Home-Fried Potatoes with Smoked Paprika image

Pimenton, or smoked paprika, gives these potatoes an unexpected flavor. Any of the several varieties of the spice -- ranging from sweet to hot -- will work well, so take your pick.

Time 30m

Number Of Ingredients 6

1/4 cup plus 1 tablespoon olive oil
3 russet potatoes, cut into 1-inch pieces
Coarse salt
2 onions, sliced into rings
1/2 teaspoon pimenton
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Heat 3 tablespoons oil in a large nonstick skillet over medium-high heat. Cook potatoes, covered, for 5 minutes. Season with salt. Add remaining 2 tablespoons oil and the onions; stir. Reduce heat to medium, and cook, covered, for 5 minutes more. Uncover, and cook, tossing often, until potatoes and onions begin to brown, about 8 minutes.
  • Sprinkle with pimenton, and cook until potatoes and onions are golden brown and tender, about 8 minutes more. Toss with parsley, and season with salt.

PAN-FRIED LEMON POTATOES

Categories     side-dish

Time 55m

Yield 6 servings

Number Of Ingredients 6

1 1/2 pounds small Yukon gold potatoes
3 cloves garlic, smashed and peeled
2 sprigs fresh rosemary plus 1/2 teaspoon chopped, for the seasoning salt
1 teaspoon lemon zest plus 1/2 lemon
Kosher salt
1/2 cup olive oil

Steps:

  • Place the potatoes in a large sauce pan and cover with cold water. Add the garlic, rosemary sprigs and lemon half to the water and season well with salt. Place over medium-high heat and bring to a boil. Reduce the heat to a simmer and cook until the potatoes are tender when pierced with a fork, about 15 minutes. Drain well and immediately cut the potatoes into halves. Place on a plate to allow the steam to escape. Allow to cool for 15 minutes.
  • Meanwhile, to make the seasoning salt, mix together the lemon zest, chopped rosemary and 1/2 teaspoon salt in a small bowl. Set aside
  • Heat a large skillet over medium-high heat. Add the oil and heat until it shimmers when it swirls in the skillet. Add the potatoes cut-side down to the skillet. Do not overcrowd the skillet. This may be done in 2 batches. Cook until the bottom of the potatoes are a deep golden brown, 3 to 4 minutes. Using a metal spatula, flip the potatoes and cook on the second side for an additional 3 minutes. Remove to a paper towel-lined plate and drain well. Sprinkle with the seasoning salt and serve warm.

LEMON ROASTED POTATOES WITH SMOKED PAPRIKA AND ROSEMARY

Lemon Roasted Potatoes With Smoked Paprika and Rosemary image

A potato doesn't need much else other than oil, salt and a hot oven to be truly delicious. But dust them with smokey paprika, and roast them alongside tangy lemon slices on a bed of woodsy rosemary, and you have some truly special potatoes. A large and waxy potato is best here (Yukon Golds especially), but know that a starchy potato like an Idaho would also work; just expect something fluffier with less crispiness.

Categories     vegetables, side dish

Time 50m

Yield 4 servings

Number Of Ingredients 8

2 lemons
2 pounds large Yukon Gold potatoes (about 3), scrubbed and cut lengthwise into eighths
1/4 cup olive oil
1 teaspoon smoked paprika
Kosher salt
Freshly ground pepper
4 sprigs rosemary or thyme
1/4 cup parsley, coarsely chopped

Steps:

  • Heat oven to 425 degrees. Cut one lemon into quarters and set aside. Slice remaining lemon about 1/4-inch thick and remove all seeds.
  • Place sliced lemon on a rimmed sheet tray along with potatoes, olive oil and paprika, and mix together with clean hands. Arrange in a single layer and season with salt and pepper. Scatter rosemary in and around potatoes.
  • Place in oven and roast, rotating sheet tray once and flipping potatoes as needed, until potatoes are golden brown, crisped and completely tender, 35 to 40 minutes.
  • Remove from oven and transfer everything to a large serving platter. Top with parsley and serve with lemon quarters for squeezing alongside.

PAN-FRIED CHICKEN BREASTS WITH POLENTA AND SALSA

Pan-Fried Chicken Breasts With Polenta and Salsa image

Provided by Marian Burros

Categories     dinner, project

Time 40m

Yield 8 servings

Number Of Ingredients 14

1 1/2 cups instant polenta
4 tablespoons unsalted butter
1/2 cup coarsely grated Parmigiano-Reggiano
Salt and freshly ground black pepper
3 small ripe avocados, skinned and pitted
4 tablespoons lime juice
1 small red onion, finely diced
2 jalapeno or serrano chilies, seeded and minced
2 tablespoons fresh coriander leaves plus 4 coriander sprigs
1 tablespoon olive oil
4 large chicken breasts, halved
8 ripe plum tomatoes
4 scallions, finely chopped
2 large heads arugula

Steps:

  • Bring 6 cups of water to a boil. Carefully whisk in the polenta to prevent lumps from forming. Reduce the heat, and continuously stir the mixture until it thickens (just a couple of minutes). Remove from the heat, and stir in the butter and cheese. Season with salt and pepper. Spoon into a greased 9-by-13-inch baking dish, and spread evenly with a spatula. Allow to cool. Refrigerate, if making ahead.
  • For the guacamole, puree the avocados with the lime juice in a food processor. Stir in the onion, a quarter to a half of the minced chilies and the coriander leaves. Season to taste with salt and pepper. Refrigerate, if making ahead.
  • When ready to serve, heat the olive oil in a large nonstick pan. Add the chicken, skin-side down, and brown over high heat. Turn, and brown on the other side. Reduce the heat to medium-high, and cook the chicken until it is done, a total of about 20 minutes. Season with salt and pepper.
  • Meanwhile, make the salsa. Trim the tomatoes, quarter them and place in the food processor along with the coriander sprigs, scallions and the remaining minced chilies (or less to taste). Process until coarse. Season with salt and pepper.
  • When ready to brown the polenta, preheat the broiler. Turn out the polenta from its dish onto an oiled baking sheet, and place under the hot broiler until the surface begins to puff and brown, 3 to 5 minutes. The polenta can broil while chicken is cooking.
  • In center of a plate, place a pool of salsa. Place the polenta on top of the salsa. Arrange a few arugula leaves on the side; place a piece of chicken on the arugula, and top the chicken with guacamole.
