Provided by Natasha Bull

Categories     Main Course

Time 30m

Number Of Ingredients 11

1 pound fresh salmon (cut into 4 pieces)
1/4 teaspoon garlic powder
Salt & pepper (to taste)
Flour (for dredging)
1 tablespoon olive oil
1 tablespoon butter
1/2 cup chicken broth or dry white wine
1 teaspoon lemon juice
1/2 teaspoon Dijon mustard
1 cup heavy/whipping cream
1 tablespoon fresh dill (chopped finely)

Steps:

  • Cut your salmon into 4 pieces. Sprinkle each piece with the garlic powder and season with salt & pepper. Coat each piece in flour on all sides.
  • Add the olive oil and butter to a skillet over medium-high heat. When the pan is hot, add the fish. Cook the salmon for 3-4 minutes/side or until it's nicely browned. Don't overcook - the salmon shouldn't be cooked fully yet. Remove fish to a plate and set it aside.
  • Add the chicken broth, lemon juice, and Dijon mustard to the skillet. Stir until mustard has been incorporated, and let it bubble for 1-2 minutes.
  • Add the cream to the pan, along with the dill.
  • Add in the salmon and let it cook for another 5 minutes or so until the sauce has thickened a bit and the fish has cooked through. Season with extra salt & pepper if needed. I like to serve it with fresh chopped parsley and a squeeze of lemon juice over the fish.

Provided by Chungah Rhee

Categories     entree

Yield 4 servings

Number Of Ingredients 12

4 (6-ounce) salmon fillets
Kosher salt and freshly ground black pepper, to taste
1 1/2 tablespoons unsalted butter
2 cloves garlic, minced
1 medium shallot, diced
2 tablespoons all-purpose flour
1/4 cup dry white wine*
3/4 cup chicken stock
3/4 cup half and half
3 cups baby spinach
2 tablespoons chopped fresh dill
1 lemon, cut in wedges

Steps:

  • Using paper towels, pat both sides of the salmon fillets dry; season with 1 teaspoon salt and 1/2 teaspoon pepper. Melt butter in a large skillet over medium heat. Add salmon fillets to the skillet, skin side up, and cook until golden brown and a crust has formed, about 4-5 minutes. Using a fish turner, flip, and cook for an additional 4-5 minutes, or until desired doneness. Remove and keep warm. Reduce heat to low; add garlic and shallots, and cook, stirring frequently, until fragrant, about 2 minutes. Whisk in flour until lightly browned, about 1 minute. Stir in wine, scraping any browned bits from the bottom of the skillet. Stir in chicken stock and half and half until slightly thickened, about 2-3 minutes; season with salt and pepper, to taste. Stir in spinach until wilted, about 1-2 minutes. Return salmon to the skillet; sprinkle with dill. Serve immediately with lemon wedges.

  • Very carefully flip salmon. If the skin is sticking to the pan give it more time to cook. It should release easily from the pan. Cook for 1-3 minutes on this side until the salmon looks opaque.

  • Prep Salmon: Take out the salmon fillet 15 minutes prior to cooking. Pat dry the salmon fillets using a paper towel or a clean dish towel. This will prevent them from sticking to the skillet.
  • Heat Oil: Heat a skillet over medium-high heat. Use a cast iron skillet or a stainless steel skillet. Add the olive oil and butter and heat until butter melts and starts to bubble. Make sure the oil and butter coats the entire surface of the skillet.
  • Season Fillets: Season the salmon with salt and pepper just before adding to the hot skillet, then add the fillets to the pan. If using fillets with skin, place skin-side down first. I usually can add all 4 fillets at once and my skillet is 10 1/4 inches in diameter.
  • Cook: Cook the fillets for about 6 to 7 minutes for the first side. The first side takes the longest to cook. As the fish cooks you'll notice the color of the fillet will begin to lighten, starting at the bottom.

  • Check the salmon fillets for grates, season with salt and pepper on all sides, then dredge in flour.
  • Heat the frying oil over high heat, then add the salmon fillets. Cook the salmon fillets for about 1-2 minutes per side (on all four sides). If your pan has a thin bottom you may need to reduce the heat to medium. The fillets are ready to be flipped when they don't stick to the pan anymore. Make sure that the pan and oil are well-heated.
  • Pour off the remaining oil, and add the butter to the pan. When it's melted, add finely chopped garlic and cook for 30 seconds, then whisk in the flour.
  • Add the broth, cream, milk, lemon juice, and mustard. Cook for a couple of minutes until the sauce is thickened.
