12 scallions
1/2 tablespoon unsalted butter
1/2 tablespoon olive oil
1/2 teaspoon coarse sea salt, or to taste

Steps:

  • Bring a large saucepan half-full of well-salted water to a boil. Trim the scallions and cut off all but 2 inches of their dark green tops. Place them in the boiling water for 1 minute. Immediately drain the scallions and plunge them into a large bowl of ice water to stop the cooking and set their color. When cooled, drain again and dry between layers of paper towels.
  • Place a medium skillet over medium-high heat. Add the butter and oil. When the butter has melted and the pan is very hot, add the scallions. Cook, tossing gently, until the scallions just begin to brown, about 1 minute. Immediately sprinkle them with sea salt and transfer to dinner plates or a small platter and serve.

2 teaspoons unsalted butter
2 teaspoons olive oil
Kosher salt

Steps:

  • Remove the small side muscle from the scallops, rinse with cold water and thoroughly pat dry.
  • Add the butter and oil to a 12 to 14-inch saute pan on high heat. Salt and pepper the scallops. Once the fat begins to smoke, gently add the scallops, making sure they are not touching each other. Sear the scallops for 1 1/2 minutes on each side. The scallops should have a 1/4-inch golden crust on each side while still being translucent in the center. Serve immediately.

1 cup dried red Thai or cayenne chiles (stems removed)
1/2 cup shredded dried unsweetened coconut
2 tablespoons white sesame seeds
1 tablespoon coriander seeds
1 tablespoon cumin seeds
1 tablespoon black peppercorns
1 teaspoon black or yellow mustard seeds
1 teaspoon fenugreek seeds
4 blades mace
2 fresh or dried bay leaves
1 teaspoon canola oil
2 tablespoons ground Kashmiri chiles (or 1/2 tablespoon cayenne (ground red pepper) mixed with 1 1/2 tablespoons sweet paprika)
1 pound large sea scallops ((about 12 to 15 per pound))
1/2 teaspoon ground turmeric
1/2 cup unsalted dry-roasted peanuts
2 tablespoons canola oil
6 medium-size cloves garlic (finely chopped)
1 pound baby spinach leaves (well rinsed)
1 tablespoon Kolhapuri masala
1 teaspoon coarse kosher or sea salt

Steps:

  • Combine all the ingredients except the ground Kashmiri chiles in a medium-size bowl, and stir to coat with the oil.
  • Preheat a medium-size skillet over medium heat. Pour the oiled spices into the skillet and roast the blend, stirring constantly 3 to 4 minutes.
  • Immediately transfer the spices to a plate to cool. Once they are cool to the touch, place half of the spices in a spice or coffee grinder and grind until the texture resembles that of finely ground black pepper. Pour the ground mixture into the same medium-size bowl and grind the remaining half. Combine. Stir in the ground Kashmiri chiles.
  • Store in a tightly sealed jar, away from excess light, heat, and humidity for up to 2 months.
  • Combine the scallops with the turmeric in a medium-size bowl. Refrigerate, covered, for 30 minutes or as long as overnight, to allow the flavor to permeate the thick muscle (since there is nothing acidic to break down the mollusk's texture, it's fine to marinate them overnight).
  • Pour the peanuts into the bowl of a food processor and pulse until they have the consistency of coarse breadcrumbs.
  • Heat the oil in a large skillet over medium heat. Add the scallops, marinade and all (there won't be much at the bottom of the bowl), arranging them in a single layer. Sear the scallops' two broad sides until light brown, 3 to 5 minutes per side. Transfer them to a plate.
  • Add the garlic to the same skillet and stir-fry until it is light brown, about 1 minute. Pile in the spinach leaves, cover the skillet, and cook until the spinach is wilted, 5 to 8 minutes. (As the steam rises from within, the leaves will sweat and release their liquid, which will deglaze the pan and build yet another layer of flavor.) Stir in the masala and salt.
  • Add the scallops (including any liquid pooled in the plate), and cover them with a blanket of the wilted greens. Cover and cook, without stirring, until the scallops are firm to the touch but not rubbery, 3 to 5 minutes.
  • Transfer the scallops to a serving platter. Add the peanuts to the spinach in the skillet, and stir to combine. Simmer, uncovered, stirring occasionally, to allow the nuts to absorb the excess liquid and thicken the sauce, 2 to 4 minutes.
  • Spoon the spinach-peanut mixture over the scallops, and serve.

