GRILLED SALMON WITH SPICY MANGO SALSA
Toss diced mango with habanero, lime and cilantro for a spicy relish for gorgeous grilled salmon.

Steps:
- Preheat a grill to medium-high heat.
- Crush the garlic clove, sprinkle with a pinch of salt, and mash into a coarse paste using flat side of a large knife. Mix the garlic paste with the cilantro, oil, habanero, mango, lime juice and scallions in a medium bowl. Season with salt and as much of the remaining habanero as desired for spiciness. Set aside.
- Pat the fish dry and sprinkle with salt and pepper. Lightly oil the grill grates. Place the salmon, skin side-up, on the grill and cook until well-marked, 3 to 4 minutes. Turn the salmon and continue to cook until the fish is just cooked through, about 3 to 4 minutes more.
- Serve the salmon with the salsa and a lime wedge.

- Preheat the oven broiler. Line a broiler pan with foil.
- Broil salmon steaks on the prepared pan 12 minutes, or until easily flaked with a fork.
- Heat olive oil in a medium saucepan over medium heat, and saute onion until tender. Stir in garlic, tomatoes, and cilantro. Cook until heated through, 1 to 2 minutes, and remove from heat. Mix in the mangos. Serve over the salmon steaks.

Put the oil and butter in a non-stick frying pan over a medium heat, swirling around the pan until melted and foaming, then turn up the heat. Once the butter starts bubbling, add the salmon fillets to the pan, skin-side-down, and fry for 3 mins until crisp. - To make salsa, first whisk lime juice and honey in medium sized bowl. Add mango, cucumber, onion, and jalapeno, and stir until well blended. Seal container and refrigerate for at least 1 hour before serving, to allow the flavors to mix. Season with salt to taste.
- To prepare salmon, mix cumin, 1/2 tsp salt, and pinch of cayenne pepper in a small bowl.
- Lightly coat both sides of the salmon in olive oil (spray or with brush).
- Sprinkle spice mixture on both sides of Salmon.
- Heat a small non-stick skillet over medium-high heat. Cook the salmon fillets until the outsides are lightly browned (1-2 minutes per side, depending on thickness). Then lower heat and cook until the fillets are pale-pink throughout (2-3 minutes per side).
- Season with salt, pepper, cayenne, to taste. Transfer fillets to a plate, and top each with 2 Tbsp of salsa mixture.

- In a medium bowl combine the mango, avocado, red onion, jalapeno, cilantro, and juice from ½ of a lime. Set aside.
- In a small bowl, whisk together 2 tablespoons of the olive oil, the juice from the remaining ½ lime, a pinch of salt, and few cracks of black pepper. Set aside.
- Cut the salmon into 4 equal pieces. Use a pair of clean tweezers to pluck out any obvious bones. Season lightly with salt and black pepper.
- Heat the remaining 1 tablespoon of olive oil in a cast iron pan or other heavy skillet over medium-high heat. Put the salmon into the pan, skin-side-up, and cook until the flesh of the fish turns opaque about 1/3 of the way up the side, 4 to 6 minutes. Turn it over and cook the second side until the fish is just cooked through, another 4 to 6 minutes depending on the thickness of the filets. - Pull the salmon out of the fridge and set on the counter to come to room temperature while you prepare the cucumber mango salsa.
- In a large bowl, combine the diced mango, bell pepper, cucumber, red onion, and parsley. Add the juice and zest of a lime, olive oil, and salt and pepper to taste. Mix the ingredients with a wooden spoon until incorporated and set aside.
- Using a sharp knife, slice the salmon fillet into 4 equal portions. Pat each salmon fillet dry with paper towels, then season the flesh with salt and pepper.
- Heat a cast iron or non-stick skillet over medium high heat and add about a tablespoon of avocado oil. Heat the oil until it shimmers. Add the fillets to the pan skin-side down and then do not touch them. Cook over medium-high heat for 3-7 minutes (depending on the thickness of the fillets), or until the flesh is mostly light pink instead of translucent.

- Preheat broiler to high and place the oven rack on the top position, about 4 to 6 inches below the broiler.
- Line a sheet pan with foil for easier cleanup, slightly roll up the edges of the foil to prevent the liquids from running to the sides of the pan, place the salmon filets on the pan, evenly drizzle with olive oil, evenly season with Tajin, salt and pepper, evenly drizzle with lime juice, and broil for about 5 minutes, or until salmon is nearly done to your liking.
- Remove the pan from the oven, optionally and evenly drizzle with honey, return the pan to the oven in the opposite direction for the most even cooking, and broil for about 2 additional minutes, or until done.
