2 strip steaks (each about 1 inch thick), room temperature
Kosher salt and freshly ground pepper
1 teaspoon unsalted butter
Simple Steak Sauce, optional

Steps:

  • Heat a large heavy-bottomed skillet (preferably cast iron) over high 5 minutes. Generously season steaks with salt and pepper. Add 1/2 teaspoon butter to pan, then immediately top with one steak. Repeat with remaining 1/2 teaspoon butter and steak. Cook without moving steaks until a golden brown crust forms, 3 to 4 minutes. Turn and cook 2 minutes more for rare, or 3 to 4 minutes more for medium-rare. Transfer to a cutting board and let rest 5 minutes. Slice steaks against the grain; serve with sauce, if desired.
  • Heat a 10- or 12-inch cast-iron skillet over high heat. Season the steaks liberally with salt and pepper. Seconds before adding a steak, drop 1/2 teaspoon of the butter into the pan and immediately top with the steak. Repeat with the remaining steak. Sear for 3 minutes without moving the steak (to form a crust). Turn and cook for 2 minutes for rare or 3 to 4 for medium rare. Remove the steaks from the pan and let them rest on a board or platter for a few minutes before serving.

Steps:

  • Preheat the oven to 450 degrees F.
  • A half-hour before cooking, remove steak from refrigerator.
  • Heat a large skillet over high heat.
  • Pat steak dry and season generously with salt and pepper.
  • Add oil to hot skillet and when it begins to smoke add steak.
  • Reduce heat slightly and cook steak until browned, about 4 minutes on each side.
  • Transfer skillet to the oven.
  • Roast until an instant-read thermometer inserted sideways into the steak registers 120 degrees F for medium-rare, about 6 to 8 minutes.
  • Transfer steak to a cutting board and let it rest for 10 minutes. (This is a very important step!).
  • Cut steak from the bone and carve meat across the grain.

1/4 teaspoon onion powder
1/8 teaspoon garlic powder
1/8 teaspoon fresh ground black pepper
1/8 dried thyme
1/8 teaspoon smoked paprika
¼ teaspoon Kosher salt
1 tablespoon butter
1 tablespoon olive oil

Steps:

  • Thaw frozen t-bone steak in fridge overnight.
  • Remove steak from fridge 2 hours before cooking to evenly thaw.
  • Season steak with onion powder, garlic powder, ground black pepper, dried thyme, paprika and Kosher salt one hour before cooking.
  • Pan fry or grill depending on your preference - rare, medium or well done. Follow chart above regarding internal temperature.
  • Melt butter in pan over medium heat, then add olive oil.
  • Pan should be hot when steak is placed. Steak should sizzle when it hits the pan.
  • Pan fry and sear for about 3 - 6 minutes each side for rare, medium or well done.
  • When done, let steak sit for 2 minutes before serving to retain its juices and reached its internal temperature.

  • About 1/2 hour before cooking the steak, set steak on counter to bring to room temperature. Preheat a large cast iron skillet over medium heat. Lightly brush the steak all over with oil and season generously with salt and pepper. Raise the heat to high, add the steak and cook, turning once, until well browned. It should take about 7 minutes for the first side, and 4 minutes on the second side, for medium-rare. Hold the steak with tongs and sear the edges. (An instant-read thermometer inserted perpendicularly into the steak registers 125 degrees F for medium rare.) Transfer the steak to cutting board and cover loosely with foil. Let rest for 5 minutes. 1 tbsp. Lawry's seasoning salt
3 tbsp. lemon and pepper seasoning
1 tsp. kosher salt
Freshly ground black pepper, to taste
2 pieces (about 8 ounces each) ribeye steak
1 tbsp. olive oil
1 tbsp. butter

Steps:

  • Combine the seasoning salt, lemon and pepper seasoning and kosher salt together in a small bowl. Add lots of black pepper, to taste, and mix to create a rub for your steaks.
  • Sprinkle some of the rub on one side of the steaks and rub it all over, then flip and rub the remaining seasoning all over the steaks.
  • Bring a skillet to medium heat. Once hot, add the olive oil and butter. Cook until the oil is hot and the butter is beginning to brown. With tongs, set the steaks right into the sizzling butter/oil mixture.
  • Cook for about 2 minutes on the first side, then flip and turn the heat down to a medium-low to finish off the cooking. Cooking it for about 2 ½ minutes on the second side will result in a medium-rare piece of meat. Alter your cooking time a little to achieve a steak that is a little less pink in the center.
  • Let the steaks rest for a couple minutes before digging in or slice the steaks for a nice presentation and drizzle with the leftover pan sauce from the bottom of the skillet. Serve with mashed potatoes and a side salad.

1 tablespoon olive oil
¼ cup red wine
2 teaspoons all-purpose flour
¾ cup reduced-sodium beef broth
1 teaspoon chopped fresh rosemary
1 tablespoon coarse-grained Dijon mustard

Steps:

  • Season the steak with salt and pepper to taste. Heat the olive oil in a skillet over medium-high heat. Cook the steak until nicely browned on the outside, and nearly cooked to your desired degree of doneness on the inside, 3 to 4 minutes per side for medium-rare. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Remove the steak from the pan, and tent loosely with foil to keep warm.

  • Cut the meat from the bone, then slice into 1/3-inch thick pieces. Serve with the rosemary sauce.

1/4 cup (60ml) vegetable or canola oil
3 tablespoons (45g) unsalted butter
6 sprigs thyme or rosemary (optional)
1/2 cup finely sliced shallots (about 1 large; optional)

Steps:

  • Carefully pat steak dry with paper towels. Season liberally on all sides, including edges, with salt and pepper. If desired, let steak rest at room temperature for 45 minutes, or refrigerated, loosely covered, up to 3 days (see notes).
  • In a 12-inch heavy-bottomed cast iron skillet, heat oil over high heat until just beginning to smoke. Carefully add steak and cook, flipping frequently, until a pale golden-brown crust starts to develop, about 4 minutes total.
  • Add butter, herbs (if using), and shallot (if using) to skillet and continue to cook, flipping steak occasionally and basting any light spots with foaming butter. Use a spoon to pick up butter and pour it over steak, aiming at light spots.
  • Continue flipping and basting until an instant-read thermometer inserted into thickest part of tenderloin side registers 120 to 125°F (49 to 52°C) for medium-rare or 130°F (54°C) for medium, 8 to 10 minutes total.
  • Immediately transfer steak to a large heatproof plate and pour pan juices on top. Let rest 5 to 10 minutes. Carve and serve.
