I love doing carrots like this, as the simple flavour combination teamed with the clever cooking technique gives you something that makes you go wow. Carrots are sometimes seen as everyday, but not here - these bad boys are special.

Steps:
- 1. Trim and wash the carrots, leaving a little of the green tops on so they look pretty.
- 2. Melt the butter and the dripping, if you've got it, in a large frying pan over a medium heat. Crush the unpeeled garlic cloves with the flat side of your knife, then add to the pan, turning after 1 minute. 3. Sprinkle in the thyme sprigs (they'll crackle a bit), squeeze in the clementine juice and add the honey, bay and a splash of water. 4. Add the carrots, sprinkle with a good pinch of sea salt and black pepper, then jiggle the pan to coat them in all that flavour. 5. Cover, reduce the heat to medium-low and cook for 10 to 15 minutes, or until the carrots are tender. 6. When the time's up, uncover the pan and, being very vigilant, simply reduce the moisture away until you get a beautiful clementine glaze and the carrots start to catch and caramelize in a lovely way, turning often. 7. Once you think they look great, simply serve straight away, or you can remove them from the heat and crack on with your other jobs, reheating them when needed. Delicious.

PAN SEARED PORK CHOPS WITH GLAZED CARROTS
These chops are nice and tangy. You could also try this with NY Strip, mouth watering Ribeye, or T-Bone steak. A special thanks to our Zaar friend PaulaG for her help with revising the recipe. :) A great way to ensure tender and moist chops is to soak them in a brine of 1 cup milk to 1/2 Tbs salt for at least 1 hour before using in a recipe.

HONEY BUTTER GLAZED ROASTED CARROTS : 6 STEPS (WITH ...
From instructables.com
- Ingredients and Tools. Ingredients: 2 lbs of carrots (907g), doesn't have to be exact. 3 tbsp butter (42g) 3 tbsp honey (63g) Pinch of salt. Pinch of pepper.
- Preheat and Rinse. Preheat the oven to 400F/205 C. Rinse the carrots really well. If you like you can peel them and cut off the tops and bottoms. I normally do not peel or cut the tops and bottoms off, I like the more rustic look that it gives.
- Honey Butter. Melt the butter and add the honey and mix really well with a fork. You can melt the butter in the microwave for about 30 seconds then add the honey.
- Baste Turn Baste and Sprinkle. Baste the first side of the carrots with the honey butter, then sprinkle on some salt and pepper and even garlic powder if you like.
- Roast, Cool, Serve. Place the carrots in the oven, middle rack position, and roast/bake them for 25 to 60 minutes. The time will vary greatly depending on the size of your carrots.
