MAHI AND MUSHROOMS
Marinated, pan-cooked Mahi with sauteed mushrooms and grape tomatoes. Serve it with a salad and some bread. YUM! You can marinate overnight; then it only takes a few minutes to get ready before cooking. Oyster mushrooms are my favorites, but criminis work well also. I use both yellow and red grape tomatoes.

GRILLED MAHI MAHI W/WILD RICE AND CREAMY RED WINE SAUCE
Just a simple recipe I came up with on the spur of the moment. Serve with steamed broccoli and you have an easy, not-too-fishy tasting meal. Prep time includes one hour of marinating.

- Cover the beans by about 3 inches of water and bring to a boil. Add the smashed garlic and the half onion. Simmer until tender, then add salt to taste. Remove the garlic and onion and discard. Strain the liquid off the beans, but save both the beans and the liquid.
- Dice everything small and toss everything together except the cilantro. You'll mix that in right when you serve. Hold this at room temperature.
- Salt the fish well and set it on a cutting board or plate at room temperature while you make the rice. I do this once the beans are cooked.

- Combine all ingredients, except Mahi Mahi fillets in a jar and shake until they are emulsified. (Or whisk together in a bowl.) Pour over Mahi Mahi fillets and allow to marinade for at least an hour in the refrigerator.
- Heat a large saute pan over medium-high heat. There is oil in the marinade that should prevent it from sticking - but use your discretion based on your history with your saute pan! Place all 4 fillets in the pan with space between them (do not crowd - if your pan is not big enough, cook in batches). Allow fish to cook without turning until nicely browned, about 4 minutes. Flip fish and allow them to brown on the other side, also about 4 minutes. Fish will flake when done.