4 teaspoons olive oil
1 pound salmon fillet (about 1 1/2 inches thick), skinned and bones removed
1/4 cup mayonnaise
1/3 cup finely chopped celery
2 teaspoons fresh lemon juice
1 1/2 teaspoons chopped fresh mint leaves
4 (1/2-inch-thick) slices good-quality whole-wheat bread
2 cups bite-size pieces frisée or mesclun (1 ounce)

Steps:

  • Heat grill pan over moderately high heat until hot but not smoking. Meanwhile, toss scallions with 2 teaspoons oil and season with salt and pepper. Pat salmon dry and coat with remaining 2 teaspoons oil and season with salt and pepper.
  • Cook scallions in grill pan, turning occasionally, until soft and slightly charred, about 6 minutes, then transfer to a cutting board to cool.
  • Add salmon to grill pan and cook, turning over once, until just cooked through, about 12 minutes total. Transfer with a metal spatula to a plate and cool slightly, then gently flake.
  • While salmon is grilling, finely chop scallions and stir into mayonnaise with celery, lemon juice, and mint. Season with salt and pepper.
  • Toast bread and spread lightly with some of scallion mayonnaise. Divide salmon among toasts and top with dollops of scallion mayonnaise and pieces of frisée.

2 (8-inch) wooden skewers, soaked in water for 30 minutes

Steps:

  • Toss scallions with oil, salt, and pepper in a large bowl. Line up scallions side by side on a work surface and thread skewers, 1 at a time, crosswise through all scallions to form a solid rectangle. (Skewers should be inserted about 2 inches from each end.) Grill on lightly oiled grill rack, uncovered, turning over once or twice, until softened and charred in patches, 4 to 5 minutes total. Transfer scallions to a platter and squeeze lemon evenly over them, then remove skewers.

6 tablespoons olive oil
2 tablespoons lemon juice
1 bunch fresh sage
Kosher salt and freshly ground black pepper to taste
1/2 cup dry white wine
1 tablespoon unsalted butter

Steps:

  • Place the veal chops in a large nonreactive pan. Whisk together 3 tablespoons of the olive oil and the lemon juice. Stir in 10 coarsely chopped sage leaves. Pour the mixture over the chops, cover and refrigerate for several hours, turning the chops occasionally.
  • When ready to cook, preheat the oven to 200 degrees and place 2 large skillets over high heat. Remove the chops from the marinade and remove and discard any pieces of sage that may be clinging to them. Sprinkle each chop generously with salt and pepper. Divide the remaining 3 tablespoons oil between the pans. When the oil is very hot, place 2 chops in each pan and cook until well browned on one side, about 5 minutes. Turn and cook until the other side is browned and the chops are cooked to the desired doneness, 4 to 6 minutes, depending on their thickness. Place the chops on a platter, cover with foil and put them in the oven to keep warm while you prepare the sauce.
  • Pour the grease out of 1 pan and add the wine. Add 5 chopped sage leaves and place over medium heat. Cook, scraping the bottom of the pan, until the wine has reduced to about 1/4 of its original volume. Remove from the heat and whisk in the butter. Season to taste with salt and pepper.
  • Transfer the veal chops to 4 plates and pour the sauce over them. Garnish each plate with a few whole sage leaves and serve immediately with potato galettes (see recipe) and pan-grilled scallions with sea salt (see recipe) if desired.

Steps:

  • On a plate, combine flour, salt, and pepper.
  • Dredge scallops in the flour mixture.
  • In a heavy skillet, heat the butter and oil and saute the scallops very quickly until golden brown, about 4 minutes.
  • Remove scallops with slotted spoon and place on a warmed serving dish.
  • Saute the scallions in the same pan over medium-high heat for 5 more minutes; they should not brown.
  • Remove with a slotted spoon and sprinkle over the scallops; keep warm.
  • Pour off excess oil from the pan and add the wine to deglaze the pan over the highest heat until the wine is reduced by half.
  • Pour the sauce over the scallops and sprinkle with the herbs.
  • Serve immediately with fresh lemon wedges.
