8 ounces shucked scallops
2 teaspoons salt
8 ounces fresh asparagus spears
3 tablespoons peanut oil or 3 tablespoons sesame oil
2 ounces canned bamboo shoots, drained, rinsed, and julienned or 2 ounces fresh bamboo shoots, boiled in water for 30 minutes, drained and julienned
1 small carrot, finely sliced
4 slices fresh gingerroot
1 pinch white pepper
2 tablespoons shaoxing rice wine
2 tablespoons chicken stock
1 teaspoon sesame oil

Steps:

  • Sprinkle the scallops with half the salt. Let stand for 20 minutes.
  • Trim the asparagus, discarding the tough ends. Cut into 2-inch pieces and blanch in a large pan of boiling water for 30 seconds. Remove and drain on paper towels. Set aside.
  • Heat 1 tablespoon of the vegetable oil in a preheated wok or deep pan over high heat. Add the scallops and stir-fry 30 seconds. Remove, drain on paper towels, set aside.
  • Heat the remaining vegetable oil in the wok or pan over high heat. Add the ginger and stir-fry until fragrant. Return the scallops and vegetables to the pan and add the pepper, rice wine, and stock. Cover and simmer for 2 minutes, then toss through the sesame oil and serve immediately.

2 lbs large scallops, tough ligament removed from side of each if attached
1/2 teaspoon black pepper
3/4 teaspoon salt
1/3 cup dry white wine
2 teaspoons white wine vinegar
1/4 cup unsalted butter, cut into tablespoon pieces

Steps:

  • Trim asparagus, then cut stems into 1/4-inch-thick diagonal slices, leaving tips whole.
  • Heat 1 tablespoon oil in a 12-inch heavy nonstick skillet over moderately high heat until hot but not smoking, then sauté asparagus, stirring occasionally, until just tender, 5 to 6 minutes. Transfer with a slotted spoon to a plate, reserving skillet off heat (do not clean).
  • Pat scallops dry and sprinkle with pepper and 1/2 teaspoon salt. Add 1 tablespoon oil to skillet and heat over moderately high heat until hot but not smoking, then sauté half of scallops, turning over once, until browned and just cooked through, 4 to 6 minutes total. Transfer scallops with tongs to another plate as cooked.

3/4 cup chicken broth, reduced sodium
1 tablespoon cornstarch
1 teaspoon light soy sauce
12 ounces sea scallops, halved
1 cup white mushroom, trimmed and sliced
1 garlic clove
1 teaspoon dark sesame oil
1 cup cherry tomatoes, halved
3 scallions, chopped

Steps:

  • Boil one inch of water in a large saucepan.
  • Add the asparagus and cook, covered for 3-5 minutes (Do not overcook).
  • Drain and rinse under cold water.
  • In a small bowl, combine the chicken broth, cornstarch and soy sauce, and blend until smooth.
  • Heat a large non-stick skillet or wok over high heat until hot.
  • Fold in the scallops, mushrooms, garlic and sesame oil and stir-fry for about 4 minutes, or until scallops are opaque throughout.
  • Stir in the cornstarch mixture and cook, continuing to stir until the sauce thickens and boils.

1 pound fingerling potatoes, washed and sliced lengthwise
1/4 cup olive oil
Salt and freshly ground black pepper
1 pound asparagus, washed, tough ends removed
1 tablespoon extra-virgin olive oil
12 to 16 jumbo sea scallops, or approximately 1 1/2 pounds
Salt and freshly ground black pepper
9 tablespoons clarified butter
1 1/3 ounces hazelnuts, toasted and coarsely chopped
2 tablespoons lemon juice
2 tablespoons chopped fresh parsley leaves, plus more for garnish
1 or 2 drops white truffle oil, optional

Steps:

  • For the potatoes: Preheat oven to 400 degrees F.
  • In a large bowl, toss the fingerling potatoes with the olive oil and season with salt and pepper, to taste. Add the potatoes to a roasting pan and bake for about 25 minutes. Test with fork for tenderness. Remove them from oven to a bowl and set aside.
  • For the asparagus: Bring a large pan of salted water to a boil over high heat. Add the asparagus and blanch until they become bright green, about 2 minutes. Remove and plunge into an ice bath or rinse under cold water.
  • For the scallops: Heat a nonstick saute pan over medium heat until very hot and add the olive oil. Season scallops lightly with salt and pepper. When oil is hot, add the scallops and saute the first side until golden brown, approximately 2 minutes. Turn the scallops over, and after 1 minute, add the butter and the hazelnuts. When scallops are seared, transfer them to a plate and keep warm.
  • Add lemon juice to the butter and hazelnuts. When the butter has browned add the 2 tablespoons of the chopped parsley. (Add 1 or 2 drops of white truffle oil to the butter, if desired.)
  • Toss the potatoes and asparagus in the brown butter until heated through. Transfer the vegetables to a serving platter. Position the scallops over the vegetables and garnish with chopped parsley. Drizzle remaining brown butter over scallops and serve.

WHITE WINE REDUCTION:

1 teaspoon Dijon mustard
1 garlic clove, minced

6 -8 slices streaky bacon

Steps:

  • The amount of scallops depends on their size, and of course, how much you want to eat!
  • Scallops (no shell) with their roe if you can get them, as the nice orange colour of the roe looks good and more important it tastes good!
  • Streaky bacon is best because of the fat in it. You want about 3 or 4 rashers each.
  • Fry the bacon in a pan over a moderate heat until nice and brown and only just starting to get crispy.
  • With the bacon still in the pan, add the scallops and move them about in the pan to get them nicley coated with all the pan juices. They will only take a couple of minutes to cook.
  • It's as simple as that! Serve immediately.
