatoes with the remaining cheese, place the pan under the grill and grill until the cheese melts and the topping is golden. Garnish with parsley and serve hot.
  • Serve as a heart main dish with a salad and steamed vegetables or as a side-dish with grilled chops or kebabs and a salad. If served as a side dish, it would probably serve 5-6.

30g (1oz) butter, dripping or lard
500g (1lb) potatoes (such as Maris Piper, Desirée or Romano)
1 onion
Salt and freshly ground black pepper
100g (3½oz) Northumberland, Lancashire Original or Cheddar cheese, grated

Steps:

  • Peel and thinly sliced the potatoes. Pat the slices dry with a cloth to remove any starch. Peel and thinly slice the onion.
  • Heat the butter (or dripping, or lard) in a heavy-based frying pan. Remove the pan from the heat and arrange in it a layer of potato, then onion, seasoning and cheese. Repeat the layering twice.
  • Cover pan with a lid, or foil, and cook over a gentle heat for 20-30 minutes or until potatoes are tender (test with a knife).
  • Take off the cover and finish the dish under a hot grill to brown the top. Serve from the pan with a green salad.
